Since you talked about canning basics i wanted to add a bit. I'm not a Master Canner but I've taken canning classes from the Extension Office (on the path to becoming a Master Canner) - not every veggie should be canned. It goes with the food density discussed by Jessica. Some veggies break down in the high heat of a pressure canner and basically become a very dense mush that heat can't penetrate well. Some examples are eggplant, pumpkin (is fine to can in cubes as the water can still move through the jar), and zucchini. There are recipes online basically saying "who says zucchini can't be canned? I did it." Anything can be put in a jar but not everything is safe (meaning botulism spores killed). One zucchini canning recipe i see often is half pint jars of shredded zuchinni. No, just no. Zucchini freezes well (i shred it and freeze in 1 cup portions). Also, the Ball Blue Book has a recipe for can your own soup. It's proven safe. Basically, if it can be canned separately safely then it can go in the soup. (So potatoes yes, zucchini no) I hope this helps someone and gives more details to what Jessica said.
Thank you for your prayers Jessica. I'm in Western, NC and we were personally spared (by God's mercy). We only went without power for 3 days. Thankfully my one freezer with meat stayed frozen the entire time. I froze bottles of water prior to the storm that surrounded the meat and then taped the door shut so we wouldn't open it during the outage. We had to move everything from our fridge into a cooler full of ice and go out searching every day for ice to top it off but we got through it. We have a generator but discovered it didn't work after the power went off-- something we will try to fix for next time. We cooked on the grill until power came back on. I didn't have very much frozen meat but as soon as the power came back on I started thawing it and canning it-- especially items that are hard to cook during a power outage like whole chickens. I've got a canner full of chicken broth going right now. We never get hurricanes this far up in the mountains-- at most we sometimes get a little rain leftover from a storm that hit the coast. But this storm was different-- we got the equivalent of 4 months of rain in 2 days-- it broke a 100 year record for rainfall. There's no way most of the people here could prepare. Please keep praying for the people who have lost their homes or are living in very heavily affected locations. Thank you!
With the destruction that has taken place in so many states from all these various disasters, it is wise to protect all your jars from falling and breaking. A simple 1x2 attached to the front of each row works well and your shelves secured to the walls or floors depending on your setup. I have canned more this year with a larger variety of recipes than I have ever before. Just have felt very moved by G-d to prepare and I am so grateful and feel so blessed. I too have family and friends who have been severely affected. Prepare without fear friends and be blessed.

@RoseRed Homestead, retired college professor also does a great job explaining canning principles. Same as @Duttonsdaze. Both of these are empty nesters-a difference from this homestead channel.
I picked up an idea from Red Rose Homestead. She suggested instead of storing empy canning jars (if you have them) fill them with water. Put your new lids on with the bands tightened well. Water will store well and if a little flat just shake to add the air back in. Your jars and lids stay clean and you have water for emergencies.
I do this whenever I don’t have a full canner load. I just add in however many jars of water I need to fill it up. It also helps keep jars from falling over since it takes up the otherwise empty space.
I live outside of Asheville North Carolina. Thank you for your prayers I do add comfort. Pray for the people still without power. My mother lives in South Carolina and she is still without power and she is dealing with bone cancer. Keep your prayers coming!
Heartfelt prayers for all affected by the hurricane. It just shows you that when such devastating weather happens and your house is GONE in an instant it does not matter how much of a prepper you are. These are times you just thank God that hopefully you, your loved ones, your friends and neighbors are safe.
Absolutely! But for those who didn't lose everything and are living where roads are cut off and power is out, having access to clean water and food that isn't dependent on electricity is very helpful!
Thank you! My canning items are being shared with friends. We were without power, water and septic 5 days. We ate foods I canned, had excess water and roughed it for plumbing. I have learned so much from your video’s. We list 1 and half small chest freezers of veggies. We were able to store meats in a family members freezer. We do not have a generator.

