- Are Fermented or Cultured Foods Good for Us? Maintaining a healthy gut flora is important for overall well-being, as many diseases begin in the gut. There is a clear distinction between cultured and fermented foods. While fermented foods, if left to process, produce alcohol that isn't beneficial for the body, cultured foods don't undergo the same process and release B vitamins and Lactobacillus, which are great for boosting gut flora.
Sauerkraut, used for thousands of years, and miso, a traditional Japanese food, are examples of cultured foods. Also, coconut, almond, and soy-based yogurts and kefir are incredibly healthful options. Join Barbara O'Neil as she briefly discusses the benefits of fermented and cultured foods!

I understand, and has been verified by a friend's experience with his little daughter, that if a person is so sick that they can't even keep water down, that a couple tablespoons of water-packed sauerkraut will stay down, and replace lost electrolytes too. God bless!

Was in awful pain in my mouth and tongue, doctors and pharmacy failed to find the problem, pain got so bad I couldn't sleep and I had to stop eating, even felt the pain in my chest, the last day I couldn't even drink water..it hurt so much, I "accidentally :-o" found the importance of salt and water video and cured the severe pain in less than a minute, then watched video about the gut, then got B12 test..it was low, I implemented everything and I spent the next year in the best health of my life.
I have never heard of such symptoms. Amazing that salt would help! Grateful for your testimony
Yes, it was celtic salt, stopped the pain, but I still had other symptoms so very quickly got tested and as soon as I had the B12 I felt better than ever but it's an easy diagnosis apparently and the doctors should have known straight away it was B12, but I think I was very nutritionally deficient all round because of the gluten.
Same here I had massive pressure headaches I was given pills by my “doc” and after a few months they weren’t as effective and had to up the dose when I asked what’s causing this and how can I fix it how long will I have to take them she just looks at me like im stupid and said well your just gonna have to take the meds and you’ll be on them for a very long time not even really answering my concerns I went home and found the lovely Miss Barbara and her video on drinking good quality salt water and I was feeling great after just a few days, no more pills or headaches for me 🙏🏽🙏🏽🙏🏽

I love miso, instant miso is my emergency hunger relief, I also love fried tofu coated with garlic powder. I haven't eaten tempeh. I just had my food sensitivity test. One of the results of I Must Not Eat Soy is a Red Marking: Tufu, Tempeh, soy sauce, and miso.
I trashed a few bottles of soy. Also, eggs and garlic have Red markings. I know I got bloated a lot. I stopped the garlic and miso also eggs. But I grew up eating organic eggs from our farms. Last week I ate a few eggs I didn't have any discomfort. My gut health overview: My five strains of bacteria have been identified as falling outside the normal range.Bacillus Coagulant,Bifidobacterium Bifidum,Bifidobacterium Ifantis, Lactobacillus Acidophilus and lactobacillus reuteri. I didn't read or searched for the meaning yet. I believe in divine guidance like finding your lecture Barbara I believed its guidance. While watching your UA-cam an Ad came in about food fermented it was fun watching her making them. I went to the store and bought green and red cabbage and beetroots as well as some oranges to make a green fermented cabbage with Vitamin C. Two weeks later my Fermented cabbages are ready to go in the ref.
I started searching for the meaning of my gut result. OMG talking about divine guidance All five gut issues the only fix is to eat Fermented foods. I have all of them ready to eat with a perfect doneness pH of below 4.5 and it cost me less than $15.00 I love the taste it doesn't smell at all like the store-bought. I have been eating some every day and drinking the beet kavas on an empty stomach. This is my Fermented food story.

In my study of this subject, which I spent a year on before attempting to take any myself..I discovered that the only family of Food that does not put out mold toxins which are called Mycotoxins in a longer term processing period, is the cabbage family. I enjoy reading Ellen White health materials. She states that short term culturing of certain products is healthy, and mentions olives cultured correctly, in salt, or salt brine and yogurt. I use these or make them myself, and I went for a raw sauerkraut with zero additions to the mix such as garlic or cucumbers. The Germans have it again!

