Apparently they are and I didn't realize it. I have had this question before. 🙃
Thank you for showing the “mistakes” and how to rectify them. That helps a lot for those of us who make them, too. It’s shows us that all is not lost when they happen. Very encouraging.
I want to be fully transprent. Thank you for your comment. I'm happy to help. 🙂
Good video, thank you.
Some additional tips. As you have seen, the dough wants to rise in the oven. 1/3 of the top part of your pan should be empty before placing the pan in the oven.
Use baking paper inside your pan. Cut it to fit. Then you can reuse it many many times without having to grease your pan, and only have to wash your pan every 10 bakes. Have fun baking
Thank you for the tips. I am thankful for them. 🤩
Thanks for giving the weight of dough for the 9x14 Pullman pan. I was searching all over for that!thanks 😊
You are welcome.
Another fine video, I like how you show real world experience and don't edit it out!
Thank you, Ron. Unfortunately the real life isn't always pretty as there are mistakes!! I went to walk and feed the ducks while the bread was rising and I knew it was bad timing....but I kept going and came back to find my bread like that. 😬🤦♀️ Lesson learned, stick with my gut and check the bread. And you are welcome. I really want to be honest in my videos. 😊
@@Tracy-Hart Yes I made a mistake one time by forgetting to turn on the oven! The bread rose very high and even higher in the oven, it ended up very weak in the middle and tore real easily!
@@ronsellew5696 oh my 😬
I have the 2 lb USA pullman pan and I've never sprayed it. The loaf comes out very easy. I love it! I want to invest in the smaller pans now. I literally weigh out 2 lbs of dough or a little less bc more than that will cause overflow mess.
I have never not sprayed it although it usually falls right out. I will try the non spray method next time. Thank you for the tip. 🤩
@@Tracy-Hart the nonstick quality is the reason I purchased the USA pullman pan. The biggest issue is getting the lid off so I do "grease" the edges of the lid only with olive oil.
@@dorapierce4455 okay👍
@@dorapierce4455 next time, I'll skip the oil 🤩
Hello Tracy!!! I felt you did a great job demonstrating the use of the loaf pan. Very down to earth instructions and no UA-cam flash, I respect that. Please post more videos as I just subscribed to your channel?
I definitely don't have flash🤩. I posted one today and have several in the line up (not about bread). Editing is time consuming when it is the last thing of importance on my list......I'm sure you understand. 🙂🙂 I appreciate your comment. Thank you
I loved this video, boo boos and all. We’ve all been there 😂
The 9x4x4 is a 1.5 lbs pan . . .meaning 24 oz., (680.3 grams) is the maximum amount of dough you can put in the pan.
When using greased metal pans for bread, I’ve found it helps to remove the bread after 7-10 minutes. Letting it cool longer than that, causes it to stick 🥰
Ah!!! Thank you! I'm gonna film again using your weight suggestion and without oiling it per another recommendation. That must be why it wouldn't come out!! I usually wait long but for the camera sake I was trying to hurry!! Haha. Thank you!!
thank you so much you saved me many hrs of figuring out the weight of dough for that pan... Agree on the cool time... longer also causes soggy curst big yuck for me
I did not know you could bake bread in a glass pan, thank you enjoyed your vid.
@@matsteel2292 it's my favorite. You are welcome 🙂
Very interesting. Thanks for sharing. Your bit of trouble getting the loaf out of the pan reminded me of a similar incident. For some reason, I find olive oil isn't as good as butter or Becel for greasing the pans. I never have trouble with the other two, but sometimes olive oil just doesn't release as effectively. This is the second pullman loaf pan video I've seen within a week. Amy (Learns to Cook) did one, too, but I forget which mixer she used (she has about 50 of them.) Thanks!
Hey. I think another thing i did wrong was I did not let it cool. 🙃 I need to look up Amy and her mixers. The mixers are fun. 🤩 Thank you for your comment.
This video is a year old, so you probably know this by now: it’s a big no-no to cut into a hot loaf; the bread is going through its firming up stage, and cutting it will cause it to dry out, and not have a good crumb. In some cases it will make the crumb feel gummy. So if anyone asks you to cut a slice, you offer to cut them.
You can prevent sticking by using a little bit of Crisco (original, not butter flavored); my bread pans are older than I am, and I take a piece of paper towel, and wipe the pan with Crisco. You can also put it on your hands to keep sticky dough from sticking, especially when making rolls; though you have to occasionally reapply it.
I usually wait to cut but was trying to hurry for the sake of trying to finish my film. And if it is cool, it usually pops right out. Thank you for taking the time to share your tips. I appreciate it. 🙂
Recipe please?
@@debrees2363check here for a download link. If you only need one loaf, half the recipe. If it is still too much dough, just make a few rolls. The big batch recipe is in my Bread with the Hook in grams video. 🙂

