RWBY: All Things Must Die - Orchestral Metal Cover

Where I expect Smile to be simple to do and turning out fairly difficult, this was the inverse. Though not needing to transcribe it from the ground up plays a big factor in that.
Anyway, starting out, I left the intro mostly unchanged, with the additions to it being fairly subtle; the most obvious being a choir to balance out the violins. I always imagined a choir being there in that segment, so I took the opportunity to make that a reality. After the intro, I left the guitars unchanged during the verse and pre-chorus, but changed things around for the chorus. Not in a major way, just a change in rhythm. Knowing I wanted to add a harpsichord to the piece going in, I did so first during the chorus. Later in production, feeling it needed a little something extra, I also doubled the melody with horns in the chorus' second half.
For the post-chorus, I doubled the guitar with harpsichord, with the scales here leading me to decide to introduce the instrument. To allude to the high-tension situation, I also added some frantic horns and strings here. Extending that musical intent to the second verse, I added some tension stabs on violins through-out it.
The first half of the second chorus, I returned to later in production with the idea to add some further movement in-between the low and mid strings. I tried a variety of instrumentation for this before ultimately settling on contrabass clarinet and higher woodwinds.

Just so you know, though, there's no organ in this. What you hear doubling the piano is a celesta; a piano-like instrument, probably best known from harry Potter's Wedwig theme.
