Cinnamon Chocolate Chip Cake recipe with Brown Sugar Cream Cheese Frosting

  • This cinnamon chocolate chip cake recipe is one of my all time favorites, second only to my dense dark chocolate cake. It has a rich moist flavor and tastes amazing .

    This is a large amount of batter, 19 cups, that I use in either three 8 inch layers or four 7 inch layers, and I recommend using tall 3 inch cake pans. The recipe easily breaks down by fourths if you are looking to make a smaller batch.
    CINNAMON CHOCOLATE CHIP CAKE RECIPE
    8 cup flour (8 1/2 for high altitude)
    8 cup lightly packed brown sugar (7 1/2 for high altitude)
    2 tsp cinnamon
    2 cup cold butter cut into pieces
    4 eggs
    4 cup sour cream
    4 tsp baking soda (3 1/2 tsp for high altitude)
    1/2 cup milk
    6 cup mini chocolate chips
    Preheat your oven to 325 (25 degrees hotter for high altitude - use an oven thermometer)
    in a mixer with the whisk attachment add the flour, sugar and cinnamon
    add the butter and mix on height until the butter pieces are the size of peas - stop before it starts to warm and cream
    dd the eggs one at a time, mixing between
    in a medium sized bowl mix the baking soda and sour cream, let sit 3 mins (it will expand)
    add the sour cream mixture into the batter along with the milk and stir until just evenly moistened
    stir in the chocolate chips - it will be a thick batter
    spread into three 8 or 9 inch pans and bake until a toothpick comes out clean, about an hour (50 mins for high altitude)
    CINNAMON BROWN SUGAR CREAM CHEESE FROSTING
    1/2 cup butter
    12 oz cream cheese
    1/2 cup brown sugar
    1 tsp vanilla
    2 lbs powdered sugar give or take
    2 tsp cinnamon
    Melt the butter and brown sugar together until the brown sugar dissolves
    let cool to room temperature (you don't want this warm when you add it to the frosting)
    beat the cream cheese until creamy
    pour the brown sugar mixture into the cream cheese and beat until smooth
    mix in the vanilla
    add half the powdered sugar and beat
    add the cinnamon and beat
    add more powdered sugar 1 cup at a time until your happy with the thickness

    So if I was to have 1x9 inch pans and want to make 3 layers, what is the amount for the ingredients then? Btw this looks amazing!

      1 inch pans? that is really short, typically cake pans are 2 inches, are you sure? this recipe should fit into three 2x9 inch pans. if they really are 1 inch then you'd need to cut the recipe in half.

      Dhyna Ghamry . Hope u figured out the cake conundrum by now. But if not, u can make the entire batch an see how much batter u have to use an the rest u can use for cupcakes.

      You can half the ingredients if you only want two layers, and I think the cupcakes are a good idea to!:)

      refrigerators dry out cake so I don't refrigerate cakes unless they have a cream cheese frosting or a mousse filling

      it really is easy - I promise, the bigggest challenge is simply the size of the batter, I'd suggest starting with half the batter and doing a 2 layer 8 inch and seeing how your mixer does it.

    Do you have any good cake recipes to use under fondant but uses oil instead of butter? Pls help or guide me to one..thanks a bunch

      I do not have any recipes with just oil but you could use a nut butter. I have also heard you can replace butter with applesauce although I haven't tried it personally.

      I don't find it to sweet but I also love sugar haha, I think it balances nicely with the cinnamon flavor

    Just saying, I'm about to make it this cake,,, YUM! and I'm wishing there was another format to print the recipe from. When I copy and paste it into Word, it pastes as one, lump paragraph. And now I have to format all of it myself. Kind of a pain. But I'm going to do it, because it's worth it for my 14-year-old's birthday cake!!!!!!

      It should stay moist but you have to make sure it is sealed in an airtight container

      the batter is really thick so I've never had the chocolate chips fall to the bottom. Did you use mini chocolate chips?

    This cake is in the oven right now! All I can say is that I underestimated how much batter this creates. I have a kitchen aid and I realized very quickly I had a problem. I got 3 bowls (including the mixing bowl) and was alternating between them. Still, in the end, it was super easy to make. I will let you know my thoughts after we ice it and eat it!

      That is really weird! The batter is so thick I’ve never had the mini chocolate chips sink!!! Did you accidentally use larger chips??? Or was the batter thinner than mine? Maybe more liquidly?

    Absolute disaster. I tried recreating this dish but was in dismay when my cake was exploded in the microwave :(.

      well that's probably your first problem - you don't bake cake in a microwave - this cake gets baked in an oven
