哇~來到熱鬧不已的市場
以前都會吵著媽媽吃這一道小吃
就是我們的「赤肉羹」
通常這種肉羹店一開就是幾十年
那個充滿香氣的滋味啊~
時不時就想嚐嚐
今天我們就來在家做做看
在傳統市場吃到的「赤肉羹」吧
-
(今日份量: 肉10份/湯10份)
🥣需要準備的材料🥣
【赤肉羹】
👉後腿肉絲 700克
👉醬油 3大匙
👉蠔油 2大匙
👉鹽巴 1(⅛小匙)
👉胡椒 1(¼小匙)
👉油蔥酥 25克
👉糖 1(¼小匙)
👉樹薯粉 140克
👉水 100毫升

【羹湯】
👉水 1500毫升
👉蛋 2顆
👉柴魚 7克
👉筍絲 300克
👉紅蘿蔔 100克
👉鹽巴 1小匙
👉胡椒 1(¼小匙)
👉醬油 2大匙
👉乾香菇 7朵
👉油蔥酥 25克
👉樹薯粉 適量

⚠️簡單哥小提醒⚠️
1大匙 = 1湯匙 = 15ml
1小匙 = 1茶匙 = 5ml
1T(bsp)=15ml
1t(sp)=5ml

🥣備料🥣
①將乾香菇泡水備用
②將兩顆蛋攪拌均勻
③將紅蘿蔔先切成片後,再切成絲
④將筍子切成片後,再切成絲
⑤將香菇水份擠乾後,再切成絲
⑥去掉豬肉的筋膜後,切成片,再切成條

🥘開始簡單製作🥘
【肉羹製作】
①豬肉醃入醬油(一半)、蠔油、油蔥酥(一半)鹽巴、胡椒、糖、水(100毫升)拌勻
②批次加入地瓜粉攪拌均勻裹上肉
③熱一鍋約80度的水,慢慢一條條加入肉羹
④轉小火慢煮三分鐘後,將肉羹撈起,原湯要留著備用

【羹湯製作】
①熱鍋下油,加入乾香菇爆香後,加入紅蘿蔔拌炒
②加入筍絲拌炒後加入醬油,再加入原湯
③滾後可撈除浮沫,加入鹽巴、白胡椒、油蔥酥(一半)調味
④樹薯粉加入水,當勾芡水用
⑤加入樹薯粉水勾芡後,放入赤肉羹攪拌
⑥關火後加入蛋液拌勻,再開火灑上柴魚即可

🥣Ingredients🥣
【Pork】
👉Shredded pork leg 700g
👉Soy sauce 3T
👉Oyster sauce 2T
👉Salt 1(⅛t)
👉Pepper 1(¼t)
👉Fried garlic 25g
👉Sugar 1(¼t)
👉Tapioca Flour 140g
👉Water 100ml

【Thick Soup】
👉Water 1500ml
👉Egg 2 pcs
👉Dried bonito 7g
👉Bamboo shoots 300g
👉Carrot 100g
👉Salt 1t
👉Pepper 1(¼t)
👉Soy sauce 2T
👉Dried shiitake mushrooms 7 whopping
👉Fried garlic 25g
👉Tapioca Flour Q.S.

⚠️Notice⚠️
1T(bsp)=15ml
1t(sp)=5ml

🥣Prepare ingredients🥣
(1) Soak the dried shiitake mushrooms in water and set aside
(2) Stir the two eggs well
(3) Slice the carrot firstly, then cut into shreds
(4) Slice the bamboo shoot firstly, then cut them into shreds
(5) Squeeze the water of shiitake mushrooms out, then cut into shreds
(6) After removing the fascia of the pork, cut into slices and then cut into shreds

🥘 Cook 🥘
【Meat Making】
①Marinate the pork in soy sauce (half), oyster sauce, fried garlic (half), salt, pepper, sugar, water (100ml) and mix well
②Batch the tapioca starch then stir evenly to coat the meat
③Preheat a pot of water at about 80 degrees, and slowly add the meat in the soup one by one
④ Turn to low heat and simmer for three minutes, then pick up the pork, keep the original soup then set aside

【Thick Soup Making】
① Preheat the pan then add oil, saute the dried shiitake mushrooms firstly, then add shredded carrot.
②Stir fry the bamboo shoot firstly, add soy sauce, then add the original soup
③After boiling, remove the floating foam, then seasoning with salt, white pepper and fried garlic (half)
④Add water to tapioca flour and use it to thicken the water
⑤After combine tapioca flour and water, then mix well in the pork thick soup
⑥After turn off the heat mix well with beat eggs, then turn on the heat and sprinkle with dried bonito

Can be stored in a vacuum freezer in a freezer bag
