  • Hi Friends! It's been a while! Apologies for the delay, I was recovering from multiple bouts of illness but thankfully feeling much better now. During my absence, we crossed the halfway mark of my one-year ration challenge so I thought it was time to check in and discuss how it's all been going so far. What have the biggest lessons been? What have I been struggling with? Have I lost any weight? How much money am I saving? All these questions, and more, answered in this vid.

    Rainbow Dhansak
    Original recipe by Jack Monroe ‘Cooking on a Bootstrap’
    Jakes Version -
    Ingredients
    Bunch of kale (as much or as little as you like)
    Half a red cabbage
    1 x large sweet potato (cubed)
    3 x medium carrots
    2 x medium onions
    1 x cup red lentils
    2 x tins chickpeas
    1 x bulb of garlic
    3 tbs ginger
    1.5 tbs curry powder
    3 tsp garam masala
    Cayenne pepper to taste
    1 tbs sugar
    Salt and pepper
    1 x can tomatoes
    1 x can coconut milk
    4 x cups stock
    Serve on brown rice
    Optional: top with coriander / Greek yoghurt
    1. Fry off onions, garlic, ginger and spices for 5 minutes
    2. Add sweet potato and carrot, cook for a further 2-3 minutes
    3. Add your stock, cabbage, kale and cook for another 2-3 minutes
    4. Add canned tomatoes and sugar
    5. Add lentils and chickpeas
    6. Cook until lentils are ready, making sure they’re submerged in the stock. Add water if needed. Usually takes 7 mins.
    7. Once lentils are finished, turn off heat and add your coconut milk.
    8. For the rice, bring a large pot of water to the boil (I love cooking rice in chicken or vegetable stock)
    9. Wash 2-3 cups of brown rice and add to boiling stock/water
    10. Cool for 30 minutes. Once finished, drain the rice then add it back into the pot (heat off), put the lid on and let it steam for 10 minutes
    11. Serve with coriander and Greek yogurt for some extra tangy goodness

    I can recall the WW2 rations and honey was not rationed during the war, in fact the UK produced the own domestic supply. The creamed honey 🍯 was delicious 😊
    Golden syrup was also in fairly good supply. Butter was not a big issue as we often had dripping on bread-don’t knock it as filled up an empty tummy.
    And we did not miss watermelon or avocados 🥑 as the ordinary person could not afford the items or shops did not stock them. We grew most of our own😊
    The rotating menu was fine and easy to swap/switch about. Our parents were very innovative.

      Thank you! The creamed honey sounds delicious, I don’t think I’ve ever tried it - must get onto that! Definitely won’t knock dripping on bread, I imagine it would have tasted quite good actually and recall my grandmother eating it. I cook a pork roast once a year for a special anniversary and I always save the fat and use it for weeks afterwards in various dishes, the flavour it provides is excellent 👌

    Welcome back, I hope you are feeling better.
    One thing my grandparents used to tell me was they had a huge garden and grew all sorts of vegetables and herbs in their garden including onions, spring onions cauliflower, potatoes, etc. and occasionally tomatoes . They had fresh camomile and mint so would make tea. There were also raspberriy and blackberry bushes and they also had strawberries. People would forage for sloes and mix with gin. My grandfather used to swap veg for honey and add it to the sugar ration and make wine. One thing that is lovely that I still make and fool people with is carrot marmalade.. sounds awful but it is quite good. According to my grandmother if you thought outside the box food was not as boring as people would imagine. Salads used weeds we throw away. A favourite I still cook is nettle soup, nettle cake and nettle pasta.. Just a few ideas to try. But then my grandparents lived in a rural setting so always grew their own and everyone foraged the countryside.

    You have done so well Jake! I confess I didn't see how you, a modern person , would be able to meet this challenge.
    There is much talk here in the Uk about the cost of living crisis and how food has become expensive and yet the numerous 'fast food' outlets where, I live, belies this . The amount you saved on take away coffees and food proves my belief that when folk talk of shortages, they are talking of wants rather than needs.
    I remember Frugal Jo well. She was inspirational.
    Just a tip about your tea ration. You say you are managing well but someone else doing this challenge may find it useful.
    If you have a disused coffee filter machine, try using loose tea instead of ground coffee. It's amazing how little you use compared to even the same in a teapot, plus it stays hot.I use a piece of kitchen paper towel instead of buying filter papers
    and it can go straight into the waste food caddy or better still the garden compost bin. My dad used to sprinkle spent tea leaves around a camellia or raspberry canes.

