Cesar, I can't answer your specific question, but I do know chefs use our vacuum marinator (VM101) to plump up chicken wings, tenders, etc. with liquid marinate/brine. I don't have their exact equation ... they tend to keep that a secret ;-) For the tumble marinator (M101) and dry brine/seasoning it will depend on surface area of the protein along with other variables.

kfc chicken is marinaded in a tumbler before it gets shipped to franchise locations - thats why its so juicy and tender
they use sodium tripolyphosphate, sodium acid pyrophosphate and sodium polyphospate = the phosphates raise the PH level of the proteins (meat) and have a chemical reaction that makes the meat hold on to more water during the cooking process
