I always appreciate how much care Alvin takes to not waste food. So many cooking videos have an immense amount of food thrown out, and it's nice to see that he cares and spends time making other dishes.

I've always loved the fastforward of separating everything into containers for everyone to take him. Rediculous oversized foods, cute movie remakes, and restaurant copy cat videos are fun, but the reminder that this is real food that should never go to waste is great. Helps offset that trend of excess and more is more you see with people over doing something for a video and then never doing anything with the result after the recording is done.
When she received this birthday cake in that scene I cried along with her. Birthdays have been hard for me the last few years, and like Kiki, I dream of leaving to a new city and finding my purpose. It would mean the world to me if that happened to me.
Alvin says the ganache step might have too much detail, but I've recently gotten into baking and just last week tried making ganache for a tart pan pie and messed up spectacularly (texture felt like eating uncooked rice pudding). So having a detailed breakdown of technique like this is extremely welcome!
yeah the weird secret to ganache is how simple it MUST be. Complicated maneuvers will just destroy it. You have no choice but to wait for the cocoa butter to melt at its own pace. The microwave is absolutely ideal for it. Alton Brown used the exact same technique.

For my 30th birthday this year I made your Portillo's cake recipe, but for the frosting I made a Nutella cream cheese frosting and I used only half of the powdered sugar from the cream cheese frosting video I found, the Nutella provided the rest of the sweetness and instead of ONLY putting Nutella I made half nutella and half molten 50% cocoa dark chocolate. No butter. I found it very smooth, held its shape and delicious, it was almost as if a no bake chocolate cheesecake was wrapping my cake.
Objectively, I think 'Spirited Away' is Miyazaki's best film, but 'Kiki's Delivery Service' is definitely the one I have the most nostalgia for. Before we had a copy of it on DVD, everytime it was on TV, my brother and I would beg our parents to let us stay up late to watch the whole thing.
Kiki pops!!! Use like some white chocolate dyed with some red food coloring can make a little bows and put them on top even make it even more Kiki's Delivery service.
I just made a Christmas-tree-shaped cake, and so had a TON of leftover cake pieces. This video gave me the great idea Alvin uses at the end to cut them all up and make "dusted cake pops." It's a great idea, but I don't like how the cocoa powder tastes on the finished product. The cake and the ganache are too sweet to have nothing but a bitter dusting around them. It doesn't work. Thankfully, I had only done 1-2 before I tested it... and adjusted the "dust" mixture by adding a lot of cinnamon-sugar. I normally like more cinnamon than sugar, but for this go the other direction-- you need something to offset how bitter cocoa powder is. There are lots of ways you could tweak it (or none at all if you like how bitter cocoa powder is), but this is definitely a great way to use up extra cake pieces. :)

You know Alvin, I saw your documentary on Goldees a while back. I ended up eventually moving to Texas, unrelated to that doc, and realized my base is close to goldees. After leaving base one day I decided to drop in and see what the hype was about. I ended up waiting in a line of over 100 people for 4.5 hours, and I can honestly say that Goldees was hands down one of the most disappointing BBQ places I’d been to in Texas so far. Brisket was not seasoned well at all. Needless to say I won’t be going back, but that documentary inspired me to try it either way. I got an amazing story out of it, and led me to find a place with better BBQ.
Honestly, a salted chocolate cake with chocolate cream cheese frosting… I kinda wanna just make that to bring to the next family function if my mom doesn’t call dibs on desserts 😅
Fondant or sugarpaste decorations are easier but still possible to make out of chocolate just need to temper and use correct colourants and use run out techniques
I think it would be absolutely awesome if you looked over this anime called kakuriyo- bed and breakfast for spirits! It’s such a cute anime and all of the fool the main character makes looks so comforting and delicious 🥰
I highly recommend the anime series Restaurant To Another World, it's full of foods that I recommend you to try to replicate, it's mostly a peaceful restaurant show