I just started canning and I'm really enjoying it I feel kind of like a Proverbs 31 Woman preparing for my family and others. I also have chickens and my daughter knows how to harvest them so that comes in handy

Hi, you explained that so well. And I agree with the sources you recommended. When I coach anyone about canning, I tell them, "it's not cooking, it's chemistry". I can by the motto to keep it as simple as possible. One can always add the herbs/ spices/ other flavorings after the canned item is opened and being put into use. That's not to say one should not try a canning recipe that is a bit more complicated than usual. My daughter asked for THE ALL NEW BALL BOOK OF CANNING AND PRESERVING for her birthday. It arrived yesterday and her birthday is today! I strongly encourage anyone who has wanted to learn to can to GO FOR IT! We're in North Carolina but were blessed with very little damage. LOTS of rain.
I have been canning for about 45 years and pressure canning for about 30 years. I can tons of recipes that we like such as beef paprika, Swiss steak, etc. that are recipes that I cook. The only difference is that I do not thicken them when I am jarring them up. I do that part when I am actually opening the jar and using them. It is so great to have the meat part done and I can use it fast when I don’t feel like cooking,
@@chrystallangille1667 Beef Paprika 1 lb beef diced small 1 tbs white vinegar 1 tbs paprika 1 tsp salt 1/2 tsp black pepper 1/2 c chopped onion I use eye of round roast and cut into bite-sized pieces. Brown in oil and add to jar. Chop onions and add to jar along with vinegar and spices. Fill jar with water. Leave 1 inch head space. Pressure can for 90 minutes at the pounds of pressure for your location. To use: Heat on stove. Add 2-3 tbs flour to 1/3 c milk and whisk. Pour through sieve into pan with meat and juice. Cook for a few minutes until it thickens. Serve over rice.

As an 'old' woman, I grew up with canning practices considered rebel canning today. I would NEVER recommend anyone else do this, but I still use some of them because I am comfortable with the practices but do mostly use approved methods. Have a blessed Sunday.

My thoughts and prayers are with all those affected by the storms as well! Im in michigan and we can have ice storms, thunder storms and tornadoes and lose power, but the devastation thru NC and TN in particular has made me start clearing out my freezers and getting stuff in jars as well! I just took 19 jars of chicken and turkey back down into storage (still with some in the freezer for "fresh" cooking). Have some pork roasts and beef roasts lined up to do the same. I have 20 bags of tomatoes in a freezer probably that i tossed in there when I was sick of tomatoes! I was blessed with a harvest from my garden, a family member's garden and a local farm. I have salsa, sauce, soup, roasted marinara sauce coiming out my ears- and gave dozens of jars away to family as well. I'll likely do diced tomatoes just for something quick and easy, and use the "water/juice" from them as a stock. I never even thought about the 3 months of freshness, so i need to do something in the next couple of weeks.
My prayer for all of you is that water and food will be available for all of you. Also asking God to keep all of you healthy and hearty. May you all be able to recover well and get the help you need. Thanks for sharing these seasoned beans. I’ve only canned them plain but I like the idea of already have some seasoned. I will start next week canning some meat from the freezer. If planned to do for the convenient meals in jars. But, like you, have seen stories of so many losing what was in there freezer. That’s an extra reminder to just get it done. ❤

Just a friendly reminder that holiday season is creeping up on us here in America. Don't forget to look for those stock up sales! Turkeys will be in abundance and in some instances they'll be free. Turkey can be used for chicken in many many many recipes. I'm a huge fan of canning up a ton of turkey broth in December. A nice size turkey can provide a ton of broth. Happy cooking everyone!! 😀😋
I totally agree bout having food on the shelf and not in the freezer. We are on the West Coast and in prior years, homesteading friends lost power because of wildfires and lost everything in freezers. I can a lot of soups and friends suggest freezing instead of canning. No way 😂 I love canning strawberry syrup.

What a great job clearing up the mystery surrounding canning! Over my 30+ years of adulthood I have watched food preservation go from something simple and understandable to complicated and scary for no reason. We can do this without fear.
I’m in upstate SC and fortunately we did not have any structural damage. We lost power which led to losing 3 freezers and 2 refrigerators of food. Sad but still feel so fortunate not having any more than that. So many people have lost everything. My heart breaks for them . I have a stocked freezers but want to can more meat from now on.

