You can preserve eggs in lime as well. I watched a homesteading video on preserving eggs and they will last a long time, so in the winter you have fresh eggs.
I have a lot of extra too even after giving to friends and family. So I will freeze them. I scramble 2 eggs at a time and freeze them in a ziplock bag. That way I can still use them in recipes.
With lots of eggs I like to do Dutch babies, homemade pasta, and Quiche! Quiche is great because you can add in whatever you want…we like bacon or sausage and cheese, onion…super good! Also deviled eggs and breakfast scrambles with lots of eggs!
Wash, dry, oil and put in foam container to store for later use when they stop laying during winter molt. We also found a half way house and donated them. Homeless shelters typically have to get from gov't regulated suppliers. You could check with your local shelter. T's wife.

If they don't have chickens you can offer to split the eggs with them for freeze drying yours. For recipes quiche and pound cake use lots of eggs and the old stand by pickled eggs :).

I water glass my eggs for winter. We water glass 20 one gallon buckets each year. We use these during the time our hens stop laying usually between October and April. We also freeze dry eggs for baking. I grind my animal fats before I render them it goes faster.

Hello Marissa........for poor folks, on the Phase one for gut repair (for very damaged), what are some cheap ways to get the broth made? Can we just boil some hamburger and drink the broth? Does it need to be fatty stuff for the broth? Also....if I put hamburger in a pan to boil, should I boil it raw, then toss out liquid, then reboil? or do I just drink the raw boil batch/broth. Thanks.
I love crepes, mine are 'rustic', lots of eggs, some dairy or coconut milk whisked in, baking powder, salt, a little oat flour or some nut meal (gluten free here) just slightly thicken. Make the crepes, in plenty of butter. I combine either smashed, heated strawberries or a little strawberry jam with cream cheese and spread on each crepe, roll and add some filling on top. I love for any meal.

I make a lot of flan in the summer. I use up 12 eggs at a time. I add egg yolks to my kids smoothies. The whites can be used for homemade marshmallows.
A few great ways to use eggs is homemade egg nog and also egg nog bread. I use egg white for diy face masks and such. I also use egg white in a diy bubble bath mix. As for food I looove making cream puffs and angel food cake. :) Make up some meringues as a holiday treat. Good luck with the egg abundance. 🥚
I once put an egg yolk in salt and let it sit for like 2 ( think) and it was delightful to use on salads . I used a grater with a fine side and used it on my salad.

About preservation, I heard that olive oil rubbed all over them will preserve them for about 6 months we eat ours so we do not have many issues with a time frame but on occasion will will offer our extra eggs to friends n family when we n know we have to many to consume. 😊
I've heard that you can preserve fresh unwashed eggs in lime water for up to 8 months or so. There are lots of blogs and UA-cam videos out there about that

You can also pickle eggs for long term storage.

We got another freezer because 1 whole steer can have a hanging weight of 600-800 lbs.
