I think the problem with upright sprinklers and sprinklers that face down are that when they activate the water is so powerful that It goes everywhere but in the middle of the sprinkler. Sidewall sprinklers are different though.
This isn’t exactly intended to be a fully realistic setup. It’s nearly impossible to get a realistic flow on a commercial head without expensive equipment.

Depends if the fire panel they're linked to has a dialer. If so, then yes the fire department would be called.
