Yes, there are a few COVID Delta cases here but I believe it’s minimal and the government has their way of cracking down very hard. Here, in Shanghai, there are very few cases out of millions so I feel very safe here. Internal travel is possible but many are staying put. Next year…. Looking forward to my condo near Iglesia Xalteva, Granada and enjoying gallo pinto, carne asada and fresh tortillas. Have some for me guys. You’re awesome!!!

Indio viejo is a thick stew (not a soup) made with ground dry 🌽 cornmeal, tomatoes, onions, green peppers, achiote for color, mint leaves and twigs, pork lard, sometimes dry cured beef and in some regions with venison, where available. One day when I was describing this dish to a friend from Cuba, she said, "that's Tamal en Cazuela"... in other words a Tamal cooked without the corn or banana leaves that give a Tamal its form.
Also in Nicaragua there is a version of the nacatamal called tamuga or enchido made only of rice in vessel mass of croops and carries vegetables .. zanahoria, chayote, papa, good , hierba buena and other ingredients more ..
