Eric That amount of pork would last me the rest of my life. LOL remember the rule never cook when you are very hungry. LOL
I just set my smoker at 180 for like 12 hours. And they are good to go
Curious why you didn't rotate meat from top positions to bottom positions to balance out the cook midway? Same as baking multiple pans in a conventional oven. Of course meat closer to heat source is going to cook faster.
tell me, when making a sausage/salami, is it possible to substitute some of the animal fat with a vegetable fat (eg. avocado oil, coconut butter) if you feel some of these other fats are healthier? (Note: I didn't say substitute all of the animal fat, just some of it) Could this be done with a suitably cool process?
You can but you have to incorporate it with a binder like soy protein concentrate.

What do you use for smoke?
For this cook I used a combination of pecan and hickory wood
I was going to ask the same question cuz you didn't mention it in the video but that sounds like a great combo
