      Based on what? Your choices for your family greatly respected. Just saying, city or suburban dwellers eat different, so maybe your choice are not as healthy for them.

There are lots of videos on UA-cam about the differences and how "trans fats" was a term coined for capitalist purposes, and subsequently moved marketing from animal fats to seed oils. Seed oils are actually very bad for your heart and cause heart disease and cancers, as the process to make them shelf-stable creates free radicals in the oil. It's very interesting stuff! Please research it! You'll be shocked at what you find.

      My parents were hog farmers. Ate lots of lard and pork. They also lived to be 90 plus.

      My grandmother lived to be 100, we had pigs, chickens and a cow named Bill. We used lard every day

    I use bacon grease all the time, just as my parents, grandparents & so on did. Lisa, I enjoy watching your children come in & help out, your voice is so easy to listen too. 😊

      Same, my grandma is 92 and still lives alone, she survives on bacon, eggs, coffee and butter so that deff isnt thats causing health issues its deff seed oils. Our grandparents are outlining us because they usually dont eat processed foods like the younger people do now

    I've read that McDonald's originally fried their fries in beef tallow before Ray Kroc did his thing and now they use hydrogenated oil with fake beef "flavoring." But the reason they make such a big deal about their fries is because they became known for the flavor and texture that came from cooking them in beef tallow.

    Totally on board with your version of healthy eating. Not surprisingly, a lot of the dietary guidelines are fueled by special interest $$$. Moderation is the key.

    It was so adorable seeing your daughter at the kitchen sink in her little apron. Then she walked away... a few seconds later, you see the dish cloth flying through the air into the sink 😂. Loved it!

    Healthy is knowing where your food comes from. HINT: it's not a factory. I would love to feed my family the way you do, it's simply perfection. Unfortunately for us we have many food allergies, and two autistic children with texture aversions. We do our best with what we can and the knowledge we have. Still love watching the recipe videos, and sometimes I'm able to make them safe for us.

    Lisa, you brought back memories of my childhood my sweet mama would fry chicken, make biscuits, mashed potatoes, green peas (which i hated...still do), and gravy. She made her gravy in the fried chicken "drippigs"...Try it! Nothing better served over those biscuits!

      Yes, my mom made gravy out of any drippings. White milk gravy is the best. I no longer eat meat so I don't do gravy.

    I grew up on lard . It makes the best biscuits . There is nothin better than a garden tomatoe with a buttermilk biscuit . Yum yum . Your a great mom and your kids will do well :)

    I dont know your kind of fresh buttermilk, but in Denmark buttermilk from the shops are in high demand because of this summer recipe... you should try it...😊
    1 liter of buttermilk
    2 egg yolkes
    50-60 grams of sugar
    1 tbsp vanilla or a vanillabean
    Juice from 1/2 lemon
    Whisk egg and sugar to white fluff, ad vanilla and lemon - then the buttermilk. Serv in a bowl with granola and strawberries in season.
    Every family have their ovn recipe, som lige it sweeter and leave out the lemon. Enjoy...

    I have cooked with lard my whole life. I'm a baby boomer I do use some olive oil. It's makes me smile to see you and your daughter in the kitchen side by side.

    Lard is great for so much! Pie crusts, baking, frying foods, etc.
    My mother would make milk gravy from fried chicken drippings, same ingredients, same pan. It was excellent!

      That's what I do with both chicken and country fried steak, use the drippings to make gravy with flour and milk or cream. So good! I use lard for pie crust and other things, it is great!!!

    Thanks for encouraging those of us who shy away from lard to reconsider it. And it was good to hear about the qualities of seed oils vs. animal fats. We always use pan drippings for gravy. But then, we use giblets in turkey gravy. We leave skins on as many vegetables as possible, even for potato salad sometimes for more color, texture, and nutritional/roughage value. Thx.

      I always use lard in my pastries because all the other options have bad stuff in it if you read ingredients.

      I can use Trex or vegetable oil coconut oil or olive oil. We even have a butter called skip the cow so yummy. I raised a Muslim so I do not use lard. Beef dripping for gravy plus other ingredients.

    We use tallow instead of lard. We just request it when we get our beef. We have to melt it down but it’s great!

      I wish I could get tallow for a decent price. I prefer it to lard. But in my area it’s difficult to find. Still saving up for ordering our half a cow.

    Fermented mayo is amazing. I use my regular mayo recipe but add a little sauerkraut brine and leave it on the counter for a few hours to ferment. So good!

