    The Kerala sadhya meal is an essential part of Malayalee cuisine. Traditionally served at festive occasions like Onam, Vishu, weddings and the likes, the sadhya on average consists of 25-28 dishes!
    In this episode of Gourmet On The Road, Food Lovers’ Editor Kripal Amanna, samples the sadhya at Vembanad, the Keralan Hotel at The Paul. He savours this lavish meal of 28 dishes, each with its own unique character and flavour. The meal celebrates the use of vegetables, fruits, various lentils, spices, yogurt and of course coconut in various forms! He wraps up the meal with 4 varieties of payasams, a traditional dessert from Kerala.
    GOURMET ON THE ROAD
    NEI PARIPPU
    very mildly flavoured. this lentil dish is meant to be eaten at the beginning of a sadhya.
    SAMBAR
    slightly tangy with the nourishing feel of the vegetables. quite a satisfying sambar!
    INJI PULI
    the sour hit of the tamarind and warm heat of the ginger in this pickle awakens your palate!
    ULLI THEEYAL
    the delicious savouriness from the onions plays off the sweetness from the jaggery.
    KOOTU CURRY
    there’s the earthy texture of the yam with bite of the bengal gram and the slight crunch of the coconut. these veggies are coated in an aromatic, roasted masala.
    BEANS MEZHUKUPURRATI
    this poriyal of sorts has a nice crunch of the beans with the mild sweetness and gentle crunch from the onions.
    OLAN
    the coconut milk in this soothes and refreshes your palate. best eaten in between tasting the spicy dishes.
    VENDAKYA MORRU CURRY
    this yoghurt based gravy has a pleasant crunch from the sauteed okra and the savoury pop of the mustard seeds.
    AVIAL
    a lovely union of veggies. this avial has the gentle flavour of yoghurt, sweetness of the grated coconut and the crunch of the vegetables. you can taste that drizzle of coconut oil used to finish the dish.
    CABBAGE THORAN
    this cabbage thoran has a prominent sweetness from the copious amounts of fresh grated coconut. It’s mild tempering allows the cabbage to shine!
    KAALAN
    the unctuous ripeness of the banana imparts a surprising sweetness to this dish. delicious!
    RASAM
    you can taste the tartness of the tamarind and tomato and the gentle heat of the peppercorn at the back of your throat in this rasam.
    PACCHA MORRU
    this buttermilk is thick unlike regular buttermilk. savour this combination of the buttermilk with the rice with kondattam or yoghurt-soaked, sundried and fried chilli!
    PARIPPU PAYASAM
    the sweetness of this lentil payasam pairs well with the fruity flavours of the banana. the pappadam adds weight and body to your bite.
    SEMIYA PAYASAM
    this semiya payasam has the toasty notes of the fried cashews and the sweet jammy pop of the sauteed raisins.
    PAAL ADA
    a traditional malayalee dessert made with rice flakes, has a delicious, mild caramel flavour.
    JACKFRUIT PAYASAM
    this payasam has the intense, pungent sweet flavour of ripe jackfruit. you also taste the lingering note of ground cumin with each bite.
    SADHYA
    This vegetarian meal gives one a delicious taste of Kerala, each dish unique and pleasing to the palate. a highly-recommended experience to savour!

      You should visit Kerala and attend the marriages in Thrissur for the authentic sadhya moreover Kerala non vegetarian dishes especially the malabar.

      Dear kripal, To taste the authentic sadya to its core, please try to attend a malayali marriage and have it. The vessels and the way it get cooked with wood fire gives the taste, aroma to sadya. They used to prepare all the dishes with copper vessels still now. That gives unique taste to the cuisine. In country side, carrot, beans are not used for preparing any dishes.

