I tried this at home but instead of pan frying it I deep fried it to make them more like fritters and added some thyme, garlic, oregano, and salt'n'pepper and it tasted fantastic, I would absolutely recommend it

i enjoy this series a surprising amount. i've never been a fan of eurogamer, nor do i like cooking, though the presentation make these videos a fun watch. johnny has a rather familiar charisma about him, which, once again, pleasantly surprise me (as bad as that might sound - it's a compliment, i promise). you'll probably run out of content rather quickly, but this kind of format is pretty great. keep it up, etc. good stuff.

Got to have a skosh of Worcestershire sauce, Dijon mustard, and Old Bay to make them really authentic. You needed to whisk the mayo and egg together!!!!

actually he was going about it the right way. the step he missed with the recipe what's the fact that you need to throw it in the oven to get that little bit cooked you can have a nice thick crab cake and you just Brown off the top and bottom besides we'll just over time will cook off. you just have to be careful that the inside to get to the at least 150°F or so because I can get you sick otherwise

Yo, the mayo! I didn't even notice until you said something at the end. That's probably why they were so runny; the emulsifiers in the mayo would have helped keep the fluid in.
I was a bit shocked that you put the crab cake on a cool pan. I would heat the pan to where the cake sizzles when you put it on. You should get a good brown crust on a crab cake.
Pan frying is a great way to cook food like this, helps conduct heat throughout it as the oil envelops the mixture. Just have to make sure to drain it properly on a metal rack after cooking. Bet a bit of cheese on/in this crab cake would have been great. A good cheddar or maybe a pecorino/romano.
i made some of these in minimuffin pans. tiny little bitesized cakes. worked quite well. Although i changed out a little bit so it would cook better in the pans.
Ah knew it. I think the chilling was what made the extra moisture. I have never actually fried things with a "chilling stage" but maybe that's just my experience. I was actually surprised you felt it was necessary!

I suggest you try some Old Bay seasoning for any future seafood videos. It's available on Amazon, and as a native Marylander I can't imagine seafood without it.
