Great video! I love these old workstation CPUs and am therefore currently using a X79 based Xeon E5-2680v2 that I bought for around 40€ one year ago. It pairs great with my 1070 for gaming but it is also really useful when it comes to general multitasking. Although the boards cost quite much, its just nice to get something like a 12 core CPU for just around 30 bucks.
Its not your CPU holding you back its the graphics card. Your next upgrade should be getting a slightly better graphics card. maybe a GTX 1660 super or RX 6600 ?? both can be found used for around $100 !! Great video by the way , I am another person who just loves older repurposed server hardware videos. Please keep us up to date I would love to see more from you.
@6:25 750Ti I'm guessing. I have a 1650 which I bought almost new for around $50 which should have double fps according to a ytube video comparison. A cheap gpu would upgrade make his system even better I think its the card. Okay he's running a 750 ti in the video but has 3070 which he going to make another video. @6:46

Plan on buying one of these for gaming. Going to replace the cpus as well.

You were not actually surprised the single core score went down with the 200 MHz clock speed reduction, right? :)
$40 2667v4 could make much bigger difference.
If it's too expensive, then $15 2680v4