    Have you tested your cow for mastitis? I found that my mozzarella wasn’t “behaving” either and then we found that she had sub clinical mastitis. Once she was treated, the problem went away.

    I love tallow and lard. I render my own from the pork and beef we get from a nearby farm. It's so yummy. I think it's really all about variety and using what you have. I use everything we get from the cow and pig.

    Meatloaf topping: Ketchup, mustard, brown sugar and a pinch of nutmeg. The ketchup and brown sugar are "base" and use mustard to your taste. It is freaking yummy!

    I always add ketchup and brown sugar to my meatloaf. Those fried potatoes reminded me of the fries my dad always made when we were kids. Yummy. I’m always in awe of how much you do in a day and still manage to share it with us.

    Thanks for the great video! So agree about the lard! As a 70 year old grandma/mom/cook/baker I thought I would mention a couple things I do that you might have fun trying. I leave my pizza dough in the fridge for a couple days to let it “ripen” and it’s so good. I don’t user a sour dough starter but it tastes like I do. Also, I have started using mashed cooked lentils in anything I use ground meat in. No one has noticed. I now keep them cooked and frozen in the fridge along with shredded lacinato kale because I do the same with it. If you cut it small enough it looks like parsley and you can gradually add more and they won’t mind. Well that’s the hope anyway.😁 I also soak rolled oats in milk for my meatloaf instead of breadcrumbs. When my kids come home to visit they ask for it, among other things. Sorry this is so lengthy.❤ I miss cooking so much as our kitchen is being remodeled. Going to subscribe now.😊

    A hack for spilt quinoa or rice on the floor, a little bit of sand! Let it sit then sweep with dustpan it helps clump it up and easy to clean. We used it at preschool

    I grey up on lard as a kid. We lived out in the country in Kansas. Non of us were overweight until we moved and stopped cooking 99% at home. Fast food and convenience food was introduced to our family once we moved to town. No garden, no farm animals, and the chores that go with that. Some of my siblings started gaining weight and struggled for years. Now looking back I’d agree that we were healthier. I do know I’m not a fan of using lard in sweet pastries. It’s just not my preference. 😁

    LISA!!! Have you seen the hack where they put grape tomatoes on a saucer, then flip another saucer on top of it and run a knife thru the middle between the plates to cut all those tomatoes in half at once!? Try that with those grapes!!! EXTREME TIME SAVER!!

    I have been using our lard from our own pigs (pasture raised) and bacon grease for years now. So good and so good for you. Browning things in lard gives it a nice golden brown hue that you don't get using other oils. So glad to hear you telling your viewers that yes, it IS healthy.

    We are using olive oil for most of our cooking. I don't know why this is not common in the US, maybe because it's more affordable in Europe. A later of organic olive oil costs 12 euro. You have cheaper ones but I usually don't trust the source. Olives from Italy, Spain, France and Greece mostly.

    I'm always inspired to do more when I watch your videos. I'm in my early 50s, and we have raised our three sons who are now all grown. Two of them have their own little families, and one still lives at home with us. So, it's just the three of us now, so it shouldn't be that hard to put a nice meal on the table, but I must admit I usually take the easy route. 😅
    But, seeing how you make it look so easy, I'm inspired to make your fried chicken dinner very soon!

    I use lard too. Makes the best pie shells. Love to see you eat outside. We ate outside with our family all summer long. I still like to eat outside. I also have a good raw milk,raw cream, raw eggs from my hens ice cream it’s absolutely the best recipe…with a splash of honey or maple syrup. It’s all my husband and I eat. With fruit in season. By the way I made your sour dough crackers this week… I couldn’t stop eating and my husband loved them with the chili! Thank you!!

      Oh and that pizza crust recipe is so easy and delicious. We started making double de recipe, almost on a weekly basis. Whenever I have the energy and the sourdough is active, we mix it up and then we know in the next 4 days or so, we can enjoy homemade pizza for a quick and easy meal. I sometimes do it for Saturday evening and prepare the next one for the Sunday and put it assembled and ready to bake for the Lord’s day of rest. We are a family of 9 so 1x the recipe makes for a baker’s sheet or one 15inch and one-two 12inch; depending if you want thin crust.