      Thanks so much Betty! 💜 There are definitely challenges that present themselves 80 years on while looking back, mainly the wide variety of ingredients so freely available to us now (that we’re so accustomed to) that simply wouldn’t have been around back then. But I guess in that sense, the absence of them allows one to get a small glimpse of the deprivation they endured in their own time with certain food stuffs. Agree with you totally re fast food - wants instead of needs. I’m just as guilty as the next when it comes to junk food cravings though haha. They say that the chemicals/methods used to prepare fast food can literally ‘scar’ your DNA! Very scary. I’m so glad you know Frugal Jo! I was devastated when she announced she was leaving UA-cam but of course, respect her decision. I don’t use a coffee filter machine but, I have been keeping my leftover tea leaves and sprinkling them on my house plants to give them a feed - most of them perked right up, some didn’t like it much so will avoid those ones in future but mostly, another great way to ensure nothing goes to waste ☺️ Thanks again for your comment 💜

    Glad to hear you're also a fan of Frugal Jo. I very much miss her presence on UA-cam.
    From memory I remember watching a programme, can't remember which, about WW2 and they made parsley honey that was a substitute for honey. It seemed fairly simple. I had a quick look online and saw recipes, but some used lemons and I doubt that's what they used then. Wish I could remember it fully.
    I think in cold climates animal fats become more precious too as well as for calories for activity. Winters in the UK could be difficult with no central heating, no double glazing or insulation. I grew up in the 60s/70s in a house like that, with the only heat being a coal fire in the living room. We'd sometimes wake up and there'd be frost patterns on the inside of the windows. Also having to go outside to the loo that was up yard in the cold/rain.
    Would it be possible for you to list the books/resources you're reading from? For frugal / rationing nerds like me 😁

      I didn't know she had left. I left for months, myself. Has she set up her own site, is it called? If I could choose, I would prefer to visit a normal internet site.
      Does anyone love ohpapillon? She has a great sense of humour and is a natural cook - but she did not upload much before leaving.
      And her failures were a joy. Wicked laugh.
      Jake can pretend he stays or dines with a couple of chums with some private estates, who have extra bits and pieces sent down to a city house. Maybe even make a bit of booze with fruit.
      I love the idea of eating on rations, but I nod along with the recipe, and then think, "That would be even nicer with 3 times the butter."
      In my WW2 fantasy, I will have to also have a dairy farmer boyfriend or... 😱 an American chum in the catering corps...
      That recipe of Jake's looks MAGNIFICENT. I want to buy half! I am drooling. Though I might skip the sugar, if I have to make it myself.
      He would make a fortune if he could just pass things through phone screens and I could pay cash through the screen!

      Was it the WWII Farm series with Ruth Goodman? I remember she made quite a few substitute recipes for foods that were unavailable or rationed..

      Thanks for your comment! 💜 I’m so glad you know Frugal Jo, she was great. Watching her videos was like catching up with an old friend. I think I need to try making parsley honey, there’s a recipe for it in Marguerite Patten’s book Feeding the Nation (which doesn’t require any lemons). You’re definitely right Re animal fats, they provided much needed fuel (and flavour) for the body, especially during winter. Oh god, I am so thankful to be living in a time with modern heating/insulation! I can’t imagine waking up to frosts inside!! I do recall my grandparents having an outhouse as well when I was a kid.
      The wartime recipe books I currently use/reference are: Marguerite Patten’s Feeding the Nation, Eating for Victory (which is a collection of all the pamphlets The Ministry of Food published throughout the war and rationing period), Good Eating (collection of recipes from Daily Telegraph readers) and my fave - Food Facts for the Kitchen Front.
      In terms of programs, have you seen all the farm series with Ruth Goodman? Wartime Farm, Victorian Farm, Edwardian Farm, Tudor Farm etc. All are available on UA-cam. VERY informative. Wartime Kitchen & Garden with Ruth Mott is another fab series. Otherwise, any little docs or UA-cam vids I can devour online (at this stage I feel like I’ve seen most 2-3 times). Utility Jude is another great one!
      Not sure if you’re familiar with Carolyn’s amazing Facebook group or blog (Living on WW2 Rations, The 1940’s Experiment). So many wonderful contributors on the fb group. Her blog has hundreds of recipes but there’s also a 40 page document published by Ministry of Food with covers the ever-changing rules/regulations regarding rationing and point system between 1940-1949 in extraordinary detail - I personally consider this to be the holy grail.
      If there’s something else I need to hone in on and research for a video, I just read various articles online.
      I’m sure you’ve already heard of everything I’ve just mentioned haha but nonetheless, those are my main reference points 😊