      Kudos to your varied and experienced palate that picks up all the notes in the various preparations! Just a few things I'd like to share.. The pradhaman(the first) or jaggery payasam shud be had before having the milk/sugar based payasams. The pal adda doesn't contain caramelized sugar. Traditionally, the milk is boiled and reduced till it reaches a pinkish/caramelized colour. And lastly, the banana leaf is folded away from you when you are done.. Am guessing so that the leftovers don't drip back on to you. Really enjoy all your uploads..brilliant editing too👍

      As a malayali having travelled quite a few states in India , I would say that food from Karnataka and Andhra too have a huge variety about them !! Down south Andhra Pradesh +telengana probably has the maximum variety of dishes available and I say this without any qualms .
      In terms of variety the next best cusines are Bengali and Assamese ... Once you visit Assam and dig deep you will be amazed by the vegetarian and non vegetarian dishes they have there.. it's just amazing..
      Third being food from Uttrakhand and Himachal ... Extremely unique and tasty !!! ...some of which have never been captured by the mainstream media or food channels.

    Being a Malayalee myself, I thoroughly enjoyed your presentation and explanations of the different dishes. Nevertheless, I would rate Vembanad's serving of sadhya as poor. There's a science behind the serving of a sadhya -- waken your taste buds, play with and maintain the different flavours -- spicy, sour, sweet... and finally round it off with buttermilk to sooth your tummy having gone through a roller-costar of different flavours. For instance, the payasams (kheer) aren't served at the end. They come in between the sambhar and rasam. The last thing you would taste in a typical Kerala sadhya would be the buttermilk and little rice. And also the buttermilk wouldn't be as thick as is shown here but more like the chaas -- spiced and watery and not thick.

    Hi kripal, we do watch all episodes in food lovers especially gournet on road. Excellent rendition of the content.Tthe language u speak, the vocabularly you use is more pleasing than tasting all the food for us. In this episode, the mixed vegetable curry(Aviyal) is purely made up of veggies, that are grown in flat land surface like brinjal,drumstick, pumpkin,raw banana. In country side, they dont use carrot, beans, veggies that grow in mountains it destroys taste of aviyal. And thiyal dish will neither prepared nor served in auspiscious days,esspecially in satya.

      Every state food is unique..... I enjoyed Andhra foods and Hydrabadi dishes while in Hydrabad... near my flat there was plickle shop which had many varieties and it was awesome...

    Mate, liked the way you had the Sadhya 👌🏼. Even though I’m a Mallu, I make it messy when I eat Sadhya. One thing I would like to point out is ideally you should have the rice with yogurt or pacha mooru after the payasam.
    I leave in Dubai, I would be on vacation during December for attending couple of weddings in Kerala. I would love to take you to some authentic kerala Sadhya if could join.

      For this episode 22 mins is not very lengthy bcz he has to explain the taste n authenticity of all 28 dishes as well as about the restaurant. And he s not js explaining it but make us feel to taste it.. Explaining about our pride sadhya cant be shortened within 10 mins for sure😊😋.

    Excellent culinary tasting Sir🙏😊👍💜💕🙏💐🌹You Sir, just won the hearts of millions of Malayalis for whom, the Kerala sadya is a matter of happiness, pride and honour. I can't express enough as to how beautifully you have tasted, reviewed and enjoyed every single item on the banana leaf placed before you. Except for the Palada,Semiya(these two r probably more authentic in public functions like marriages or engagements) the dried Mulagu which wasn't fried enough (was the inji thairu placed first on the leaf?), ur buttermilk was a mixture of Sambaaram (chaas) n inji thairu(ginger, green chillies in curd with salt ),all the other items were mostly accurate. The highlight here was the respect you showed Kerala food and the Kerala Sadya by paying attention to the way it should be eaten and how it should be savoured bite by bite 👍💕💜😀🙏😋❤️💐Thank you Sir for a brilliant n beautiful tasting and a wonderful Onam viewing gift for Malayalis the world over who are just recovering from the shock of the heavy Kerala Rains and floods🌹💕🙏😊

    As usual awesome video Kripal. Hope you made this video as Onam season is around. I also wanted you to appear in Kerala style "Mundu" while having the sadya. In fact all your Keralite subscribers would be having the same opinion.
    I had an Onasadya(Onam's sadya) couple of days back. But your video is tempting me to have another one. You have nicely explained the dishes and had them in its order. Especially mixing the pappadam and pazham into the payasam 😃
