Since it’s a mint flavoured cookie, you could use a bit of Chlorofresh (from the dental treats video) to make it green if you don’t want to use food colouring.
Samantha Godard she was saying it’s a peppermint treat but I don’t know what gave it peppermint flavor? Kind of confused did I miss something? Rice flour, eggs, honey, coconut oil and food coloring.. icing and candy melts.

2 tablespoons of coconut cooking oil
1 tablespoon of honey
Mix
Green food coloring
Preheat oven to 350
1 1/4 cup of rice flour
Mix
Roll
Cookie cutter (Christmas tree)
Cook at 350 for 10-15
