Red Peppers Stuffed with Rice - vegan recipe from Bulgaria

    Rice stuffed peppers are very popular in Bulgarian cuisine.
    There are dozens of recipes with mushrooms, potatoes etc. This is one of the most popular.
    For 4 servings:
    1 onion - 80g.
    2 carrots - 120 gr.
    6 tablespoons sunflower oil (olive)
    250 gr. of rice
    250 gr. tomato puree - (3-4 fresh - finely chopped)
    6-7 sprigs of parsley (1 teaspoon dry)
    1-2 teaspoons of salt
    1 teaspoon savory (thyme + oregano)
    12-15 pcs medium bell peppers (1200 kg)
    5 tablespoons tomato puree to spread the peppers
    Preparation method
    1. Cut the onion into small pieces and the carrots into small cubes.
    2. Heat the oil and fry the vegetables over medium heat for 1-2 minutes.
    3. Wash the rice well with water and add it to the vegetables. Fry over medium heat until "glassy" for about 2-3 minutes.
    4. Add the tomatoes to the rice and cook for about a minute. Add 200-250 ml. of hot water, over low heat let the rice absorb the water.
    5. The parsley is cut into small pieces and put in the pan, salt and season with savory.
    6. Prick the peppers in two or three places with a fork.
    7. Sprinkle each pepper with a pinch of salt inside.
    8. Fill the peppers with rice.
    9. Arrange them on a greased tray. Pour in some hot water.
    10. Spread the peppers with 5 tablespoons. tomato puree.
    11. Drizzle with a few tablespoons of oil and a little salt.
    12. The dish is baked at 180 ° for 45 minutes in a preheated oven.
    13. Serve with yogurt.