      ​@@thekitchenscrapThere is also a Welsh miners at war series. Can't recall the name. But they get pigs to raise and some people are happy to kill them and others not wanting to - and it made me very distressed.
      But one of my favorite series is the 1940's house that really changed the family. And there was Blitz St, with Tony - (Baldrick?) - Robertson, and that is about what the different bombs would do to terrace houses.
      I know the Ruth stuff and the wartime house and garden. And there is a series on different periods where you ran a chemists, with Ruth.
      So many great BBC programmes. I think Oz did a copycat programme about being an early settler and America did a settlers programme, but I didn't like them.
      The Brits do those things the best. One of those series, I think Marguerite actually calls in to give advice and encouragement.
      And there was another series that began with 4? families living next to each other, and they jumped a generation each week? And I think they might have followed the experiences of the families in real life. One family started off wealthy and got poorer and poorer. Another family became really spivvy, and hoarded, sold black market during the war - not because of their family history, but because they really were spivs by nature. Whilst other families shared produce from common gardens, they pulled up all the veg to sell. It was unexpectedly like real life.
      Ruth, I have heard, can be quite patronising and expecting to be hero worshipped.
      I love the sturdy, sweet natured chap, that takes all the horrible heavy jobs on the farm, and building the castle, etc.. Partly because his tall thin mate has a terrible back - so bad he has to leave, despite all the effort the lovely chap makes to cover his shortcomings - but the tall thin chap will occasionally imply he really is the thick labourer employed for the show.
      But the stocky chap is a real archeologist, I think I recall. Both used to be on the occasional earlier Time Team.
      He is a real, quiet hero. Never pushes his knowledge, never shoves back. There are times when I would fantasise about kicking the tall patronising one in the shins. And it isn't because I fancy the strong lad. I actually prefer very tall and stick thin.

I hadn't come across the last two books you mentioned. I'm familiar with the lady from the 1940s experiment. I used to follow her on insta, but I don't do Instagram or Facebook anymore, I'm trying to not be online as much these days.I will definitely look for those two books. Thank you

    I remember one video of an old dear discussing what she ate as a child during the war. She said the word “boring” three times in the three minute clip.

      Not going to lie, I can relate! It’s hard to get excited about some of the wartime recipes, they can be quite bland on occasion. It’s all about that seasoning, for sure. But every now and again, one comes along and knocks it out of the park. There are a few I will carry with me into the future 😋

    People also had access to more food than there is on the ration list because they were encouraged to grow food. Parks and gardens were used everywhere and provided things like onions, potatoes etc. I think in rural areas there was more food available - like dairy products - and some people such as the homeless and the very poor may even had more to eat becauseof the free foods. Living in city slums others would have really struggled. I love that you are doing this challenge; it's said that our diet at the time was the best it has ever been - because sugar, fats and treats were in short supply.

    Thank you for the brown rice cooking tip. I also wanted to share my bulk hot chocolate recipe. It's not a wartime rationing recipe, but uses ingredients that would have been available. The original recipe contained skim milk powder for an extended shelf life, but I have made it with full cream milk powder and prefer it. Recipe: 2 cups milk powder, 1/4 cup cocoa powder (sift it in), 1/4 cup sugar (or to taste), and a pinch of salt. Mix the dry ingredients together until blended. Store in an airtight jar. To make one cup of delicious hot chocolate, place 1/8 to 1/4 cup of hot chocolate mix into a cup or mug (depends on size of cup and strength preferred). Pour on boiling water and stir until dissolved. If you have a marshmallow from your sweet ration, you can add that on top. Enjoy! Makes around a dozen cups of hot chocolate. The recipe came from The Budget Cookbook published by the Culinary Arts Institute, Chicago Copyright 1976.

    Great recipe (except for the cilantro, erk) As for you eating at work, I think many factories had cafeterias for the workers, not sure if they were free but I'm sure they were very cheap. I'm happy to see you back, I've missed your videos. Stay healthy.

