Dr. Greger, would u kindly update this video by including steaming in your study. According to recent laboratory results, steaming method retains the highest level of nutrients in most vegetables.
Good to know that boiling, apparently the 'worst' method, only reduced the antioxidant content by a small amount. Much smaller than I thought. I happen to save and eat the veggie broth alongside my vegetables when I cook them, so with the water sapping up those lost antioxidants, I feel less bad about boiling. :)
I never discard the cooking water. I even drink the potato water, as if it were a tea, or I save it and use it as a vegetable broth for soups. I've even saved the water from cooking pasta on occasion, usually if it's from whole-wheat pasta. If I were to discard the water, I would feel like I was being cheated out of the vitamins and minerals that were lost in it.
When I boil my veggies is always for soup. I always use that water due to the nutrient loss. I also love to steam my food. Thank you for sharing this useful information, Dr. Greger! It's good to know.
Regarding boiling: What if you drink the cooking water? What if the cooking water is part of the end product as in soup?

I think nutrients get damaged by heat, so drinking the water is useless.

I am a chemist, so let me tell you. Yes, if you boil the vegetables and then drink the water you Will still get the nutrients.
Boil anything you want, just keep the water for soups or just drink it.
Yea this study is lacking this important information. Must be on the same level as other methods.

How about steaming?
I honestly listen to Dr. Greger daily. What began with 'species equality' has morphed nto veganism. (I didn't eat an apricot until I was 35). Now, 30 years later, I have become familiar with the 'secrets' of plant based nutrition. I can only hope that these 'secrets' will go mainstream. Why is the amount of antioxidants preserved the parameter to measure the best method? Aren't there other nutrients that are also affected by the cooking method?
Dr Greger, I'm confused with all the conflicting studies saying microwave cooking is "bad" and destroys nutrients, are there any more peer reviewed science studies to look at into how microwave cooking affects foods on a molecular level? Thanks.
I boil veg and keep the water. This water is the vegetable broth eye use for many things, such as miso soup. Matzoh ball soup, gnocchi in brodo, kasha, etc. sometimes I will drink the cooled veg water. Never throw it away.
Boiling and pressure cooking are fine... just consume the water.
Cant tell if this is trolling but studies show consuming the water doesnt get you all the nutrients still
I steam my vegetables, and then use the water to soak & cook my navy beans. No nutrients lost, just deferred to the beans. And no waste of flavorful water.

I wonder if you could include dehydrating in this comparison, and also compare levels of some dietarily significant enzymes as well as the antioxidant levels. I heard pressure cooking reduces anti nutrients in beans. But rinsing and soaking overnight probably is enough.

You need to compare a pressure cooking (and consuming the liquids in it) vs. the others. Yes, of course, if you just remove the vegetables out of the liquid, then nutrients will be lost. But the whole point of the pressure cooker is to prevent anything coming out of it, losing nutrients to vapor as well, and keep it together. With all of that, if you consume everything in it, including the liquids, your going to retain more nutrients that if you pull the vegetables out of water.
Yah, if I microwave vegetables in water, and then take the vegetables out of the water and eat it, I'm going to loose nutrients too...

It's okay, it's okay. Bell pepper is not the main resource of antioxidants and this study is only about antioxidants
I've been told that the same type of vegetables grown in the same field at the same time can have different nutrition levels.

Thank you this is good to know, but what about enzymes? Garlic for example is highly degraded by heat.
i'll make my carrot, celery, black bean, red cabbage, kale, red onion, tumeric, black pepper, cumin and whatever else i can find soup tomorrow.

Dr. Greger, if you "steam" your vegetables in a pressure cooker (ie, veggies not soaked in boiling water), wouldn't that retain most of the nutrients like microwaving does? I would imagine that steaming veggies in a pressure cooker would be healthier than microwaving since microwaves are notorious at producing microscopic burnt spots on foods, whereas steaming in a pressure cooker creates no such phenomenon.
Remember that antioxidants aren’t everything. There are other phytonutrients and many other things like fibre vitamins minerals etc. Most likely raw is always healthiest. But I also like what he said in the video that the best cooking method is the one that gets us eating the most vegetables :-)
Boiling reduces it in the florets themselves, but wouldn't the losses be substantially less if you drank the cooking liquid too, as you would with soup?

Pressure cooking. Cooks fastest, shortest time. Preserves most nutritons. Reason why japanese/korean are so healthy because they eat a lot of soy, sea vegetables and pressure cook almost everything.

I always boil the broccoli in very little water, which I drink afterwards. Does that make up for the loss of nutrients and antioxidants?

The study doesn't include sous vide-- and since it is a 'dry' and air-tight method with the most accurate and reliable cooking times; wouldn't it be a better method than microwaving?

Microwaving might be OK for preserving antioxidants but it kills most of the enzymes,so this is misleading,making microwaving out to look good.
Cooking in general damages enzymes at fairly high rates.
Where's steaming? Why would they not study this. Also what is in the cooking water??? If making a soup or stew do the antioxidants transfer to the water??

I have read that steaming is the best, no vitamins lost with water, then pressure cooking is second.
Also, microwave is not only bad for the food; but it's also dangerous for you because of the radiation that may come out of it while you're waiting next to it :)

Just because something radiates something, doesn't necessarily mean what it is emitting is bad. Microwaves can be bad for us. they can burn, but 1 make sure your microwave door is closed, and 2 don't stand in front of it just in case, and you will be fine.

How come you did not include steaming? If all you're checking is antioxidant power, then you may have some facts; but you're missing all of the side effects that using a microwave causes to foods. As a Doctor, you should be ashamed of yourself for advocating this kind of food preparation to people!!!!

Microwave ovens produce radiolytic compounds, which was shown to be dangerous. A woman in OK is suing after a bd blood transfusion in which the blood was altered. These devices are known to leak are in generally just not a good method to cooking food. However our good Dr. here is only looking at the nutrition aspect and perhaps missing the bigger picture.

Microwave ovens don't use nuclear radiation. It's invisible light. Weaker than infrared, stronger than radio waves. WiFi and Bluetooth use microwaves.

Nuclear radiation comes from unstable atoms. Alpha particles, beta particles, and gamma rays. Most light is not *nuclear* radiation. Microwaves certainly aren't.
Electromagnetic radiation can come from something as harmless as electrons changing energy states. These are physical differences, not silly distinctions based on terminology.
So while light, which I've said from the beginning was electromagnetic *radiation*, is a form of radiation, microwaves are not *nuclear* radiation.
