Today im going to share with you how to make a super easy and delicious green chicken enchilada pasta now let me tell you this has to be my favorite Disneyland food! If you want it to be creamier add cream cheese and crema mexicana ☺️
The oil helps to make the salsa creamy already but feel free to add them both to make it creamier
Ingredients:
1 lb chicken breast
12-15 tomatillos
Chile serranos or jalapeños
1/2 onion
4 garlic cloves
Handful of cilantro
Chicken bouillon I used 1 tbsp
Salt I used 2 tsp
1 tsp oregano
1/2 tsp ground cumin
1/2 tsp black pepper
1 lb rigatoni pasta
7 oz Roasted corn kernels
Melting cheese
1 serving of love 💕

This is definitely new and outside the box thinking. If literally ANYONE but Claudia presented this idea to me I would dismiss it out of hand.
But I regularly make about a dozen recipes from Claudia so I'm going to give this a try. She hasn't failed us yet.

Love this one. Sometimes if I don't have tortillas but have leftover pico or salsas and shredded meats, I add them together with pasta. Just because I didn't have anything else at the time. I didn't think to make them like that from scratch. I may be going too far but some artichoke hearts and sun dried tomatoes on this could be really good too. So many possibilities!!! That's why I love these vids.

What a great idea! You can change any Italian dish into something new just by substituting the ingredients from Italian to Mexican. I've never thought of doing that.
