  • HOW TO smoke BRISKET On A Weber Kettle | Kosmos Q It's not the sexiest cooker in the lineup, but man if she isn't old reliable. The trusty Weber Kettle is one of my personal favorites and being that I'm stuck at the house I just had to knock out a brisket on Weber to pass the time! Texas Style Brisket is like the holy grail of smoked brisket. It's tough to nail and frankly, keeping the temperature low enough to get the right results can sometimes be the hardest part. In this video, I'm going to show you a foolproof brisket recipe that you'll be glad to have in your arsenal. Keep this video in mind whenever you're cooking a brisket and you'll be on the money every time!

    RECIPE:
    -1: 9-11lb Packer Brisket
    - Heavy-Duty Aluminum Foil
    - Briquette Charcoal
    - Kosmos Q Brisket Mop (Or whatever beef marinade you like)
    - Kosmos Q Dirty Bird Hot Rub (Or whatever beef rub you prefer)
    - Kosmos Q SPG Rub (Or whatever beef rub you prefer)
    - Several beers to keep morale up during the cooking process.
    Step 1 - Start your coals and get the grill up to temp. Somewhere between 275-300 will work great!
    Step 2 - Lightly trim the brisket and season it well on both sides.
    Step 3 - Place your brisket on the grill fat side up. This is key when cooking texas style!
    Step 4 - Spritz the brisket with water periodically to keep it moist and rotate it to prevent one side from overcooking.
    Step 5 - Once the bark has developed its time to wrap the brisket.
    Step 6 - Wrap it in two pieces of heavy-duty aluminum foil and dump your mop solution into the wrap and place it back on the smoker.
    Step 7 - Check your brisket for tenderness and once it feels like butter you know it's done! Let it rest for at least an hour, then slice her up and serve!
    Step 8 - Save your aus jus and use that to keep the slices warm until you’re ready to serve!

      Kosmo's Q BBQ & Grilling I like that....3:38 “this looks like about a 8,9,10 beer brisket”. I’m using that one next time.
      I usually use that when fixing a car. Swapping an alternator is about a 6 pack worth of work. Changing a couple ball joint is about a 12pk worth of beer. 😂😂😂

    A little trick I learned using the Weber kettle is to use the snake method for the coals and to open the top vent completely open and control the heat by adjusting the bottom until the heat is steady. Once steady, I made small adjustments using the top vent. Keeping the top vent mostly open also enables the heat and smoke to flow around your brisket. Keep the top vent on the opposite side of the hot coals.

      Lucky you. All I have is a small tailgate bbq that runs off 1lb propane bottles. It doesn't like wind at low heat.

    I usually use the bottom vent at half open along with the top and only keep the charcoal tray flush at the top with charcoal for a perfect 275.

    This was my guide, as I cooked my first brisket. The Brisket Mop, and Beef Consomme, were DEEEELICIOUS! My wife is hard to impress, and she had an instantaneous, "This is Amazing!" reaction, after her first bite.     Great video, since there are lot more of the Weber Kettles out there than any other cooker. Explaining that kettles leak, and not getting flustered by it gives us all mortals hope. Next trip to the store will be a brisket and a pork butt for the Weber Smokey Mountain.

    Kosmo, I had the same issue with my Weber being out of round with the kettle and the lid. I used about 4 binder clips to hold the lid down to the kettle and it worked wonders! Great vid, man!

      Cooking is a breeze. I travelled 9 states, living out of a suitcase and service truck, taking care of large industrial and institution heating, cooling, process, and ventilation equipment. For a hobby, when I was home I was regularly at one of our community's two fire houses or on squad in the county where we used to live to keep the truck in service-- it's a good day when the big bag with the zipper and a call to the coroner isn't needed. The rest of this stuff really doesn't matter-- just a bonus. A little temp problem or lid leak? Deal with it. All four of my smokers and three different grills have different 'learning issues'. With a little tweaking (rolled up aluminum foil for a seal) ALL the food comes out amazing-- briskets like slinkies!!
      Had to do something to UNWIND after dealing with architects, engineers, and project managers at my 'real' job. Those clowns are what got me flustered. (also took care of 40 horses and catered-- 440 chicken halves at a time, sometimes 4 and 5 cooks a day. Or hand slicing 900# of potatoes and cooking up a few orders of fries.
      FEED the PEOPLE!! (and stay hydrated doing it!!)