    As someone who use to be a 12 can of mountain dew soda pop as a teenager, I went cold turkey after having heart pain. Let me tell you the migraine and withdrawal sympthoms from that were hideous. now I can nurse a pop for about 4 days easily and drink mainly water or ice tea. Glad to see you back and doing well. Very much missed you in the facebook ww2 rationing experience group and the videos. (PS - you can tailor mexican meals to be more ration friendly. I have them bulk up on the veggies and potatoes and cut back on the meat. And if there is any tortillas or chips, I ask them to leave those off and add more veggies. Any leftovers I take home for another meal, which has happened a lot. Also I am a big fan of homemade refried beans so I feel your pain, but technically, its still beans and on the ration.)

      Thank you! 💜 And well done on switching out the Mountain Dew! 💪 I’ve enjoyed it every so often in the past but, I vaguely recall reading it has the highest amount of caffeine of any drink on the market? 😱 I’ve also overdone my coffee intake in the past to the point where I’ve felt heart pain, it’s quite scary! I adore Mexican cuisine and prior to rationing this year, I made A LOT of Mexican dishes. It’s so economical and packed full of flavour. Absolutely adore refried beans 🤤

    My great grand mother's recipe for imitation honey included, sugar, dandelion flowers, red clove, white clove, and any other edible flowers she had in her garden, unfortunately she passed away without leaving the recipe. But from what I remember (because I remember helping her several times to make it) you place water and quite a lot of flowers in a pot and you bring them to a simmer, once water was fragrant and slightly sweet to the taste she would strain the flowers to remove them from the water and add sugar, then she would simmer it until it would have the consistency of honey. I have even seen her make this concoction using sweet corn cobs after she had removed the kernels. Sorry I don't have the measurement but this may be a place for you to start you search.

      ​@@thekitchenscrapoh yes! That is right. Corn Cob honey! You put your masticated cobs, looking awful, in a freezer bag, let them build up, as I think you need about 8 full cobs, minimum!
      I forgot about that! Must be about 30 or 35 years since I discovered that! I think I made it once, but just forgot about it.

    I loved it!!!! I am so glad you are feeling better, and I am equally glad that Practical Jake has overpowered the darker side of rationing at the times when you needed it! This was not weakness, but strength! Your choices seemed very reasonable to me. I am very interested in trying the Rainbow... what was that? Did you say Dim Sum? As you know, I made exceptions to my rationing early on, to include healthy vegetables and fruits not available at the time (but local to me here, for the most part), and garlic, onions, spices... they did have ginger and even garlic... garlic was just unpopular... I can't figure that one out. I have not seen them cook with fresh ginger other than in preserves, but I have grown ginger, so I was not going to give it up. I was always thrifty with food, but since rationing I have also saved money! I attribute it to giving up prepared foods like crackers, Greek yogurt, cold cereals (though I still eat Post Grape Nuts in hot weather). I think also because of the ration limitations of some of the more expensive ingredients, such as butter and meat (and I feel better with less meat in my diet). I have been doing more food DIY, baking and saving fats and making stocks, using more dried beans and goods than canned ones, and I think as I am eating more vegetables, legumes, and whole grains which give me more fiber in my diet, and I'm eating "3 square meals" a day, that because of these two things I have been snacking less and grazing less and less hungry. It seems to get easier to pass on processed foods and snacking, and even sugar... but not cheese, lol. 🐁Wonderful video, interesting thoughts on this experience! Well done!!! 💕

      Thanks heaps Holly! 💜 So it’s called Rainbow Dhansak, a few people have asked for the recipe so I’ll pop in into the description this afternoon and will let you know once it’s done 😊 Yeah I can’t figure out why garlic wasn’t used more often back then either 🤷‍♂️ Likewise with ginger. Like you, the only time I’ve seen it is in ‘preserves’ recipes and sometimes powdered ginger for various desserts, but rarely. I love how you incorporate so many aspects of this diet, which is a way of life really, into your life but comfortably adjust it to suit your needs and preferences. I will be doing the exact same thing moving forward beyond this year as there are so many practical, waste/money saving advantages - to say nothing of the health benefits!! Although I dare say, I will be increasing the amount of cheese again once the challenge is over! Thanks again for the lovely comment 💜

      I love coffee & drink it every day, but tea is what I can't live without. I like it so strong the teaspoon stands up in the cup. I need it.

