    I just rinse the beans, put them in a qt. jar, add a sliced jalapeno & lg tsp of red pepper flakes, 3 cloves garlic, 1 tsp of dill seeds. Then add brine ( 2 cups water, one cup vinegar, 3 tsp salt- bring to boil & stir to dissolve salt) Voila ! I put them in the fridge & wait for 5 days ( lightly shaking once per day).

    When you boil the jars of beans, the jars are automatically sterilized. Besides that vinegar kills everything. Just use clean jars.