Cultures-microorganisms like bacteria and yeast-are used to kick-start the fermentation process. Therefore, cultured food refers to foods that have been fermented using a starter culture. Both fermented and cultured foods are made with microorganisms, but not all fermented foods are cultured foods or probiotics.

For many years after taking birth control (for a year) I would get yeast infections aalll the time. 15-16 yrs later I received kefir granules. The kefir I made was next to a miracle for my girly part. I now have a kefir scoby and dabbling in that.
I've been lacto-fermenting foods for many years. Many veggies can be "krauted." "Crock pickles" made with copious amounts of garlic and dill are much tastier than vinegar pickles. I like to put a little habanero in there for some heat!
Fermented garlic and onion are a treat. The bite is taken out and the allicin is intact. Allium ferments offer a much broader microbial profile than other veggies.
I have done grated beet, the product is called "sauerreuben." Also, Kimchi is delightful. I love it with lots of hot pepper.
Kefir is a premium cultured food. It can be made as a drink or "double fermented" to make a thicker yogurt type of product. Kefir also has a large microbial profile and this will actually colonize your gut more permanently, whereas yogurt must be continually consumed to boost its effect.
I make a probiotic water that I take an oz. of daily. It is very simple to make, using a quality commercial probiotic supplement as a starter.
Right now, I have hummus on the counter (a 48 hour incubation period) that will be ready tomorrow. This recipe is made with sesame oil and is loaded with garlic and is just delicious!

@@J-BKing there's a great content provider on YT called "Clean Food Living"--just look her up. You won't be disappointed. She's great. Every time I watch her stuff I try another project.
Haven't done any that I don't like, yet. The last thing was the fermented hummus. Her recipe has sesame oil in it, as well as the vital garlic. (I usually make it with coconut oil and have never fermented it before. I'll try my recipe next time.) I am enjoying my second batch of it according to her recipe--it is pretty easy to make and I love the peace of mind knowing exactly what I am putting into my body and knowing that it is really beneficial.

@@olivierforget1927 I don't do any new age stuff and not from documentaries my changes were made it was because a lot of foods made me sick as a child and I was was v@xxed damaged in childhood which contributed to many food allergies. Many foods particularly gluten and wheat make my disabilities worse it was a lot of dietary experiments of taking things in and out of my diet that led me to cultured foods asking questions and some videos maybe some documentaries but research and prayer mostly led to many of my dietary choice decisions.

You have touched on most of the types of food but none like the Ethiopian food we have so much different fermented types of food and very delicious but you have to go to the country to experience it the way the people in Ethiopia 🇪🇹 eat it...very healthy and good for your gut.

There many videos on UA-cam that can teach you step by step how to make these foods. One of the easiest to make is sauerkraut. All that is needed is a glass jar, fresh cabbage and salt. Make sure they don’t use vinegar otherwise that isn’t a true “fermented” sauerkraut.

what do you think of genuine San Francisco Sourdough bread/ That which contains Candida humilis
She said sourdough bread is good for you. The kind made with starters. That type of bread requires a fermentation period as we call it, to allow the yeast cultures to break down the gluten protons that make many of us ill. You still have to let it cook and rest properly so the yeast is completely dead before consuming.

It's great as long as it only has the 4 ingredients and not a bunch of additives. You can buy SF sourdough culture on line. Some grocery stores now carry authentic miners sour dough bread. It's delicious and much easier to digest.

Miso is made from a mold called Aspergillus oryzae. Is that ok to eat?
Tempe is also made with mold.

