They've probably learned that most things given to them by humans are food so they try it. It also doesn't smell like poop or anything else they'd know so tasting it could just be part of figuring out what it could be? Idk

It's fake. It's just plastic. They don't know it's supposed to be poop just by appearance alone. IF it smelt bad too, they'd try to cover it. My cats used to try and cover stuff that smelled badly enough XD