Im in SC, Greenville area. We have gas generator. We have natural gas stove. Power off 4 days just an inconvenience,compared to other states. My old brain planning to stock up more. Keep planning y'all and stay Blessed

Jessica, In central rural Nebraska most of us have at the least one or two 300 gal gas barrels on a stand. Farmers have huge barrels. A truck comes around and fills them. We don't get gas at the gas station unless we are traveling very far on vacation. So there is not this crisis getting gas in little red jugs in long lines. I don't understand why none of the homesteading community does this. Could this be an option for you where you live ? It is so handy to have the gas or diesel for your vehicles, tractors, lawn mower, etc. You can buy the gas barrels at auction used to save money.
Ohh, chili beans! I love having home canned beans on the shelf but I didn’t think to make chili beans. Dried beans are just so cheap and canning them is such a passive activity it makes sense for me to use them over buying canned beans.
Also freeze drying is another option for making meat shelf stable. I am in Alberta Canada, and luckily we have not expeienced these storms here. But my prayers go out to all those affected by them.

When I see the possibility of a hurricane heading close to us (SC), I always prepare by saving water and my husband by getting plenty of gas can filled for the generator. Well, I was so upset with myself for lowering my sense of urgency. The night it hit us in central SC I had just finished with the canning of chicken. The jars were on the counter and the storm hit. We checked the weather and it said we were on a tornado warning. Just then the wind picked up, I mean just as we read the warning and then all of our alarms went off, jump-starting our hearts and then, plunk, the power went off. At that very moment we heard a sound like we never heard before, but there was little to no time to act. The wind was scary but it went by fast. We had no sleep. As soon as there was some daylight, there were so many trees down. Our private roads were blocked by the trees. After several days without power, we learned we had two tornados in our area. There was a map showing the tornado trails and one right on our road. I'm grateful to God we are still here. But when we got to see the devastation in NC and NE of SC, I just cried. A whole town was gone; peoples houses washing away with them in it. I had a mess in the kitchen from the canning, but that was nothing at all. So much loss of life. The hurricane went too far to the east and took us all unaware. Hurricane season isn't over yet. I just hope the winds from the coast of Africa keep calm.
You were not the only one caught off guard. I made the mistake of trusting the weather service, and at 58, I should've known better. Fortunately, we've been testing our generator every month to make sure it works so we were able to keep the generator working. Living in the Belton area of SC, we were lucky to only be without power for 4 days and were able to keep the freezers going. My mother was not so lucky, and a small tornado touched down on her property. She lost her generator, chickens, and a couple of sheds. With what we had stockpiled, we were able to help. I'm so thankful for people like Jessica and Ruth Ann Zimmerman who inspired me to keep putting things up.

Another viewer from upstate SC, we lost power at our house for 11 days. I have a small chest freezer and it was full. My sister's in-laws had their power return the day after the storm, and they had an empty freezer which was able to hold my food, and another one of my sisters too. We had hot water, a gas stove, and my canned goods like soups and stews which made making meals sooooo much easier. I was really sick in August so I didn't get to participate in your challenge, but I had canned enough food before and after my illness that we didn't end up needing to buy very much during the power outage. Storing food up in my freezer is a good plan...until something like this happens. We are thinking of ways we can be a little more prepared for outages and emergencies.

This morning at 4 AM here in Southern California, we had a 4.0 earthquake near Ontario. That’s about 5 miles from me. It shook the house pretty bad. Plus aftershocks. We don’t have damage but it’s another reminder to everyone in the country we all deal with some form of natural disaster. Whether it’s a hurricane, tornado, earthquake, deep freeze, extreme heat, etc. Prepare the best for where you live. ❤ I stay stocked up on canned goods, although I do have things in mason jars, but with the earthquakes, it won’t take much to knock those off of the shelves onto the floor were glass breaks everywhere.
I so appreciate the canning discussion. I'm relatively new to both water bath and pressure canning and my scientific mind really needed this explanation to help me understand the timing. I've been thoroughly enjoying canning, and want to try some meals in jars, but have been overwhelmed trying to find safe canning recipes that my family will enjoy.
Canning up both Navy and pinto beans today. I noticed we were down to only 6 jars of red beans left! Empty nester, but have grown up kids that live nearby. I share with them!❤
I found pressure canning meat to be easier than doing vegetables. I'm in NC - just barely outside the devastation. This has been an eye-opener regarding freezers during lengthy power outages.

Prayers to all. We have three freezers on our farm. Our family does not like the taste of canned meat. We were blessed with a Generac which keeps the power in using propane from our tanks. Yes, it is a blessing to have power.
I have 3 freezers and 2 huge generators but I still can some meat for chicken pot pies, stew, there’s uncured ham in my beans, and I precook and shred chicken and can it for fajitas and stuff. We don’t just open up a jar of meat and eat it but used in things it’s not bad. Also in a situation that requires us to leave the homestead, we would have food ready to eat. I make jerky as well.

