Paul and Peter both taught that resurrection was spiritual, not bodily. It was only decades later that the Gospels and Acts taught that resurrection was bodily. In one of the earliest New Testament texts, Paul used the analogy of a seed to explain that the body would he transformed at death from one bodily form to another. He said… "What you sow [a seed] does not come to life unless it dies. And what you sow is not the body which is to be... So is it with the resurrection of the dead. What is sown is perishable, what is raised is imperishable... It is sown a physical body, IT IS RAISED A SPIRITUAL BODY. If there is a physical body, there is also a spiritual body. Lo! I tell you a mystery... we shall all be changed, in a moment, in the twinkling of an eye."- (1 Cor 15 RSV) In 1 Corinthians 15:4, he used the Greek word egeiro, which means to awaken. It’s the same word used in Matthew 8:25, when Jesus was asleep in the boat during the storm and was awakened (egeiro) by the disciples. If Paul was meaning a bodily resurrection, he would have used the Greek word anastasis, not egeiro. Matthew used the Greek word optonamai (or optomai) to describe Jesus appearing (origami) at the transfiguration (Matthew 17:3). The text itself says the transfiguration was a vision, not real (Matthew 17:9). Paul used the same word to optinamai to refer to Jesus appearing to various people after his death. For those of us passionate theists who believe that the Bible is a very human book about developing conceptions of God, there is the exhilarating freedom of thinking about religion unshackled by words written thousands of years ago. Albert Schweitzer, a polymath who poured out his life to serve the poorest of the poor, following the Jesus he academically deconstructed yet spiritually revered as Lord and Master, is a pioneer of this radically free form of deeply devout theism. Its elemental value, as distinguished from a core concept or doctrine, is reverence for life. This is the faith I have come to after many decades of religious experience and years of intense study, leading to an ordination in the early 1970s which continues to this day. This is the faith, which, as Schweitzer explains, trusts in God without having to, even trying to, explain everything, in which I hope to close my eyes in gratitude, yielding my life to the One who gave it to me.

Moreover, there are powerful arguments that they were, in fact, either written or informed by eyewitnesses. See especially "Jesus and the Eyewitnesses" by acclaimed New Testament historian Richard Bauckham. Third, you seem to think a document written "decades" after an event automatically removes reliability. It does not. An eyewitness to the 9/11 attacks can relate facts about the events with great detail, even though more than 20 years have passed. Bauckham's book also addresses memory studies and their relevance to the Gospels. There's also a very good book on the subject by David Graieg titled "Resurrection Remembered."
