Jerk chicken is my favorite style of chicken. Hell, i just jerked some barbecued ribs up recently, and it turned out great. I will definitely bookmark this method.
Like my chicken dry but I would agree the off the bone cut is the choice if not wanting to much of the wetness of the drum thanks it's definitely better when you can use the off cuts

Yes you can! It keeps well in the fridge for about a week or so and you can freeze it for a bit longer. I left a link to a detailed video on how to make green seasoning and all the different ways you can store it, some of the comments also provide some useful info!
I dont use dried thyme. There's absolutely no flavor in it. I throw them out once they dry up. Fresh thyme is the master. I like the way you articulate your words. You soubd very intelligent and know your stuff. Awesome job!!!
I like to marinade in a good quality clip lock bag that way I can suck some of the air out just before closing it and it's easier to check on and give a quick massage too if necessary.
