Okay so i wanted to share something.. Based on my past experiences i just knew that the amount of sugar used in this recipe would be too much for me.. and that ratio of brown sugar would make my cookies soft (maybe because i live in such a humid country) which i DESPISE so i tweaked the sugar amount a bit to: 125g of white sugar 40g of brown sugar AND IT TURNED OUT SO GOOD!!! So crispy yet the sweetness is bearable. makes me less guilty eating these Ahahah
This was a really good recipe!! I have tried two chocolate chip cookies recipe already but those were too soft for my family's liking. The ones I bake weren't really thin like yours but it sure was crispy. I also followed other suggestions to lessen the sugar. Mine actually needed more time in the oven in order for it to have the burnt edges. I actually thought it wouldn't be crispy since it puffed up when it was still in the oven but when it cooled it down it was all great. Thank you for such a nice recipe. These were so delectable🤤. I would definitely recommend this recipe. The cookies were a bit too sweet for me but overall they were amazing. Don't worry if you don't have a stand mixer with a paddle attachment. You can use a hand mixer with a whisk attachment which works the same, because that's what I used. Loved it! Worth a try. Tasted just like the cookies of Cookie Man. 🍫🍪
Okay just tried this! Omg it's soooo good. It's cwispy and tastyyy and yummmmmm. I tweaked it by the recommendation by adding 125g white and 45g sugar. It's delicious. Although I reduced vanilla and add salt. It's awesome. Thanks

Looks delicious. I definitely prefer the thin, crispy all the way through yet melt in your mouth buttery sweet chocolate chip cookies that aren’t chewy or cakey at all, and this looks perfect! Just wondering though, should I wait until the cookies are fully at room temp before taking them off the parchment paper/baking sheet? I figured doing it too early will probably break the cookies as they aren’t set up and fully hard and crispy yet, but I was hoping I don’t have to wait 2-3 hours for the baking sheets to be available again to get the next batches in the oven.....
Chef, did you use a Combi oven or Fan assisted oven ? Mine didn't brown enough, with 15 minutes...so I kept cooking till they were a little more than blond. However after cooling the cookies....oh la la ! Crispy and so delicious! And following @Ash Burn's advice I too reduced the brown sugar and added sea salt !
Bake this last week, and it is super crunchy like what I wish for. The sugar I use is based on the suggested sugar reduction below with an additional 5g reduction for each (this is just my own preference). As for my oven timing, it took like 25mins to be brown with the same heat plus fan. I think i use the same size ice cream scoop, but it doesn't turn out a perfect shape and flat as Kosher Chef and my one is with a little puffy. Overall, the cookies are so yummy, and most importantly is the crunchinessssss. Thank you chef for sharing and my daughter love it so much

It would be very helpful if you'd mount your camera on a stand and give us an angle such that we can see the inside of the mixer...it helps to be able to see the dough texture as it's being made so we are able to follow the recipe correctly.

Tried these cookies.. baked them in OTG wd convention fan at 170⁰ for 35mins with both upper and bottom elements on . It turned brown and crispy from the edges and after its totally cooled down, it becomes bit soggy later. Please advise what to do bout this being soggy

I tried it but it wasn't crispy it became the regular ones. But I had no special spoon so I used some other spoon might be wrong amount and if that does impact it I am sorry.

My experience- they became tastier the Longer I kept the dough frozen. I already made 3 batches. Have enough dough for one more ❤️

It is no problem to remove them from the baking pan after 4 to 5 minutes gently .

I use a simple home oven, every baking oven a little different, for baking one minute or more, need to put attention

In my video I said to use 160 Celsius for a maximum of 15 minutes. Is there any other step you changed that might result in the sogginess?

just took them out the oven now and wth, it was so crumbly. 50% of the cookie literally crumbled off 😕 what happened
Did you try picking them straight out of the oven? They need to cool off completely.
