Materials -
* 2 batches of velvet cake, divided into 6 parts. Each part has 2 tsp of food colour, except the purple, which needed only one. Colors are red, orange, yellow, green, blue and purple liquid food color.
I made 6 layers in a 7" round size
* Cream cheese recipe - I added an extra 50% more icing sugar to stiffen it up
* 6" and 7" cake plates
* 8 round cake board
* 100's and 1000's
* fondant in red (Americolor Super Red), orange (Americolor Electric Orange), yellow (Americolor Lemon Yellow), Green (Americolor Mint Green), blue (Americolor Electric Blue), and purple (Americolor Electric Purple and Regal Purple)
* white fondant
* Exacto/ craft knife
* pizza cutter
* toothpicks
* tylose/ CMC
* blue floral mat
gold chocolate coins
* sugar glue

Love it! When I made a sprinkles cake, I wasn't sure about picking the cake up and putting it in the sprinkles so I got a large roasting dish, put a cooling rack over top, put my cake on that, then just used big handfuls of sprinkles and starting at the bottom, moved my hand up the cake until it was all covered, then I just brushed all the excess sprinkles off. The roasting dish caught all the sprinkles so clean up was easy peasy.
@marie ibrahim, The day before is fine, and then, being cream cheese, it goes in the fridge. When you get it out, pop the decorations on top.

Hi. love this video. I tried making this cake but I couldn't get my colours bright enough. my yellow turned out more dark gold than yellow, because of the cocoa powder. How did you get yours so vibrant?
@cakestyle how did you avoid the layers of your cake slipping before rolling in the sprinkles? Did you place in the fridge beforehand?

Interesting!..its first for me watching rainbow velvet cake. Very interested on the recipe and method cos this ones turned out neat. Wats the texture like? Whats the approximate weight of each layer or the whole cake jz cake n frosting alone? I hv been wanting to make a rainbow cake for some time and was waiting to land on the right recipe. This could ultimately be it. I am going to watch Chef Marcel's video. Thanks for the collab guys!
SanctuaryHut You're welcome. It's a light fluffy cake, but with 6 layers, it is a touch heavy. I love that I could make a yellow layer, and it turned out beautiful and golden.

+Britz Osborne No, this is so light and fluffy. Otherwise, yes, 6 layers would have a dowel and board support halfway through.
Can I use gum arabic as a substitute for tylose?
I'm gonna try to make this for my nephew's birthday. I wanted to do maybe smaller cakes on top....I guess could call it another tier. But I wanted to know how to stack them if I couldn't find any dowels

Hi again Vanessa..i would love to use this recipe for an 8 inch 2 layered red velvet cake. 1.Would one batch measurement (24 cupcakes) be sufficient to bake in 2 x 8 inch round tins or in one tin and slice to two layers? Or one and a half batch be better?
2.What temperature and timing should i use? 3.Will it be ok to use apple cider vinegar instead of white distilled?

SanctuaryHut I would probably use 1 1/2 batches. Same temp, I love apple cider, but I'm not sure, as it does have a strong flavour. I make 6" and 7" as 3 layers, but I would probably add a half a batch for the 8". Don't be sorry, that's what I"m here for xo