No, fermented foods are very healthy, Saurkraut, kimchi, salt brined pickles and olives, (no vinegar) and Sourdough bread as it does not contain any sugar or yeast

What about the acid that's bad, I think it's "acetic" acid or something similar. I was told that those ( like what's in vinegar) are in these cultured foods like saurkruat.
NO vinegar in these cultures. It would likely be too acidic and harmful to the culture. Sauerkraut in stores is sometimes vinegar and even if not, it is heat processed, dead. You have to look specifically for labels that say "live culture."
Homemade saurkraut is definitely better and only requires cabbage and salt, (not iodized table salt)

What about kombucha which is fermented and has low enough alcohol to still be very beneficial to our gut. To me it appear all fermented foods aren't bad. Like the question was are fermented foods bad, then you just talked about cultured foods. I just read cultured foods are ones that are started with a culture, then ferment releasing acid or alcohol from carbohydrate. Fermented are ones with no culture added. That appears a bit different than what was said here.
What about probiotic supplements?
They are better than nothing, but living probiotics are much better!
Probiotic supplements are good, but some do not make it through the entire digestive system because stomach acids will get rid of most of it. Probiotic foods, however, will help heal and boost your microbes in the gut. Look up the health benefits and how to make, milk kefir, sauerkraut, fermented pickles, kombucha tea and (cultured) sourdough bread.

Cultured foods are eaten raw. Sourdough culture does its job before the bread is baked. It leavens bread naturally without yeast. People with gut dysbiosis and candida yeast overgrowth can not tolerate yeast education bread.
How about kefir milk?
I have made it for years. It is the king of cultured food with up to 56 different living strains of probiotics. Store bought kefir has about 15.

When it’s ready, I strain the milk that has been cultured, and drink it. The grains are returned to the jar with a little kefir and pour more fresh milk over that and restart the process over again. The culture (kefir grains) consume the lactose of the milk and make the milk thick, creamy and sour like buttermilk. Kefir, by the way, is the most potent probiotic food on the planet.
Fermented Foods could be sauerkraut, pickles or mixed vegetables. Those are made with water and salt. Place them in a jar, leave the jar on a kitchen counter for 3-6 days and they become fermented foods. The fermentation process will boost the vitamins and minerals in the vegetables and will become a probiotic food.
I think Barbara does not drink alcohol, and my understanding is that there are some cultured and fermented foods that create its own natural alcohol. This is true if you leave them fermenting at room temperature for too long. Kefir can become effervescent if you do a second ferment (without the kefir grains) and add some crushed fruit. The sugars of the fruit will create an alcohol. I think that’s what she might mean by “not being good”. BUT in my experience these foods are an excellent source of probiotics! My husband and I have been consuming them, on a daily basis, for 8 years I consider them my cancer prevention (I’m a breast cancer survivor) and my husband healed his liver.

@@ednakranenburg7203 I've not really found that much information...hubby and I both have MCAS from Lyme and "c"... my throat is messed up with eosinophillic esophagitis...making it impossible to eat without drinking water to push it down... whatever I eat. I know it is counterproductive...but...until I found out I need to push the food down with each bite...It was backing up in my throat... and I would have to throw up my food...cause it was not going down. With CFS/Me ...then adrenal fatigue from trying to "push it"and issues with my back ...Ankylosing spondylitis ...all from these satan created bio logicals. ...it is impossible to do much of what is needful to return to health....having to be your own healer when you don't feel like breathing : ). So...sorry...can't be of much help. Did you have MCAs before this agenda?

The sugars of the fruit will create an alcohol. I think that’s what she might mean by “not being good”. BUT in my experience these foods are an excellent source of probiotics! My husband and I have been consuming them, on a daily basis, for 8 years I consider them my cancer prevention (I’m a breast cancer survivor) and my husband healed his liver.

I am from Central Europe with few different nationalities mixed(Germans included), and sorry,no cultured word used for any vegetables and dairy."Culture" is fairly young its when used artificial produced culture to curl dairy...but even dairy never had been used any of "culture" way back.
Fermenration is process goes cenuties back and that is slow process,for cabbage at least 7 - 10 days depence on temperature.
For best result one must know what type of cabbage to use,not all produced correct result.For dairy use of sour cream in the milk...
