That is the way I do it. It's simpler than making the roux and then adding milk and trying not toget lumps. It tastes the same. The only thing I do is add a teaspoon of powdered mustard to it. It enhances the cheesy taste and colours it a little too.

I will be showing her this because she is now at a point in her life (age 23) where she can actually eat food (her intolerances were beyond severe as a small kid, where there was very little she could eat). She loves steak. She loves cheese, but can only eat cheese of the vegan variety. I seriously think she'd love this cheese sauce with steak, just with vegan cheese. Thank you!

Rice flour will still give you a smooth, creamy sauce, but it might have a slightly grainier feel compared to cornstarch. Tell her to use sugar free almond milk. Custard powder and nutritional yeast flakes for a fake cheesy sauce.
