HELLA CRISPY OVEN CHIPS

  • You don’t need a deep fryer for extremely crispy chips or fries. These oven chips and wedges are super delicious and really satisfying to make. It’s actually a recipe I’ve stolen from my brother, so thanks, Mike😉

    INGREDIENTS:
    Potatoes - I generally do 2 per person. It also depends how big your oven tray is, because you want to space them out really well.
    3 generous pinches of salt
    1 Tbsp White vinegar
    Salt
    METHOD:
    Preheat your oven to 200°C (400°F) and bring a large pot of water to the boil. If you’re making chips or fries - peel the potatoes and cut them into 1cm chips. If you are making wedges, no need to peel them. Cut the potatoes into wedges (watch video for the technique).
    Once the water has come to the boil, add the salt, vinegar and potatoes to the pot. Bring the water back up to the boil and cook the potatoes for 5 minutes. To check if the potatoes are ready, prod them with a knife. The potatoes should be semi soft, but still give some resistance.
    Drain the potatoes well and let them dry. I sometimes put them back into the dry pot on the heat to dry them out even more.
    Spread the chips out on a pan. Give them as much space as possible, this will result in crispier chips. Coat the chips in olive oil and put them in the oven for 15-20 minutes. After 15-20 minutes the chips should have some blistering. Flip the chips and put them back in the oven for another 20-30 minutes.
    Once they have reached your desired crispiness, pull them out of the oven and put them in a bowl lined with paper towel. Blot off any excess oil, remove the paper towel and hit them with some salt and whatever extra seasoning you’d like.
    Serve them with burgers or eat an entire bowl alone in a kitchen studio 🙈