We had our fridge/freezer go out, and that was terrible. We lost everything, because the freezer went out first. By time we realized it, all the freezer contents were defrosted, and had to be trashed. It was heartbreaking. But nothing compared to Helene, who caused such damage. And inaccessibility. My heart goes out to those who lost their lives. And to the people that they are still looking for. There were back to back hurricanes that damaged a lot of people. We pray for them. In the end, I can't possibly complain to losing our freezer to what the south is going through. I hope people are able to get aid, and are back on their feet soon.
I am new to canning and have only followed recipes so far. I really want to can some of my recipes like enchilada sauce and sloppy joe sauce but haven’t figured it out yet. This gives a lot of helpful information because we already have recipes we love that I want to get in jars. Canning broth today and tomato sauce tomorrow. I will try to find a canning recipe for enchilada sauce with the sources you suggested.
Rose Red Homestead has a meatless sloppy joe sauce canning recipe that can be water bathed canned. The meat is added at the time the meal is prepared, like the Manwich brand. I'm looking forward to trying it as I don't have a pressure canner yet.

I've got a canner full of chicken broth going right now. We never get hurricanes this far up in the mountains-- at most we sometimes get a little rain leftover from a storm that hit the coast. But this storm was different-- we got the equivalent of 4 months of rain in 2 days-- it broke a 100 year record for rainfall. There's no way most of the people here could prepare. Please keep praying for the people who have lost their homes or are living in very heavily affected locations. Thank you!
With the destruction that has taken place in so many states from all these various disasters, it is wise to protect all your jars from falling and breaking. A simple 1x2 attached to the front of each row works well and your shelves secured to the walls or floors depending on your setup. I have canned more this year with a larger variety of recipes than I have ever before. Just have felt very moved by G-d to prepare and I am so grateful and feel so blessed. I too have family and friends who have been severely affected. Prepare without fear friends and be blessed.

@RoseRed Homestead, retired college professor also does a great job explaining canning principles. Same as @Duttonsdaze. Both of these are empty nesters-a difference from this homestead channel.
I picked up an idea from Red Rose Homestead. She suggested instead of storing empy canning jars (if you have them) fill them with water. Put your new lids on with the bands tightened well. Water will store well and if a little flat just shake to add the air back in. Your jars and lids stay clean and you have water for emergencies.
I do this whenever I don’t have a full canner load. I just add in however many jars of water I need to fill it up. It also helps keep jars from falling over since it takes up the otherwise empty space.
I live outside of Asheville North Carolina. Thank you for your prayers I do add comfort. Pray for the people still without power. My mother lives in South Carolina and she is still without power and she is dealing with bone cancer. Keep your prayers coming!

It just shows you that when such devastating weather happens and your house is GONE in an instant it does not matter how much of a prepper you are. These are times you just thank God that hopefully you, your loved ones, your friends and neighbors are safe.
Absolutely! But for those who didn't lose everything and are living where roads are cut off and power is out, having access to clean water and food that isn't dependent on electricity is very helpful!
Thank you! My canning items are being shared with friends. We were without power, water and septic 5 days. We ate foods I canned, had excess water and roughed it for plumbing. I have learned so much from your video’s. We list 1 and half small chest freezers of veggies. We were able to store meats in a family members freezer. We do not have a generator.

Hi, you explained that so well. And I agree with the sources you recommended. When I coach anyone about canning, I tell them, "it's not cooking, it's chemistry". I can by the motto to keep it as simple as possible. One can always add the herbs/ spices/ other flavorings after the canned item is opened and being put into use. That's not to say one should not try a canning recipe that is a bit more complicated than usual. My daughter asked for THE ALL NEW BALL BOOK OF CANNING AND PRESERVING for her birthday. It arrived yesterday and her birthday is today! I strongly encourage anyone who has wanted to learn to can to GO FOR IT! We're in North Carolina but were blessed with very little damage. LOTS of rain.
I have been canning for about 45 years and pressure canning for about 30 years. I can tons of recipes that we like such as beef paprika, Swiss steak, etc. that are recipes that I cook. The only difference is that I do not thicken them when I am jarring them up. I do that part when I am actually opening the jar and using them. It is so great to have the meat part done and I can use it fast when I don’t feel like cooking,

