I worked as a caregiver some years ago. One of my most memerable client was a Filipino lady who introduced me to this dish. She gave me her recipe. I shared that chicken with an old Pennsylvania Dutch client who said, ‘it is the Best chicken I’ve ever had!’ He was 103 years old. I had to agree with him.

As a Southern American, this is the top 3 in comfort food for me (outside of American cuisine). Another dish I was surprised by was Indian, Moringa Drumstick with tomatoes was way better than our native Southern Okra and tomatoes.

Chicken Adobo is a Comfort Food... you can just cook it and put it the refrigerator then reheat when your gonna eat again... you can make it slightly sour or sweet -or spicy or salty or even garlicky and Kudos for Chef Darren ...

My Nanay ( Filipino for Mum) , cooks her adobo the same way, minus onions, just pleanty of garlic and whole black pepper, and it’s soooo delicious ! I will try putting onions next time I make adobo to taste the difference 🥰. Happy New year.
Yes lots of garlic I'm a Filipino too and garnishing with green onions makes it complete, sometimes we cut some tomatoes and or cucumbers and place it on the side of the place.God bless you chef
Very well done! As a Filipino, this is legit and has my seal of approval 👌 The marination, plenty of garlic, vinegar and added sugar (to balance out the saltiness from the soy sauce), well executed! An inexpensive and easy to cook dish. Definitely much more flavoursome than just grilled chicken.
Type of soy sauce and vinegar will make a big difference in taste. We use cane vinegar, not the chemical white vinegar, and locally made soy sauce, not "kikoman"😊
The type of soy sauce of vinegar doesn't matter. You can use any. Actually the oldest recioe use vinegar and salt, no soy sauce. There is so many variation of adobo and the dish is really up to your preference.
the good thing about this dish is that there is so much variants that you cant really claim if it's authentic or not. Also you can mix and swap ingredients and you'd probably hit a regional or even family variant easily

I once tried chicken Adobo in a meal kit and found it too sweet for my liking. Hearing all the influences and the history of this dish I came going to try this. I suspect your recipe will be much more tasty. Thank you.
There are at least a hundred ways in making adobo, and you can adjust it accordingly. If you don’t like sweet, you can remove the sugar, the honey, or the pineapple juice or sprite (yes, they make use of these in several versions). If you don’t want it too salty, remove the soy sauce (then it turns into adobong puti). Some may add coconut milk (adobo sa gata). You can ise whatever meat you have. Chicken, pork, beef, lamb, goat, horse, squid, alligator (yes, I’ve tried some!), kangaroo, camel… any meats or even just veggies only! But one thing will never be gone that is the most important ingredient: vinegar. Doesn’t matter which kind of vinegar, (but they would taste slightly different, depends on the variation).

I am Filipino, any part of the chicken will do not only the thighs. We do pork, beef, squid, veggie, adobo also. My mom loves chicken feet adobo, rich in collagen.
That's a very nice adobo. Please try what we Filipinos call "adobong matanda (day-old-twice cooked adobo)". Cook pork (skin on) that's cut into bite-sized pieces using your process, but longer (until almost all the liquid has been reduced). Put everything (including the oil) into a bowl and put it in the fridge and let it rest overnight. The next day, heat up everything, including the solidified oil. Serve the same way you did the chicken adobo. Some people say combining the two meats (chicken and pork) makes for a better version, but I think chicken and pork don't taste good together.

Hi Darren! Your adobo is authentic though we Filipinos have different versions. My Aussie partner actually loves Lamb adobo, you should try it. So delicious!
This is exactly how my Mom makes her adobo. She sometimes add potatoes, and egg on it too, and we also use pork instead of chicken or sometimes mix the two meats together. She also made adobo with pineapples, and one with coconut milk/any milk, and it tasted good. Adobo is really a versatile dish, you can customize it to your preference. I also add chilis sometimes for a kick.
Adobo originated from Malaysia? That’s not what food historians say and many Malaysians will be amazed to hear that. Anyway, as Filipino executive who led a business in Malaysia for several years, I remember that the three most requested food by my Malaysian team that our home cook in Manila prepared for me to take back to the team were Adobo, daing na bangus and ‘Laing’. It shouldn't be sweet. If sugar is used, it's only because the cook added too much vinegar and needed a bit to rebalance the flavor.