    It's so good to see you again, Jake! You did such an amazing job explaining your rationing journey. And good on you for treating yourself to that gorgeous curry after being so ill!
    Quick question re. your brown rice cooking method: when you return the drained rice to the covered pot, do you put it back on the heat?
    (As a freelancer who's currently looking for new clients, I totally know that terrified feeling 😱)

      Thanks so much Danielle! 💜 Ah yes, I totally forgot to put a note in about the rice but once you’ve drained it and return it to the pot, don’t turn the heat back on - just put the lid on and let it steam for 10 mins 😊 Perfect brown rice, every time. I usually cook it in chicken stock for extra flavour, so freakin’ yummy.
      I really hope the freelance work starts flowing in a nice, steady, effortless stream for you! 🙏🫶

    It was so nice to wake up to a new video.. I missed you! While you were away I made the potato leek soup, the roasted vinegar potato skins, the red cabbage and apple and the date cake (OMG so good.) FYI, there's a recipe for parsley honey on page 161 of Feeding the Nation. I have no idea what it's like because I'm not a honey person, but it would use up your sugar ration and it contains vinegar, so two pluses right there.

      Additionally, I'm convinced (bold that in your mind) that the grocery industry is raising prices across the board, across the world, to make back their losses from the pandemic. Every article I've read says they are profiting hand over fist. Shameful of them. Back in February, the CEO of Kellogg said we should be eating breakfast cereal for dinner to get by while their company had $651 million in net sales. Enough already.

      @@hymmj147 1000%. I’m not sure where you’re from but here in Australia, we have two major supermarkets that control majority of the industry. They are currently facing multiple government inquiries over alleged price gouging (which has since been proven to be the case) as they’ve been consistently rising prices faster than inflation can account for and offering fake sales on so called ‘reduced’ products - to say nothing of the nasty business tactics employed when dealing with local farmers. I dare say this is what’s happening globally 😔

I'm in the upper Midwest, U.S. Here, Kroger and Albertsons corporations want to merge to grow their influence against Walmart (who controls 22% of the market), eliminating the competition between them. Those three together would then control 35% of the US market. The Federal Trade Commission doesn't believe their claim that prices won't be affected negatively for the consumer. There's a hearing on it at the end of this month. What's happened in Australia is telling for us!

The two conglomerates here, Coles & Woolworths, control over 60% of the supermarket monopoly (or in this case - duopoly). I’m actually familiar with all the American supermarket chains, I’m obsessed with Frugal Fit Mom on UA-cam, if you’ve ever watched her vids?

I'll be making the curry... It is similar to something I already do. I add spinach instead of kale. Interesting challenge too... You've amazed me!

    Hello Jake, pleasure to meet you. I have watched a few of your videos. My Mom and Dad served in Vietnam, I was a child. The rationing you are talking about was before my time. After the war it was hard for my parents to find work. I grew up eating things that you are sharing. Weird tho, is my Dad is Puerto Rican and my Mom is Pa. Dutch. Strange combo of rationed food we ate. We never went hungry. Please keep your videos coming. Thank you.

    You are doing really well, hope you feel better soon!. Don't think I would do well on war rations as 90% of what I eat is red meat, fish, dairy and egg for my health as I don't do well eating too much fruit, veg and grains. I would have had to buy on the black market!

    Hi Jake, your video just appeared in my feed today, and I must say how enjoyable your content is.😃 I tried the war time ration diet a few years ago, for just one month, after watching The Supersizes Go ... Wartime, and reading Feeding the Nation by Marguerite Patten. This book started my passion for, and collection, of WWII cookbooks. During my experiment I swapped out my tea ration for rooibos tea as I don't like regular tea. My partner gave me his butter ration for my cheese ration. We hardly touched the sugar ration unless I baked a small cake, or some biscuits, and I made the sweet ration go further by cutting the generously proportioned Darryl Lea Liquorice Allsorts into four, ditto big marshmallows. Many years ago I worked with a lady who had lived through WWII and post-war rationing in London. I didn't now much about rationing at that time and wondered why whenever she brought morning tea into the office to share, she would bring in only four biscuits, or four slices of cake, one each for the four of us. From that point on, I always referred to one each of anything as a "Janet". Q: How many biscuits are left in the tin? A: A Janet. Janet taught me so much before I even realised it! I admire your one-year commitment and will be watching all your earlier videos. Greetings from Perth.

