This is the perfect base for delicious summer cocktails, mocktails and refreshing beverages. Use lemons or limes or a combo of each to make this yummy syrup you'll use all summer long. Also perfect for fruit salad, salad dressing or marinades and desserts.
I used:
4 cups lime juice
3 cups sugar
2/3 cup agave nectar
Ladle hot syrup into hot pint jars, leaving 1/4" headspace. Wipe jar rim. Center lid and apply band to fingertip tight.
Process for 10 minutes in boiling water or steam canner, adjusting for altitude as follows:
1,001-3,000 ft ~ increase processing time by 5 minutes
3,001-6,000 ft ~ increase processing time by 10 minutes
6,001-8,000 ft ~ increase processing time by 15 minutes
8,001-10,000 ft ~ increase processing time by 20 minutes
Allow jars to rest undisturbed for 12-24 hours. Remove bands, check seals, wash and label jars. Store in a cool dark dry place.

To make limeade or lemonade, reconstitute 3 parts water to one part concentrate or to taste

Limeade is great for summer too!
OMG just finished making the best darn MOJITOS using this syrup with the Queen Carol "twist" (agave )😛 we added syrup to club soda and white rum with mint leaves. It was the hit of after dinner cocktails. I used all four pints I had just canned. Definitely canning double batch tomorrow!

That's a fantastic idea. I would like to do lemon and lime. I love lemon juice for the summer. Thank you for thinking of this. I've tried the refrigerator salt process, but I'm not sure that I care for it. I'm thinking of frezzeing the juice till I have enough there so expensive.
If you have one nearby, Mexican markets sell limes much cheaper. 😉
