    PANSIT BIHON recipe:
    1 onion, chopped
    2 garlic cloves, minced
    3 carrots, julienned
    1/2 head cabbage, thinly sliced
    4-5 boneless chicken thighs
    1-2 cups frozen raw shrimp
    2 cups chicken broth
    Rice stick noodles
    Sauté garlic and onion until tender crisp. Add carrots and cabbage for one minute until color turns vibrant. Set aside vegetables. In same pan, sauté the chicken thighs until cooked through. Chop into bite-sized pieces. Set aside. Cook shrimp until a pale orange. Set aside. Add chicken broth to shrimp broth. Simmer rice sticks in broth until texture of cooked, thin spaghetti. Don't overcook. Cut the noodles with kitchen shears for ease of serving if needed. Add back the vegetables into pan and toss gently until mixed. Enjoy! Serves 8.