1 lb beef diced small
1 tbs white vinegar
1 tbs paprika
1 tsp salt
1/2 tsp black pepper
1/2 c chopped onion
I use eye of round roast and cut into bite-sized pieces. Brown in oil and add to jar. Chop onions and add to jar along with vinegar and spices. Fill jar with water. Leave 1 inch head space. Pressure can for 90 minutes at the pounds of pressure for your location. To use: Heat on stove. Add 2-3 tbs flour to 1/3 c milk and whisk. Pour through sieve into pan with meat and juice. Cook for a few minutes until it thickens. Serve over rice.

As an 'old' woman, I grew up with canning practices considered rebel canning today. I would NEVER recommend anyone else do this, but I still use some of them because I am comfortable with the practices but do mostly use approved methods. Have a blessed Sunday.

My thoughts and prayers are with all those affected by the storms as well! Im in michigan and we can have ice storms, thunder storms and tornadoes and lose power, but the devastation thru NC and TN in particular has made me start clearing out my freezers and getting stuff in jars as well! I just took 19 jars of chicken and turkey back down into storage (still with some in the freezer for "fresh" cooking). Have some pork roasts and beef roasts lined up to do the same. I have 20 bags of tomatoes in a freezer probably that i tossed in there when I was sick of tomatoes! I was blessed with a harvest from my garden, a family member's garden and a local farm. I have salsa, sauce, soup, roasted marinara sauce coiming out my ears- and gave dozens of jars away to family as well. I'll likely do diced tomatoes just for something quick and easy, and use the "water/juice" from them as a stock. I never even thought about the 3 months of freshness, so i need to do something in the next couple of weeks.
My prayer for all of you is that water and food will be available for all of you. Also asking God to keep all of you healthy and hearty. May you all be able to recover well and get the help you need. I pray for your mental health and your faith. May you all be blessed for a long time to come. Amen🙏💝

I totally agree bout having food on the shelf and not in the freezer. We are on the West Coast and in prior years, homesteading friends lost power because of wildfires and lost everything in freezers.
I can a lot of soups and friends suggest freezing instead of canning. No way 😂

What a great job clearing up the mystery surrounding canning! Over my 30+ years of adulthood I have watched food preservation go from something simple and understandable to complicated and scary for no reason. We can do this without fear.
I’m in upstate SC and fortunately we did not have any structural damage. We lost power which led to losing 3 freezers and 2 refrigerators of food. Sad but still feel so fortunate not having any more than that. So many people have lost everything. My heart breaks for them . I have a stocked freezers but want to can more meat from now on.

Jessica, In central rural Nebraska most of us have at the least one or two 300 gal gas barrels on a stand. Farmers have huge barrels. A truck comes around and fills them. We don't get gas at the gas station unless we are traveling very far on vacation.
So there is not this crisis getting gas in little red jugs in long lines. I don't understand why none of the homesteading community does this. Could this be an option for you where you live ? It is so handy to have the gas or diesel for your vehicles, tractors, lawn mower, etc. You can buy the gas barrels at auction used to save money.
Ohh, chili beans! I love having home canned beans on the shelf but I didn’t think to make chili beans. Dried beans are just so cheap and canning them is such a passive activity it makes sense for me to use them over buying canned beans.
I have sooooo many peppers this year. I'm going to dehydrate most of them and make pepper sauce with the hot peppers.
Also freeze drying is another option for making meat shelf stable. I am in Alberta Canada, and luckily we have not expeienced these storms here. But my prayers go out to all those affected by them.