    I’m not sure what you made but farmers cheese or paneer and there’s a Spanish version as well don’t have rennet. It’s the same process but uses lemon juice or vinegar depending on the country of origin :)

    Love that you used your child’s leftover milk in the meat loaf meal, Lisa. I often do the same with my daughter’s milk that she doesn’t finish and have been made to feel a bit embarrassed about it by family members in the past like it’s something unpleasant, but actually I think wasting that milk (which is going to be cooked anyway) is worse!
    Your channel is a comfort watch for me (a mum of 3 in the UK :)

    I love watching you cook, even though it differs from what my body tolerates. As you said, everyone has different versions of heathy food and what makes their body thrive. For me, I can only tolerate a very minimal amount of dairy and carbs (sweet potatoes and fruit only) and no gluten (did a one year experience with einkorn and still didn’t work for me). Instead, I eat tons of meat, eggs, nuts, veggies, fruit! Totally agree with seed oils too - eliminated about two years ago - best decision ever.

    Yummy recipes ❤ I make a mixture of brown sugar, ketchup, mustard and black pepper. Stir it together and when the meatloaf starts to brown then pour over my meatloaf. It’s so delicious.

    Im 40 and we grew up eating lard. We weren’t even on a farm. I remember spreading it on bread and sprinkling some seasoning on top as a snack.

    I love watching your cooking videos! I also add some nutmeg to my ketchup and brown sugar topping on my meatloaf. My mom always did it growing up and it adds a little something extra.

    I save the heels from my sourdough sandwich loaves, store them in the freezer and when the bag is full I dry them out and blend into crumbs.

    You should send your cows' tail hairs to UC Davis to see their milk type. We have one that is A2/A2 and one that is A1/B. The A2 is better for drinking and the B works better for cheese. 🤷‍♀️

    High cholesterol comes from inflammation that comes from food your body is stressed from things like seed oils or other non food, food items. Butter, cream, and lard are healthy.

    I am loving your meatloaf recipe. We do ours very close to yours. We add rubbed sage (1 tsp) and chopped onion. I also add a little dried mustard to the ketchup, BROWN sugar glaze. So so good. Martha Stewart claims the recipe but I know mine is better. LOL Love watching you cook and keep your home.

    Im a dietitian and I support the use of farm fresh lard! Anyone who says otherwise just doesn’t know. The USDA has taught us so poorly to increase farmers profits… it’s very sad. Anyway, GO LARD!!!

    Most gluten free doughs are very sticky & I either wet or oil my hands to make them easier to handle

    On the cheese, if you have too much cream in the milk, it doesn’t turn out right. I have to skim the cream from my milk or it didn’t turn out right

    My mother’s generation and the generations before her all used Lard. They were healthier, not overweight. They didn’t have junk food and food was not full of preservatives and poison.
    I would consider this a healthier option when frying.

    I am new to your channel and due to some severe allergies i have had to go to a very unprocessed diet i make everything from scratch as much as i possibly can. I have to avoid soy, nuts, seeds, coconut, vitamin E, beans, anything in a can because i have a nickle allergy the list goes on and on. Looking forward to more of your vlogs.

    The set up of your meals make me happy. I was raised where we put our own food on our plates, and it was not really functional doing that. I always portion out per person and see you do that too, and it works out so much better! I like the sourdough crumb ideas! I really need to get some eincorn. I hear so much about this ancient grain.
    I love that you make your own ricotta cheese. Farmer cheese. Mmmmmm. Looks so good.
    I use my mom's meatloaf recipe but use crackers instead of the crumbs, but making your own crumbs makes more sense. Everything you have used in your meatloaf is very much like my mom's that I have made. I don't use sugar, but the ketchup, we do. Mine looks more loaf-like, but I also have a smaller family than you. I've been making a plant based meatloaf for myself and anyone in my family who wants it, and one with actual meat. I have tried other people's meatloaf before and it tastes so dry and different. Ketchup and milk really help to make it taste so much better!
    Do your cows eat the same things? Interesting how each of them have different types of mozzarella results! Fresh mozz is one of my favorites to use. Mmm.
    I have never made my own mayo, nor seen anyone make it themselves. I am glad to see your process.

    I had made some sourdough breadcrumbs but wasn’t sure what to do with them besides putting in meatloaf. I tried your chicken recipe with the breadcrumbs and they turned out great!

    Ricotta means cooked again so it would be cooking the whey again to then get the cheese which is ricotta. Home made is just delicious 🤤 not like some of the cheaper rubbery shop bought stuff

    Everytime we sent a pig out for slaughter my mom would render lard out of it. I was the most healthy back then. So Hubs and I have been going back to that kind of food like you make, too get healthy again.

    I'm trying a sourdough starter again. Hopefully this one will turn out. I'm getting ready to build my raised beds and plant my garden. I can't wait for fresh vegetables! Natural fats are always better than processed ones. I would love to find some locally sourced lard. I just made my first batch of mozzarella cheese today. It was fantastic.