Are you having any problem with your bread being kind of sunk in a little in the middle? I don’t know if I’m not cooking it hot enough or if I’m cooking it too hot. It’s completely cooked by the time I take it out of the oven but you can see it. Took a long time to get that center cooked.

Look at this video. Recipe in comments. How are you kneading your dough?
I have this same Pullman pan, 400° for 25 minutes with convection. I never need to remove the lid to brown the top, it browns very nicely all around.
Thanks for the tip. I'll try this. 🤩
@@Tracy-Hart I just now took one out of the oven. It's perfect.
@@Mr.56Goldtop nice🤩
Do you have a certain weight of dough you add to your pan?
@@Tracy-Hart I do not weigh the flour because the recipe I use didn't come with a weight only in cups. But I do spoon the flour into the measuring cup so it doesn't pack down.
From start to finish, how long does it take to mill your wheat until you have the finished loaf?
If you can get it all done under two hours.....that is great. Each start to finish time can vary depending on the temperature of the rising environment, the wheat itself, and so many other factors. Thanks for asking. This is a great question. 😊
This was really helpful, thank you!
I'm glad. Thanks for the comment 🤩
Hi, thanks for your video. Which bread becket’s recipe did you adapt your recipe from. I’m from downunder, have bought her book. I want to try this bread with home milled flours as well.
Her basic dough recipe
Stayed tuned. I have another video coming soon with a recipe download in grams .
@@Tracy-Hart thank you!
can u use the pullman pan as a bread container to or what is a good way to store fresh bread im new to making my own bread
I use a plastic bread bag. I need to make a video on that. Amazon has them.
thank you i look into it @@Tracy-Hart
I thought these pans were non stick....why do you add oil?
Your bread looks great!
Thank you
The pan makes a neat shape. 🤩
Do you ever take the internal temperature of your bread to make sure they are completely baked? I have been thinking of getting one of those Pullman pans to get sandwich shaped bread.
I have considered it but never done it. I feel confident it would work well to do this
Looking for a recipe that makes just the right amount of dough for these smaller Pullman pans. Got two for my birthday but can't find a wheat bread recipe for it. If you know where to find one, please post here.
Any bread recipe will work. Look through the video comments. Someone mentioned how much dough to add for this size pan. I plan to do another video with that. And let the pan cool and it dumps right out. 🤩
You should watch the kneady homesteader. She has great videos on bread baking including the Pullman pan.
Thank you for the tip. I let it rise too long before I baked it. Lesson learned: dont walk to the pond to feed the duck while the bread is rising. 🙃
.
If I set my "Convection" oven at 350F It means standard oven would be at 375F. (Excellent looking crumb, BTW)
.
Mine is convection. I've been using it so many years I have forgotten about the difference.

That looks like a 1lb pan.
I use 800g for my 1 1/4lb pans.
That’s probably going to puff out of the lid.
😮
@@dstdrummer thank you. I may have needed to use less. I did leave it too long though....I remember thinking, I don't need to walk to the pond to feed the ducks, but I did anyway. And by the time I made it back it had risen too much.
@@Tracy-Hart
😮
I have shaped loaves into the pan and went to do a job for an hour or so, only to come back and they had puffed up and over flowed down the side of the pan.
There was no way around reshaping at that point.
🤦🏼♂️
@@dstdrummer I understand that 👍
How long have you had this pan. Im slightly worried about the coating on it. Not sure i trust it but if the coating lasts a really long time it might be okay.....
I have been told it doesn't need spraying. Many people swear by the USA pans. I honestly don't use mine that often as I prefer a different shape loaf. I like my glass pans better.
Hooray
Mam what Brand of your Pullman Pan?

Best not to let the baked bread sit in the pan. Remove it when it comes out.
These pans do better once they have cooled, but I wad in a hurry for the video. 🙂
Yay
I'm sorry, what oven temp did you use.
No problem. 350 degrees. 😊
What mixer is that??