    I did a 15 lb brisket on the Weber with the slow and sear trifecta (slow and sear, drip n griddle, and easy spin great). Just bearly fit. Came out awsome.

      Just know... your first brisket will probably suck lol... mine did... and every time I cook one.., I learn something! Once u dial it in the way u like to cook... it’s awesome!!! I thought low and slow was the only way to go... nope... I now cook mine hot and fast!!!

      I was nervous to cook one as well but my first one I did hot and fast and It was killer. Just do it man! And if it turns out too dry you can always chop it and drench it sauce and turn it into sandwiches.

    I’ve been doing full sized briskets on my 26 kettle with the SNS and they come out perfect 👍🏼

      That's how I do them on my Weber 26 with my slow and sear and after about 6 or 8 hours I wrapped them in paper and finish them in my oven in the house..
      After I got it to 200° internally I cooled the brisket off and kept it in the oven on warm all night long and it was amazing

    My brisket is almost ready. I took it out at 205° and it took me about 10hrs to smoke it. Reason is that I was playing with the top and bottom vents and it kept dropping to 220°. I figured mine out so now I know for next time. Thanks brotha!

    Dropped my Weber lid Wheeling it across the deck and had the same problem. Made a seal with high temp silicone no issues now.

    Glad to see you using a Weber. My family has been using the same Weber for almost 50 years. Besides how well it cooks what ever you put on it, taking the lid off to the side or wherever you want makes it so much better than any grill that requires your arm to go across the flames and food. I’m also going to try your salt brine for my steak later this week. Love your videos.

    Hey, cosmos. I love to grill, I grill at least 5 out of 7 days a week. It gets my mind off of everything. My family and friends and neighbors love it! I'm cooking on a gas grill, that I ripped the insides out, and made it a charcoal grill. I'm waiting to get my smoker maybe in a month or so, due to this covid 19 stuff. I'd love to have a chance to win one of your grills, or even some seasoning. I make a mean bbq bourbon pulled pork, but I boil it for 3 to 6 hours before I smoke it on my grill with pecan wood. Just to make sure it's good and tender. You'll never guess what I boil it in... but much love, and God bless brother.

    Kosmo, I just got a Treager electric smoker. What's your favorite to cook on the Treager? First time using an electric smoker. So far so good. I love the constant temp control. I'd love to see you do a head to head to head. Charcoal vs Gas vs Electric. Same meat same prep and seasoning.

    I know you have the Kamado joes but give the primo oval a shot in your outdoor kitchen. American made and the oval shape is helpful when doing big cook outs.

    I also have a fire dial which I purchased separately on Amazon. This allows you to use the entire top of your grill for indirect cooking. With gaskets on both the top and bottom of my cattle it holds temperature did level and does not fluctuate even one degree plus or minus.

    I usually wrap mine in butchers paper and once I wrap it I throw it in the oven just so I’m not wasting wood. I use your rubs too though. I use to do Texas style just salt and pepper with mustard binder. Now straight Kosmo Q 😜

    Depending on how big the leak is, you could probably get away with using high temp Nomex like what people use to seal pellet grill lids

    Hi @Kosmo ! I used to have an 18" kettle (off brand) and now I have a 22"" Weber. The grill grate was much higher away from the coals on my old 18" non-weber. The gril grate is much closer to the coals on my 22" weber. I liked the feature on my 18" non-weber of so much distance from the coals. Have you noticed anything like this and is there anything to do about it? Thank you Kosmo!!

    Yeah the lid might be leaking on you for sure check the one touch system on the bottom. The tips toward the top of the wings inside might be up away from the bowl giving too much air to your fire. You can call Weber and they’ll send you a new one touch system they’re super easy to change out. And if your lid is leaking you can Chyna bearhug it a little bit and tweak it around try not to break the enamel. I know a guy in Chicago that can get you a beautiful wood table replacement if you’re interested message me back. Weber makes a replacement metal table that has a nice coating on it to keep it from rusting. Another idea is to just try another lid from another grill. Love the videos man happy grilling brother!

    Recently did my first brisket on my Weber using slow and sear had the same problem with the leak my vent where about half a inch open in bottom and almost shut up top temperature was still 325 now i know why thanks for video. U thought about putting some sort of gasket on the Weber?

    What wood do you use for brisket rib and chicken? Do you use one for all or different wood to different meat

    Take 3 or 4 black binder clips and use them to clap the lid to the body. That will keep it from leaking.
