    I like that Amy is unapologetic about the killing of the chicken. Where do people think our food comes from? The chicken was healthy, well looked after and had freedom to roam its whole life. And then they didn't just cook the 'best' bits, but used every part, blood, innards, everything except the feathers. This is what responsible animal husbandry and food consumption looks like. I really enjoyed this video.

    Diana is awesome!!! And it's really amazing how you randomly dropped by a restaurant in Italy and ended up with a wonderful friend (and another wonderful trip to Chengdu) out of it! Noemi's chicken catching skill deserves some recognition here. LOL

    I love how the local people take pride in their fermentation-we just don't understand sometimes how the same sauce but from a different locale can be so different but in addition to their secret prep they also have different environmental factors that effects their microbes- yum

      Chinese chives have unique effects. In Chinese medicine, chives can increase physical health and make people more motivated。

      @@jrwkd6114Emma is referring to garlic leaves. If you get some garlic, half bury them in soil, they will eventually grow into something similar grass blades but in the size of a chive. They taste garlicky, with a nice grassy texture.

    18:28 omg yes!! This is one of the many cultural shocks I experienced when I moved to china for my exchange year, my chinese host mother often served these small tomatoes like a dessert, just a bunch of them all cut to small pieces and covered with sugar (similar to how we serve strawberries with sugar in italy as a dessert). I had no idea "sweet" tomatoes tasted so nice! It was a very interesting food discovery 😄

    Tomato is actually a type of fruit as there is seeds inside , same as apple , oranges etc. Where vegetables doesn’t have seeds inside. However , in history american categorised tomato as vegetables to impose higher the import tax and since then tomato got more and more recognised as vegetables.

    I really love watching your food adventures, this one just hit my heart. I'm from Sichuan, spent 4 years in Pixian(college stuff), now I'm in the US, havn't been back for 4 years. I miss my hometown so much especially the food. It feels so happy as well as homesick watching this video.

    I think there has been a misunderstanding here. Amy, I know you asked if you should dip the bread into the sauce, but they thought you asked if the breads are going to fall into the pot, they kept saying: "no no the bread will stick to the side, this is how they do it, it won't fall".

    Hi Amy, I think the corn bread can be dipped in, just not straight into the wok,rather scooping up the juice into a bowl then dipping in. During that conversation, you were asking whether it can be 沾著吃,yet the question was mistaken as whether the bread would fall into the wok, and they answered, 不會掉下去,no, ‘it was designed this way, won’t fall’⋯⋯

    I am so elated you tried the firewood chicken! I had this last time I was in Sichuan and I have been speaking very highly of it since then! I remember seeing your Dongbei video about the iron pot stew and I remember pointing out the similarities to my parents!     Thank you Blondie for broadcasting our beautiful Chengdu, China. Downtown Chengdu becomes too commercialized and modern. You went to the right place and I can still feel the old style Chengdu living from our videos :) which is a much slower work-life pace with plenty of delicious and organic food. Enjoy!

      I loved playing mahjong as a kid. It's like gin rummy with dragons and prevailing winds. I never learned Chinese so we played with the tiles with the numbers on the top right corner. I remember watching my grandmother play for money!

      only that in Sichuan, in the markets we locals go to, the spot of killing chicken is always with the WORST smell. really bad smell omg huh huh

    You are spot on Amy! 栀子花 is in the jasmine flower family :) There's also another one that gets sold on the street in Sichuan, which looks like long slender white blossoms, they are called 缅桂花

    I was so surprised about Chinese chives not being used outside of China. My favorite local Chinese café growing up do the BEST pork and chive dumplings that I'd order every Saturday.

    The good news is finally from July 1st have Chengdu High speed train to HK already in West Kowloon station (Hong Kong) from Chengdu about 10 hours.

    You need to bring with you disposable aprons... I got that idea from a restaurant in Taiwan that provides everyone a very thin disposable aprons to every patron.

    The way the lady cut the noodles form a hump of dough reminds me of what the Germans call "spätzle". When home made it is also cut by hand from dough or pressed through a sieve. Ask your German boy friend.