      Thanks so much for your wonderful comment Kerry! I adore the Supersizers too and watch it regularly. Sue Perkins is hilarious, I highly recommend her books if you ever come by them. Thats how I learnt about rationing, after watching the wartime episode back in 2011. Sounds like you had a good plan with your challenge! That’s the brilliance of it, you can make it work for you and no doubt a lot of people back then did similar things by swapping certain items for others, eg vegetables for eggs or cheese etc. Love the ‘Janet’ story! 😂

      Hello!! Thanks Rebecca 💜 Haha yes, I was quite shocked when I worked out the savings. Much more than I thought they would be. There’s actually an egg shortage here in Australia atm due to avian influenza and supermarkets are limiting the amount people can purchase. Lucky for me, I guess, that I don’t eat them frequently or depend on them but it must be tough on those that do. I hope you’ve been well and I simply cannot wait to hear about your latest adventures in your new mobile home (so cute btw!) and running the farm shop! X

    3:30 was me for a while for totally different reasons. my 1st year teaching i got sick every month! the next year i did better. change can bring abut colds, etc.... I hope you are doing better. Covid brain is real. I had it just 2 weeks ago. I ate my black and white summer bean salad along with my chicken noodle soup (commercially canned). It was cooling. my brain was a bit fogged for a few days after my fever broke.

    I loved your video, and your version of Rainbow Dhansak! I got the original recipe from Jack Monroe (Cooking on a Bootstrap) and just added a few more spices that we liked and the coconut milk. I still make it a couple of times a month and just chuck whatever is on hand in the pot! ❤

    British Restaurants were a thing during the war. You could expect to eat a hot cooked meal with 3 courses at a fair and capped price every week day as it fed the workers lunch. Also fish and chip shops opened at least once a week so you could get that too, although fish was in short supply it was off ration. You could sill get at least the chips once a week. So to eat out you only have to follow the rules that meat was only served at one course. A vegetable soup for starters, a meat course often stretched with bread crumbs, and then a stodgy steamed pudding with custard made from powdered milk for afters would be the order of the day. It was expected that you ate from a British restaurant to supplement your ration and get a decent lunch while out working. So if you eat out or get a small portion fish and chips while on this year rationing you are still following the rules. And provided you follow their rules and do not eat anything out of season or not available back then you might be able to eat out generally but no where too posh or modern. Ruth Goodman cooked for a recreated British restaurant on one of her programs war time farm episode 5 near the end of the episode and followed a menu plan from the real ones back then.

    Also, oh my goodness, thank you so much for that recipe! I've made it once, after seeing it on Frugal Jo's channel, never wrote it down, and then of course couldn't find it again. I tried to replicate it, but just couldn't get it right.
    I'm so glad you've gotten to the other end of a nasty bout of Covid , and I hope that was it for the rest of flu season this year.

    I'd also like to commend the fact you're one of the very few who actually adds a bit of context to the stated rations.
    All too often, people simply state what was allowed every week and don't make clear that certain things in the ration book weren't available from time to time (owing to bombing disrupting the distribution etc) - even some of the basics. So well done for doing that. 👍

      Thank you! 💜 You’re totally right, I forgot about that! Factory workers were able to eat daily, for free, at the canteen/cafeteria! There are some weeks where I don’t eat at the bar but more often than not, I do - especially since they keep updating the menu so of course, I have to try the new items! Purely for research purposes 😉

I don't believe I could give up my coffee, 71 yrs and I was born fully caffeinated and have been on maintenance since then, LOl! And 9 yrs working as a barista ..... yeah, not giving up the coffee. Not to worry about the "slips", there are so many options out there now that simply weren't available back then. Bet they would have slipped too if the opportunity presented itself .     It's so great to see you back - I missed your cheerful and fun videos, and so glad you are feeling yourself again! I feel like any person living in wartime would very wisely and happily consume that free weekly meal at a restaurant, so you go right ahead :-) I wonder if you could use your sugar making kombucha - it only takes black tea and sugar and the scoby, and is very healthy.

    I just buy a nice dark Honey like Buckwheat honey 16oz. jar and a 16 oz. corn syrup [ I use 1/2 jar of honey to 16 oz. corn syrup heat in pan mix up well and put in what ever you want to keep it in . Oh not high heat you want low heat. I do the same with maple syrup too. If you don't want to use corn syrup make one with sugar . Yes it was Dandelion Syrup. made with water, sugar , dandelions flowers .

    //I lived on rations for just two weeks and it was the tiny amounnt of cheese and tea I found difficult. I stared at the 2oz piece of cheese for three days in horror, not daring to touch it. Of course back then you could drink all the tea you liked in canteens and cafes to supplement the measly 2oz you had at home.

    I don't know how common in the uk it was.
    But dandelion syrup is a kind of imitation honey.
    I have made it, it does indeed taste very similar to honey. But of course since dandelions, avoid if you have an allergy or sensitivity to latex.

