  • Today we will be making a delicious Guinness beef stew! This hearty and comforting dish is perfect for a cozy night in, and the addition of Guinness beer adds a unique depth of flavour that will leave your taste buds wanting more.
    Preparation Time: 10 min
    Cooking Time : 2 hours 15 mins
    Serves : 5
    To start, we will need the following ingredients:
    600g of beef, cut into 1-inch cubes
    2 tablespoons of olive oil
    1 large onion, diced
    4 cloves of garlic, minced
    2 carrots, peeled and chopped
    2 Potatoes, peeled and cubed
    2 stalks of celery, chopped(Optional)
    1 tablespoons of tomato paste
    1 teaspoon Worcestershire sauce
    1 tablespoon plain flour
    500ml beef broth
    400ml Guinness beer
    2 bay leaves
    1 teaspoon of dried thyme
    2 tsp chopped parsley
    Salt and pepper, to taste
    First, heat the olive oil in a large pot over medium-high heat. Add the beef cubes and brown on all sides, about 2-3 minutes.
    When browning the beef cubes, it's important to work in batches and avoid overcrowding the pan. This ensures that the beef browns evenly and develops a nice crust. Cook each batch for about 2-3 minutes, or until browned on all sides. Once done, remove the beef from the pot and set it aside for later use.
    Remove the beef from the pot and set aside.
    Next, add the onion and garlic sauté for 5-7 minutes, until the onions begin to caramelise. Add the tomato paste, flour and Worcestershire sauce and stir for 1-2 minutes.
    Add Guinness beer, beef broth, bay leaves, thyme, salt, and pepper to the pot. Stir well to combine all ingredients.
    Return the beef to the pot, cover, and simmer over low heat for 1- 1:30 hours, until the beef is tender and the stew is thick and flavourful.
    Add Carrots and Potato and continue cooking for 30-40 minutes on low heat.
    If the stew is too thick, you can add a little bit of hot water to thin it out to your desired consistency.
    Add parsley and Serve hot with crusty bread for a truly comforting meal.
