    花膠處理過程
    材料:
    花膠筒4件
    薑片(厚)適量
    蔥段適量
    處理:
    1. 花膠,清水洗擦內外污漬,洗乾淨。
    2. 花膠,放入一個大的容器,加入清水,放入雪櫃,浸6-8小時。
    3. 花膠已浸了8小時,取出,放碟上。
    4. 薑片及蔥段,放入花膠筒內,去除腥味。
    5. 餘下的蔥段及薑片,放在蒸架上,花膠筒放薑蔥上。
    6. 預備一鑊水,加入:
    a. 薑片2塊
    b. 蔥一小札
    c. 紹興酒2湯匙
    大火滾起。
    7. 大火蒸花膠10-15分鐘。
    8. 取出花膠筒,放入乾淨的清水,放入4度雪櫃,浸一晚,就可以了。
    9. 取出花膠筒,除去薑蔥。
    浸發花膠小貼士:
    1. 花膠,完全不需要接觸到熱水,否則,它的膠質會流失的。
    2. 只需要在花膠筒內,放入薑蔥,一同蒸至軟身,清水浸著,放入雪櫃,花膠的腥味就會去除。
    3. 浸發好的花膠,要在最短時間內食用。因為浸發花膠,只需一天的時間,非常方便,所以並不建議在冰格儲存太長時間,或多或少都會流失膠質,甚至會回吸雪櫃的雪味。
    How to soak dried fish mawi
    Ingredients:
    Dried fish maw 4 Nos.
    Ginger slices (thick) appropriate amount
    Green onion (in lengths) appropriate amount
    Preparation:
    1. Dried fish maw, brush in and out. Rinse thoroughly.
    2. Fish maw, put in a large bowl. Add in water. Put in refrigerator. Soak for 6-8 hours.
    3. Fish maw, has been soaked for 8 hours, take it out. Put on plate.
    4. Ginger slices and green onion, put into the fish maw, to remove unpleasant smells.
    5. Rest of the green onion and ginger slices, are to be put on a steaming rack. The fish maw is to be put on top of the green onion and ginger.
    6. Get ready for a wok of water, add in:
    a. Ginger 2 slices
    b. Green onion a small bunch
    c. Shaoxing wine 2 tbsp
    Heat up at high flame.
    7. Steam the fish maw at high flame for 15 minutes.
    8. Take out the fish maw, put into clean water. Put in 4 C refrigerator. Soak overnight.
    9. Take out the fish maw, remove the ginger and green onion. It is ready to cook.
    Tips on soaking fish maw:
    1. The fish maw, no need to be put in hot water, otherwise collagen will get lost.
    2. Put ginger and green onion into the fish maw, get it steamed until it turns soft. Soak the maw in water. Put in refrigerator. The unpleasant smells will be removed.
    3. The soaked fish maw, should be consumed in a very short period of time. As the soaking time of the maw, only 1 day is needed which is very convenient. It is not recommended long storage time in refrigerator. This will help to reduce collagen, or even to absorb the unpleasant smells from the fridge.
