    Big fan of Chef Paul and his Magic Seasonings blends. That's a good one along with the Poultry Magic too. Great video, Tom. That grill is definitely on my short list.

    Yes I liked that crust perfect. This grill is so versatile. I haven’t fired up my pellet grill since I got it. I’ve cooked pork ribs steaks corn on the cob and a spatchcock chicken. Everything has been really good. My grill does a pretty good job retaining charcoal for the next cook. I like at least 500 for the stone temp on pizza.

      The metal peel works good for me I prefer it too the wood. Gets under the pizza easily.

    What does the way you have the cooking grates on have to do with anything?

      Thanks for Watching Paul! Apparently that’s correct configuration for any other Kamado Joe grate accessories. But as far as cooking right now, your right no difference

      The smoke ring on my pork ribs was awesome. I ran 230 to 250 temps. And no burning on the bottom even with a sweeter rub. 2 lbs of charcoal did the entire cook. I’d say the slow roller is no joke.

    Tom, did you notice gaps between the lid and base prior to applying your gasket? I just got one of these and was disappointed to find some sizeable gaps around the seal between lid and base.

      Thanks for watching! At first yes, but once I adjust the hinge they get better and the gasket made them go away. They definitely could do a better manufacturing to get it tighter

    Sharing the B&B charcoal love! I do like them a lot too! My current charcoal love is Jealous Devil charcoal. Huge lump that are great for long cooks!

    Lol... That hotspot test is hilarious. This isn't a pellet grill my man. If there is a hot spot it's due to where your fire is in comparison to the rest of the coal. That's why you mix them up after you start it if you want a leveled temp across the grate, if you care that much that is.

    Tom, I’m considering buying one of these. Do you feel like the gasket has made the grill air tight??
    Also, I seen where the say that 500 is the max temp for the slow roller attachment. But if you remove the deflector plate can you use at higher temps for pizza?? Are they concerned with warping??

      Thanks for Watching Rob! No, I don’t think I got it 100% tight, if I play around enough with the hinge ,,, yes but it’s not always tight, even with the gasket. I tried but couldn’t get the slow roller without the deflector plate above 450. Probably concerned about the plate warping... the slo roller, I doubt it. Good questions! Thanks again for Watching!

      I think you loose more heat being steel instead or porcelain than the gasket will ever correct. I don’t have a gasket and I get a tiny bit of smoke creep at one edge at startup. But I see no need to address a non existent problem. Once it starts to draft there’s no more smoke. And the grill performs great.
      I got mine used was looking for a Weber to grill hot n fast and found a gently used one for $150. I love this thing.

    Hey Tom! Great video! I have a question for you, I haven’t put gaskets on my kettle joe yet but will soon after watching this. I was trying to do a pizza yesterday and couldn’t get passed 370 with the sloroller on. Any suggestions? Will the gaskets be enough? I haven’t trie to go that high with the sloroller yet but I see it can go up to 500, let me know what you think, cheers!

      Thanks for Watching Jay! Vents wide open correct? You can use the bottom to throttle up and down, I ve had mine to 450

      @@TomHorsmanAmateurBBQ vents wide open. I was using kingsford charcoal. It was my first time using it, didn’t feel wet or anything. I believe the only other difference would be the gaskets, do you think it will make that much of a difference?

      You can try, I don’t think the gasket would make that much of a difference. Why not try lump, typically it burns hotter. Just a thought, thanks again for Watching and commenting

    My english isnt that great. You put tape like around the lid to hold the heat better. How do you call that tape? Thank you in advance.

    Wow! Exactly what I was looking for, thanks! Question : what was the gasket that you used (please provide enough details that I can order the exact same one ... especially where you got it from. thanks!)
    My experience with the Kettle Joe has been love/hate : I was very disappointed both in how bad it leaked and how messy it is when whatever moisture mixes with all the carbon on the lid starts dripping all over the driveway. I will not use the Kettle Joe without putting it on cardboard, the mess is that bad.
    The cooks have been very good with the only issue being how it burns the coal so much faster : the real long cooks like pork butt and brisket require constant monitoring and reload on coals ... something I never need in my big joe III. The other obvious problem with the leaking is that it absolutely will not stop the coals - so whatever you load in it will be completely burnt off and waste any 'extra', unlike other kettles that are air tight enough to kill the coals. On longer cooks at low temps this can be no big deal, but for very high heat fast cooks (like our medium rare ribeyes), you are wasting a ton of coal.

      Oh and another question ... did you do the gasket in BOTH the lid and the sloroller (I would presume you do the bottom of the sloroller where it sits on the kettle bottom???). Or are you putting gasket on all the surfaces (top and bottom of kettle, top and bottom of sloroller)?

      Thanks for watching! I thought it was something I was doing with the dripping during low and slow, glad its just not me. The gasket is off of Amazon called Fireblack 1/2" x 1/8" High heat self adhesive tape.

      @@TomHorsmanAmateurBBQ Thanks for the information, Tom, I will give it a try. So since you are talking about that problem, can I assume that you are still getting the hot goo mess even with the gasket?
      Nope, it ain't just you! I have watched a bunch of videos on the Kettle Joe and NOBODY mentioned the problem! :-( The video reviews are what convinced me to get the KJ for our annual trek to the inlaws vs trying to craigslist a used kamado. Frankly the design issue really is ridiculous since I can guess that they could have looked at roughly a dozen different brands of kettle to find out how NOT to have all the goo dripping out, and I also wonder why they would go with a design that obviously was flawed in how it leaks that much air (and smoke) ... the other major brand obviously does not have the problem!

      Yup, installed gasket just on the lid before ever cooking on it. My guess is that the slow roller cools things down enough to cause condensation that mixes within the smoke to form the goo

      I was also perplexed by how messy the cook was and the constant dripping. I put a welcome mat under the front half so I stopped stepped in grease droplets. Hope the gasket improves this.
