- Every year our church has a men’s chili cook off and my boys and husband make a chili hoping to be The Champion Chili Chef!
My husband, Luke commented the other day that he’s never won or even placed in the top three with his chili, but he seriously makes a really nice chili, but we normally have anywhere from 10 to 14 chilies that the men of our church make. But Noah and Joshua have actually placed every single year and we’ve been doing this probably , with prizes maybe the last five years but we’ve been doing this forever.
My husband and boys did a great job on their chili and I wanted to share the recipe with you. Josh, he was so excited to wear a chef hat and apron while he made his chili this year, he placed I think second last year and so he kept everything he got to use for this year’s chili cook off
Here is my husband, Luke’s Dump & Go Chili Recipe:

He soaked his pork butt in a salt brine for about 3 to 4 hours, then put it into a crockpot with some garlic and cooked it on low for about 2 to 4 hours.
He prepped his chili first, and here are the ingredients:
Two large cans of tomato sauce
One can of diced tomatoes
One can of mixed chili beans
One large can a bushes baked beans
4 tablespoons of chili seasoning
2 cups of diced potatoes
Directions: combine all those ingredients into a sauce pot and simmer on low until cooked through. When the pork is done, shredded and add it to the pot and simmer for another 40 minutes on low.
Here is Noah & Derricks Steak Corn Chili Recipe:
2 pounds of steak, cubed
Two onions, chopped
One stick of butter
Two cans of mix chili beans
One large can of tomato sauce
Two cans of fire, roasted garlic tomatoes
4 tablespoons of chili powder
1 tablespoon of dried cilantro
2 tablespoons of garlic
1 tablespoon of cumin
One cup of salsa
Three cans of corn, drained
2 tablespoons of paprika
1 tablespoon of kosher salt
2 tablespoons of chili seasoning
Directions: into a skillet, combine steak, onions, and butter, and cook for about 10 minutes. To the sauce pot combine the beans, tomatoes, corn, salsa, 2 tablespoons of the chili powder, and paprika.
Once the steak is almost done, you’re going to add 2 tablespoons of chili powder, cilantro, garlic, cumin, and salt.
Combine that with your chili mixture and simmer on low for about an hour.
Here is Joshua’s Taco Chili Recipe:
One stick of butter
2 tablespoons of minced onion
2 tablespoons of garlic
4 cups of chopped celery
Two large onions, chopped
6 cups of steak, cubed
One container of beef broth,
One large can of crushed tomatoes
One large can of tomato purée,
Two cans of fire, roasted garlic, tomatoes,
Two cans of green chilies,
One can of tomato paste
One can of Charro beans
Two cans of southwestern, corn, drained
Four cans of black beans, drained 
1 tablespoon of white pepper
4 tablespoons of chili powder, 
Directions: into a skillet, combine the butter, minced onion, garlic, celery, chopped onions, and a little bit of beef broth. Cook on medium heat for about 15 minutes until the veggies are tender. Then into a sauce pot, combine the tomatoes, green chilies, beans, corn, 2 tablespoons of the chili powder and simmer on low for about 40 minutes. Once the veggies are tender. Add your steak and cook for about 10 minutes then add the white pepper and 2 tablespoons of your chili powder. Continue cooking for another five minutes and add it to your chili mix and simmer low for about 30 minutes. We like to serve it with sour cream, fresh cilantro, and salsa.

Honestly… Josh is my absolute FAVORITE!! He is so 22:35 sincerely trying so hard.. so serious and trying so hard. I love his innocence and strength! He has and will always be my heart! Heather & Luke… YOU have taken this precious baby and made him into such an independent, successful young man! I love how he loves everyone in his family and feels a part of the family as he should!!

We host a chili cook off at our house every October. This past year we had 72 people and I think 24 pots of chili!! We've had some very unusual chili including chili balls & alligator chili!! Stakes are high at this cook off ~ think outside the box!! We've learned spicy never does well, venison never does well & white chicken chili rarely does well.
We've done ours 10 years now, started for my husbands 40th birthday. It's so fun!
Mama helping everyone navigate the kitchen was precious ❤ just a mama teachin her kids to cook with love.

I love your family! You love your hubby and kids so much which shows in all that you do! I sometimes wish that your kids could just do things their own way. Input and guidance are important for safety but creativity and independence is also important. Rushing, telling and doing can hamper. As long as they're safe let them stir, add ingredients themselves. You're a fabulous Mom!! Let them ask....let them learn...😊

When I introduced chili to my family in Ireland. I had a hard time finding ingredients and seasonings. I used "Curry Powder" (instead of chilli🍲 powder) and cannelloni beans, a bit of molasses. And the best part: chopped onions 🧅 and bell peppers 🫑 frozen then turned to snowcone consistency in a food processor and added to ground pork🍖 and ground beef 🥩 combo. Tomato 🍅 sauce and soup both. 😋 🤤 Crockpots are the best 🌞

Easy way to softener your vegetables when sauteing is to cook on medium heat with butter pan covered and stir. No liquid. It slows down the softening action of the vegetables.