      @@georgielancaster1356 oh can't remember which one I used. Probably the first that came up on a Google search.
      They are pretty much all the same.
      Pick a bucket of dandelion flowers, discard everything that is not yellow.
      Boil the petals to infuse the water with colour and aroma.
      Strain to get rid of the spent petals
      Add a massive amount of sugar to the dandelion infused liquid and simmer until syrupy.
      (If dandelion syrup don't give results in an English language search, try 'vegan honey' as your search term)

      Thanks for the comment 💜 I’ve been so keen to make dandelion honey since I read about it earlier this year. I actually got my friend to pick a whole bunch and freeze them for me (we haven’t been able to catch up yet so I can get them). In the meantime, I am going to experiment and try making some parsley honey. I’m so intrigued about your comment about being sensitive to latex though - is there a correlation with that and dandelions?!

      @@thekitchenscrap You know that white viscose sap in dandelions that gives hard to shift stains when you pick them. The chemical composition of it is not so dissimilar to latex. So anyone who for instance gets contact dermatitis from wearing rubber gloves should never consume anything with dandelions in it.
      Cause yeah, that's an allergic reaction and it gets worse if you ingest what you are reacting to.

    Keep your dried milk in the freezer! We had Camp coffee up into the early 60s. My gran liked it. Then Nescafé came into fashion.
    Dry your used tea leaves and use them again but double the amount!

    That Rainbow Dhansak looks INCREDIBLE! I wish you'd put the recipe in the description box! (I must have missed it on Frugal Jo's channel - how much I miss her!) Never mind, I shall watch it again and take down the details. I must try it. But that's not the main takeaway from this video..
    It's so admirable that you're living on wartime rations for a whole year. That will give you a realistic idea of how hard it was for wartime cooks, and I really don't think the occasional "off plan" meal is going to make a difference, except possibly to remind you how lucky we are with access to coconut milk and lots of spices for our curries!

    Really interesting challenge. My late mum was born in 1939 in a poor urban family so lived on rations until she was 15/16. She always said that dripping on bread and jam on bread were the staples in my grandparent's house. It sounded very difficult especially since back then it was apparently normal for the boys in the family (even though they wre younger) to get all the meat and eggs! While she was poor throughout her life she would never scrimp on food later - definitely growing up with food insecurity and often hunger had an impact on her and that generation .
    Edit: that rainbow dhansak looks incredible and will be making it this week!

      Thanks Laura! 💜 That doesn’t seem fair at all that the boys got all the meat and eggs!! I think most of that generation had some form of lingering food insecurity. I will always remember the tremendous amounts of food my grandparents served when we visited, always encouraging us to ‘eat…EAT!’ Even though we were already stuffed. They never wanted anyone to feel the hunger they endured. I’m excited you’re going to try the rainbow dhansak! Do let me know how you get on! X

      @@thekitchenscrap OMG that recipe feels like sacred knowledge passed down 😆 Thank you! Such an amazing tonic. I've been run down too and feeling the need to eat lots of veggies so I made it yesterday and will be eating it or a while (it's a LOT of food). It's so good. Couldn't get red cabbage so used sweetheart (the pointy white one), missed the carrots, used fresh ginger and fresh green chilli to up the heat. This will be in rotation. Cheers!

    This recipe looked glorious on all fronts and hit all my favourites. Loved half the jar of ginger and garlic 😋 I didn't hear you mention coffee though. The one time I gave it up, I went to the doctor's ill and I never go. I thought I've got a virus. Doctors said it was withdrawal symptoms - very embarrassing.
    I'm glad you are feeling better. I remember you having a good immune system.
    I was wondering if you got blood work's which would be interesting to compare.
    I'm going to look for a written form of the recipe .. I'm not sure if you have a cook book / list

      Thanks Sarah! 💜 The rainbow dhansak recipe is just from memory at this stage (as I make it so often) but a few people have asked for it so I’ll pop it into the description or as a pinned comment this evening 😊 Omg withdrawal symptoms can play havoc with the body! Nothing to be embarrassed about though! I actually regret not getting blood work done prior to starting this challenge, I did consider it so I could do a before/after analysis but never got around to it in the end

    Might find that after a year of no coffee you may not enjoy it as much when you go back. it's such a different flavor from tea

