Raspberry Heart Macaron Recipe for Valentine's Day

    For about 40 macarons
    [Raspberry Ganache]
    Heavy Cream 90g
    Frozen Raspberry 110g
    White Chocolate 200g
    [Macarons]
    Almond Meal 130g
    Icing Sugar 115g
    Egg White 110g
    Sugar 105g
    Red Food Coloring
    [Decoration] - Optional
    White Chocolate, Heart Sprinkle
    [Raspberry Ganache]
    1. Place frozen raspberries and heavy cream in a saucepan, and heat while mashing the raspberries.
    2. Set a sieve over a bowl containing white chocolate, and pour the heated mixture through the sieve to strain it.
    3. Whisk well until the chocolate is fully combined.
    4. Transfer the finished ganache into a piping bag.
    5. Refrigerate until it firms up.
    [Macarons]
    1. Sift almond meal and icing sugar together in a bowl.
    2. Whip egg whites, adding sugar in three parts, until stiff peaks form.
    3. Add food coloring and continue whipping until well mixed.
    4. Add half of the meringue to the sifted dry ingredients and mix roughly.
    5. Add the remaining meringue and fully incorporate it with the dry ingredients.
    6. Use a spatula to gently press down the mixture and do macaronage.
    7. The batter is ready when it flows smoothly without breaking when lifted with a spatula.
    8. Transfer the batter into a piping bag fitted with a round tip.
    9. Pipe the batter into heart shapes on a tray lined with Teflon sheet.
    10. If you are having difficulty shaping them, you can pipe them in a round shape instead.
    11. Allow the piped batter to dry at room temperature until it no longer sticks to your fingers.
    12. Preheat the oven to 150°C and bake the macaron shells for about 15 minutes.
    13. Let the baked macaron shells cool down.
    14. Once cooled, gently remove the shells from the sheet and match them into pairs.
    [Finishing]
    1. Lay out the matched macaron shells to make it easier to pipe the filling.
    2. Pipe the set raspberry ganache onto one shell in a heart shape.
    3. Place the other shell on top to assemble them together
    4. Refrigerate overnight to let the macarons set.
    5. If you would like to decorate further, melt white chocolate, and transfer it to a piping bag.
    6. Drizzle the chocolate over the macarons and top with heart-shaped sprinkles to finish.
