- Today I’m making gluten free pistachio and raspberry choux craquelin. Why gluten free? Well, I have lots of friends who don’t eat gluten, and - since I love them, I wanted to make them happy, simple as that!

Odusevljena sam vasom stranicom, napokon sve na jednom mjestu: osnove, tehnike, do najsitnijih detalja i jos na materinjom jeziku. Puno hvala na ovako divnom komentaru, baš lijepo od vas! :) Na žalost ne može se rižino brašno zamijeniti bademovim jer su potpuno drugačijeg sastava. Nisam ovaj recept pravila s drugim vrstama brašna, samo s rižinim. Sretan Božić! :)
Just stumble upon your channel while looking for gluten free choux receipe. Is it okay to freeze the choux paste (in round shape) for stock up?

Hello thank you for this video, I tried the recipe today and found that when I piped the choux mixture, it came out runnier than expected. Why might this be? Should I just add more rice flour?
Hello, it might be that your rice flour is less finely ground and maybe it absorbs less moisture than my rice flour.
You could experiment and increase the quantity of flour (add more flour to the liquid ingredients), but don't add flour after you add eggs. You can also add less eggs. Make sure your choux is creamy, pipeable and it holds shape when piped. I hope it will work better next time! :)
Can I ask you one more question I don’t eat gelatin so I don’t use in my baking,what other substitute is good to use instead of gelatin thanks a lot 💕
Sure, I usually use agar agar powder instead, and you need to heat it with a liquid until it boils. The dosing is according to the instructions on the packaging.
How would you make this dairy free? I'd love to make this!!
You could try swapping milk in choux pastry with plant based milk or water, and the cream in ganache with coconut cream.

Hi, I didn't make it, I bought it. You can make it in a food processor by mixing the pistachios until you get smooth paste. Or you can buy pistachio paste or pistachio butter - it is the same thing.
