    For anyone who might be scared of the heat, the Scotch Bonnet has a sweet counterpart that goes by multiple names, such as "Cachucha", "Ají cachucha", and "Ají Dulse".
    If you want the fruity, complex, gorgeousness of scotch bonnets, but none of the heat, these peppers can be bought as plants and grown.
    You can swap one of the scotch bonnets or 2 with one of these and you still get that great flavor.

    I smiled twice. First when you said growing up the herbs were minced, because that's how I grew up too. And again, seeing the oil being seasoned first. I know this was delicious from the first bite to the last.👌🏾

    I wanna try this so bad. Plus i love Jamaican patties, and I also know they have a crazy history. You make me wake to move to an island and chill out. I have a steady income to do so too so long as its cheaper than the USA. I lost 80 lbs this year and that looks irresistable. Cornstartch- thank you.

    What a joy it is to see yourself creating new things.
    I smiled from ear to ear, after preparing all the ingredients for the green seasoning. Once I dropped the ingredients in the blender, I saw that
    bright neon green 💚!!! I knew I had a winner . I was so impressed with this recipe, that I am preparing it for my Christmas dinner.

    Just harvested the last of my Scotch Bonnets for the year here in Central California. Time to make some Jamaican food to warm up through the next few months till the days get longer again. Think I'll make this one and see if I can get beef suet and do some patties! Thanks for the quality content Nick

    Like my chicken dry but I would agree the off the bone cut is the choice if not wanting to much of the wetness of the drum thanks it's definitely better when you can use the off cuts

    My mouth is watering. My boss is Jamaican and makes jerk chicken when we have a pot luck. I suppose it's spicy for most people but I love spice so it was just right. Sounds like this might be about the same?

      Yes you can! It keeps well in the fridge for about a week or so and you can freeze it for a bit longer. I left a link to a detailed video on how to make green seasoning and all the different ways you can store it, some of the comments also provide some useful info!

    I dont use dried thyme. There's absolutely no flavor in it. I throw them out once they dry up. Fresh thyme is the master. I like the way you articulate your words. You soubd very intelligent and know your stuff. Awesome job!!!

    I like to marinade in a good quality clip lock bag that way I can suck some of the air out just before closing it and it's easier to check on and give a quick massage too if necessary.

      Blended this way, it's not as hot as you might think. But you can use one and take the seeds out. That will help. Just wash your hands right after! 😊