When I see the possibility of a hurricane heading close to us (SC), I always prepare by saving water and my husband by getting plenty of gas can filled for the generator. Well, I was so upset with myself for lowering my sense of urgency. The night it hit us in central SC I had just finished with the canning of chicken. The jars were on the counter and the storm hit. We checked the weather and it said we were on a tornado warning. Just then the wind picked up, I mean just as we read the warning and then all of our alarms went off, jump-starting our hearts and then, plunk, the power went off. At that very moment we heard a sound like we never heard before, but there was little to no time to act. The wind was scary but it went by fast. We had no sleep. As soon as there was some daylight, there were so many trees down. Our private roads were blocked by the trees. After several days without power, we learned we had two tornados in our area. There was a map showing the tornado trails and one right on our road. I'm grateful to God we are still here. But when we got to see the devastation in NC and NE of SC, I just cried. A whole town was gone; peoples houses washing away with them in it. I had a mess in the kitchen from the canning, but that was nothing at all. So much loss of life. The hurricane went too far to the east and took us all unaware. Hurricane season isn't over yet. I just hope the winds from the coast of Africa keep calm.
You were not the only one caught off guard. I made the mistake of trusting the weather service, and at 58, I should've known better. Fortunately, we've been testing our generator every month to make sure it works so we were able to keep the generator working. Living in the Belton area of SC, we were lucky to only be without power for 4 days and were able to keep the freezers going.
My mother was not so lucky, and a small tornado touched down on her property. She lost her generator, chickens, and a couple of sheds. With what we had stockpiled, we were able to help. I'm so thankful for people like Jessica and Ruth Ann Zimmerman who inspired me to keep putting things up.

Another viewer from upstate SC, we lost power at our house for 11 days. I have a small chest freezer and it was full. My sister's in-laws had their power return the day after the storm, and they had an empty freezer which was able to hold my food, and another one of my sisters too.
We had hot water, a gas stove, and my canned goods like soups and stews which made making meals sooooo much easier. I was really sick in August so I didn't get to participate in your challenge, but I had canned enough food before and after my illness that we didn't end up needing to buy very much during the power outage.
Storing food up in my freezer is a good plan...until something like this happens. We are thinking of ways we can be a little more prepared for outages and emergencies.

This morning at 4 AM here in Southern California, we had a 4.0 earthquake near Ontario. That’s about 5 miles from me. It shook the house pretty bad. Plus aftershocks. We don’t have damage but it’s another reminder to everyone in the country we all deal with some form of natural disaster. Whether it’s a hurricane, tornado, earthquake, deep freeze, extreme heat, etc. Prepare the best for where you live. ❤ I stay stocked up on canned goods, although I do have things in mason jars, but with the earthquakes, it won’t take much to knock those off of the shelves onto the floor were glass breaks everywhere.
I so appreciate the canning discussion. I'm relatively new to both water bath and pressure canning and my scientific mind really needed this explanation to help me understand the timing. I've been thoroughly enjoying canning, and want to try some meals in jars, but have been overwhelmed trying to find safe canning recipes that my family will enjoy.
Canning up both Navy and pinto beans today. I noticed we were down to only 6 jars of red beans left! Empty nester, but have grown up kids that live nearby. I share with them!❤

Prayers to all. We have three freezers on our farm. Our family does not like the taste of canned meat. We were blessed with a Generac which keeps the power in using propane from our tanks. Yes, it is a blessing to have power.
I have 3 freezers and 2 huge generators but I still can some meat for chicken pot pies, stew, there’s uncured ham in my beans, and I precook and shred chicken and can it for fajitas and stuff. We don’t just open up a jar of meat and eat it but used in things it’s not bad. Also in a situation that requires us to leave the homestead, we would have food ready to eat. I make jerky as well.

We had our fridge/freezer go out, and that was terrible. We lost everything, because the freezer went out first. By time we realized it, all the freezer contents were defrosted, and had to be trashed. It was heartbreaking. But nothing compared to Helene, who caused such damage. And inaccessibility. My heart goes out to those who lost their lives. And to the people that they are still looking for. There were back to back hurricanes that damaged a lot of people. We pray for them. In the end, I can't possibly complain to losing our freezer to what the south is going through. I hope people are able to get aid, and are back on their feet soon.
For me, I use meat times for meals in a jar/soup with more than half solids. I may even can for 5 minutes longer than the meat time.

I am new to canning and have only followed recipes so far. I really want to can some of my recipes like enchilada sauce and sloppy joe sauce but haven’t figured it out yet. This gives a lot of helpful information because we already have recipes we love that I want to get in jars. Canning broth today and tomato sauce tomorrow. I will try to find a canning recipe for enchilada sauce with the sources you suggested.
Rose Red Homestead has a meatless sloppy joe sauce canning recipe that can be water bathed canned. The meat is added at the time the meal is prepared, like the Manwich brand. I'm looking forward to trying it as I don't have a pressure canner yet.
