I have a question , so I did this experiment and only had one trial. The data points i collected was distance and time and I am calculating a quantity that rely on this data, is deviation or error bars in this case would be useless!?
As per my understanding you want to calculate response using previous trend. In that case line of best fit is a suitable tool: Follow this tutorial: ua-cam.com/video/o202naENQs0/v-deo.html
Firstly click on any error bar, all error bars will be selected. After that, again click on the particular error bar that you want to edit. One error bar will be selected. Now you will be able to change the color of individual bar by using the method as describe in the video
Follow the procedure as I explained earlier. Click on error bar and you will observe that all error bars are selected then again click on the error bar of your interested. It will enable you to single out that particular error bar. Please avoid double click.

I dont have that option on the newest excel version, where can I find it?

My excel doesn't have custom error bar...
The options arrangement varies depending on the version of excel. But, custom error bar option is available in each version. I have used excel 2016
