Lud, the reason they give you a little wine first in restaurants, is because the bottle is freshly opened, and they’re letting you check if the wine is «corked» or basically if the wine is fucked in some way. It has a functional purpose, they don’t do it for fun, or if you like the wine - otherwise they would do it for everyone at the table.
I was wondering for a second why their employees don't test it to make sure it's good, then I felt dumb for even thinking that. 😂 though it would be hilarious!

The wine comment hurts my soul. When they pour you that once to try it, it isn't to determine if you like the wine or not, you're supposed to be checking for "cork taint" which is mostly caused by TCA or other flaws like heat dmg. It'll make the wine taste horrible; something like a musty damp cellar. Something like 2 to 4% of wine bottles are impacted by cork taint.

Servers have you smell and taste the wine at restaurants because of tradition basically! When opening a bottle of wine, it used to be pretty reasonable to expect that the wine would have gone bad since we hadn’t nailed down preservation techniques yet. Now we have a better handle on it, also most wines now are not corked, so it’s pretty unlikely that the wine will be spoiled: they still do the tasting though, some people seem to enjoy it for some reason.