    You've done well. It will be interesting to see what you keep up or stop doing from your year. Hope you don't go back to take outs the amount of money your not spending is great. I was speaking to my Mum about war rations etc and she said that occasionally they would eat out and sometimes there were things off the ration ie black market and a lot of people kept poultry but they couldn't eat theirs as too cruel...they clearly were not starving.
    When times get tough just ask yourself...what would Frugal Jo do... Bad luck with the C, it's deffo doing the rounds again

      Thanks Michael! 😊 There are definitely a lot of practical lessons learned from this challenge that I will carry into the future and incorporate into my daily life. People were certainly encouraged to keep chickens during the war, mainly for their eggs, but (and I am totally guilty of this too), I’ve always found it interesting how removed we are from the realities of eating meat when it comes neatly packaged for us at the supermarket and is so freely available whereas if we had to slaughter/prepare the animal ourselves, I dare say there would be far more vegetarians walking the earth! I know I’d DEFINITELY struggle, especially after taking care of the animal prior. That being said, I know a lot of homesteaders are able to do it and I totally respect them for it as they know the animal has had a good, healthy life. Unfortunately the same can’t be said for a lot of the meat-producing industries.

      @@thekitchenscrap I'm on a modified WW2 rations at the moment. After 10 months strictly on it last year before other things began to creep in I just couldn't face another full year of full on rationing. I have my Saturdays as off ration and I allow myself a couple of cups of coffee each morning I have at work from the works canteen! LOL! Well done you xxxx

      @@1940sExperiment I think that’s a marvellous approach! You’ve done so well! 💪 I’ve often pondered whether I could do another full year of this and the honest answer is - no! That being said, I will definitely carry a lot of the wisdom from the age (and favourite recipes) into the future with me. Perhaps there will be weekly/monthly challenges instead, otherwise - there are just too many ingredients I miss using!

      Haha I actually started making my own towards the end of last year because all the pizza places around me charge a fortune for what can only be described, at best, as mediocre pizza. Once I realised I could make double the amount myself for a third of the cost, I was converted

      Perfect Pizza Dough
      1 cup warm water
      1T sugar
      1/4 oz yeast (about 1-1/4 t)
      3 T olive oil
      1 t salt
      2-1/2 c all-purpose flour
      To water add sugar and yeast. Wait 1 minute, then stir. Rest 10 minutes. Add remaining ingredients. Mix well and knead 10 minutes. Oil the ball, cover, let rise until doubled. About 1-1/2 hours. Makes 2
      If I gave up coffee, which I’m not willing to consider, I would save absolutely nothing because my son is a barista part-time and he gets a half a pound of free grounds every week. In addition, my friends know I drink coffee and give me flavored coffees for gifts. I take it black. It’s essentially free, although sometimes I do like to add spices to it.
      I can’t believe you gave up coffee, Jake. I must sit and contemplate whether you’re “my people” now or not. Jk/😉

    next time you are feeling under the weather FISH eat loads of seafood! when i was a child we lived in Florida and ate seafood all the time and i NEVER got sick, while i did get the normal childhood things like chicken pox ect they never stayed in me any longer then 24 hours! even today at 70 i never get sick or even catch colds! sea weed if you cannot get fresh seafood! thats great in soups

    Thank you.. I am going to try the curry today. I swapped my cafe $40 per week habit to making coffee at home which costs $2.90 for Aldi barista almond milk X 1.5 per week ($226.20 pa) and a bag of coffee shop beans at $42 which last nearly 3 months. ($168 pa) $394.20 a year A whopping saving of $1,686 per year.

    The coffee essence mentioned in the recipe was probably actual Camp brand coffee liquid. In most recipes from the early part of the 20th century up until the 70s unless it specifies 'x amount of strong brewed coffee' and mentions essence instead it will be Camp Coffee - i still use it for my coffee and walnut cake.

    You coffee savings cost is inaccurate. You neglected to deduct the cost of your replacements- the tea and the coffee substitute.

    why can't you use garlic anymore? couldn't the british have grown that in their own backyards during the war?

      Garlic wasn’t common back then, it didn’t really start becoming popular until the mid-to-late 50’s once the rationing period was over and ‘Mediterranean’ style cooking/recipes became fashionable. That being said, some people could and did grow garlic - but due to how long it took, most didn’t and faster growing crops were preferred. In all the wartime cookbooks I have, garlic is only mentioned once! Which is a shame because I absolutely adore it 😋

      If you go to the channel's home page, you'll see the Community tab. Tap it, and his posts are there in reverse chronological order. Perhaps you are not subscribed to all his posts?
