Udupi Brahmin Style Khara Avalakki Recipe | Spicy Poha recipe in Kannada

  • Khara Avalakki - popular breakfast recipe prepared during special occasions and family functions, specially in the Udupi/Mangalore Brahmin community. One of my favourite Avalakki breakfast recipes if the texture and softness is just right. Comes with English subtitles.
    Ingredients:
    Thin Poha or Avalakki - 3 Cup
    Jaggery - 2 Tbsp
    Salt
    Coriander Leaves
    To Roast and Powder ingredients :
    Coriander Seeds - 7 Tbsp
    Cumin Seeds - 6 Tbsp
    Bydagi Red Chillies - 15
    Coconut Oil for roasting - 2 tsp
    Seasoning Ingredients:
    Coconut Oil - 3 Tbsp
    Mustard Seeds - 1tsp
    Urad Dal - 1/2 tsp
    Curry Leaves - 8-10
    Coconut Grated - 1 Cup
    Method:
    In a pan, heat 1/2 tsp of Coconut oil. Add 7 Tbsp of Coriander Seeds and fry in low flame until you see slight golden in colour and it starts to leave good aroma. Remove to the plate
    Next add little Coconut oil, and now add Cumin Seeds and fry in low flame for 2-3 minutes till they turn to golden in colour. Remove to the same plate.
    Now add little Coconut oil and fry 15 Red Chillies (I have used Bydagi Red Chillies) on low flame, do not burn. It starts to fluff up and slightly change their colour. Remove to the same plate.
    Allow all these ingredients to cool completely, now the Red Chillies turns crispy.
    Transfer everything into mixer jar and grind to a smooth powder. In this powder, you can prepare 3 times this Poha.
    For 1 time use of this powder, use all the ingredients half of it I have mentioned above.
    Heat 3 Tbsp Coconut Oil a small frying pan, add 1 tsp Mustard Seeds, once they splutter add 1/2 tsp Urad Dal.
    Add Curry Leaves and fry for few seconds and add 1 Cup of grated Coconut and roast for 1-2 minutes in low flame and switch off.
    Transfer this roasted ingredients to a big bowl, allow it to cool.
    To this add 2 Tbsp of Jaggery and Salt and mix well with hand.
    Now add 2-3 Tbsp of prepared Spice Powder and mix well.
    Then add 3 Cups of Thin Poha or Avalakki and mix well with the help of hand. You really need to crush it well with hand.
    Adjust the Salt, Sweet and Spice level by adding them slowly and mix well.
    Finally add Coriander Leaves and mix it up well.

    Is it gojjavalakki?

      No. This is different from Gojju Avalakki. This is Udupi style Khara Avalakki. For Gojju Avalakki they make powder of thick Avalakki/Poha and they use Rasam Powder.

      Pls use the below measurements. I am assuming 12 Cups of Avalakki is approximately 1 Kg and hence the below measurements. Khara Masala Powder may be just a little more than required - pls adjust as per your taste. Better to have a little extra powder at hand instead of running out of it.
      Thin Poha or Avalakki - 12 Cups (approximately 1 Kg)
      Jaggery - 8 Tbsp or 1/2 Cup
      Salt
      Coriander Leaves
      To Roast and Powder ingredients :
      Coriander Seeds - 9 Tbsp
      Cumin Seeds - 8 Tbsp
      Bydagi Red Chillies - 20
      Coconut Oil for roasting - 3 tsp
      Seasoning Ingredients:
      Coconut Oil - 8 Tbsp
      Mustard Seeds - 4 tsp
      Urad Dal - 3 tsp
      Curry Leaves - 25
      Coconut Grated - 4 Cup

    Mam can u tell the me measurement of daniya n jirige in grams ?.

      Dhaniya or Coriander Seeds - 7 Tbsp is 35 grams
      Jirige or Cumin Seeds - 6 Tbsp is 48-50 grams. I hope this helps 😊🙏

      @@sangeetskhadabadi7546 yes. In grams Jirige will be more. I measured in my weighing machine and telling this. 1 Tbsp of Dhaniya is 5 grams and 1 Tbsp of Jirige is 8 grams.

      Great to know. I see that coriander leaves are not added to Khara Avalakki in many family functions too. I guess it is personal preference. I prefer it the way described in the video - helps make it a little less dry IMO. Thank you!
