Sharpening a Global G-48 Santoku Knife with Chroma whetstones

- I receive a Global G-48, 18cm Santoku Hollow Ground Knife to sharpen and I decide to make a video and present it first, and after I sharpen it.
The stone that I used for sharpening are:
ST-2/8 CHROMA Whetstone 200/800
ST-1/3 CHROMA Whetstone 1000/3500

My name is Daniel, I am an electronic engineer who started from some time to work with wood. Wood was a passion of mine since my childhood when I grew with my uncle who was a woodworker.
When I was about 35 I bought a CNC machine and made several things with it.
Working with wood I needed some cutting tools so I had to buy hand planes and chisels. They needed to be sharpened so I have discovered whetstones and I have another passion now: sharpening. I like sharpening and I discover how relaxing is to sharpen a kitchen knife. I am not a specialist, I am a self though from what I read and from other people movies.
On my channel you can find movies with what I do in my workshop: sharpening, some woodworking, repairing things and whatever I have to do and I consider it might be interesting for you.

Global knives steel is not to hard but sharpens very easy and result is obvious. I have Global GS3 , petty, on packaging is written ,Globals are sharpened on 15 degree. If you run just a few passes on 1000 and 3000 it becomes scalpel. Blade has some micro serrations that dont go away , I've had this knife for a few years now
I am building my Shapton collection as well. I find the coarse stones cut German stainless steel very well. The King 300 is also very good on soft stainless knives. Do you have any other recommendations for this type of steel?
On stainless steel I use my shapton 1000. Works like a charm. 🙂

Hallo Daniel. Habe die Möglichkeit den Chroma 200/800 für 40 euro zu kaufen. Kann man danach auf den Shapton 2000 wechseln? Leider habe ich unter 1000 Körnung noch nichts, oder ist es besser mit Shapton weiter zu machen da ich ja die 2000 und 5000 schon habe. Dann Währe die Shapton Kombination 320, 2000,5000. Würde dieser sprung denn funktionieren von 320 auf 2000? Der Imanishi 1000/6000 scheint auch ein sehr guter Stein zu sein.
If I have to chose between chroma and in Imanishi. I choose Imanishi.

Globals only need a 5000 grit stone
If they are bot very dull.
@@DanielWorkshop I have had Globals for 10 years...even sharp not dull they need a handful of passes over a 5000. A Professional never allows any knife regardless to get dull in an arsenal
That was not my knife and it came to me for sharpening. You are talking about maintain an edge.
