I agree that sfogliatelle is the best. I learned how to make it. It is a long process and needs two people when stretching the dough. You can tell if the pastry is made fresh when you bite into it. If you can bite through the pastry cleanly without pulling the layers apart then it is freshly made. If not, then it is factory made. I grew up in New York eating the finest Italian pastries made outside of Italy. Ariola Pastry Shop in Queens, New York was the place to buy your pastries. On Sundays when my Italian Aunties would come to visit they always came with a large box filled with these pastries. My second favourite is ricotta filled cannoli. The shell has to be crispy but firm enough not to shatter into pieces when you bite into it. Cavallaro & Sons in Footscray outside of Melbourne have been making the best cannoli since the 1950’s. Thank you for highlighting these fabulous Italian pastries. You have transported me back to my childhood and beautiful memories of my Neapolitan aunties and their gifts of Italian pastries.
My dad loved Italian rum cake. I like lobster tails. Lobster tails are similar to sfogliatelle but not as hard or crunchy. They are filled with eight pastry cream, whipped cream, canoli cream.
Watching you eat all those pastries just makes me wanna go to Italy and eat them all and try them all out. Thank you for showing us the beautiful Italian pastries. I will see you soon.

I live in Greece and I try once a year to take the ferry to Puglia Bari or Brindisi just to have pasticcioto!!! And of course espresso leccese! I hope someday you will make a video down south in Salento!
I love sfogliatelle, or at least the ones I ate in Naples (sorry, Napoli!) with the creamy candied peel filling. I also had a similar thing with thin slices of peaches in it - squisita!

Italians must have a different metabolism from people of Northern European origin! My ex-Italian girlfriend ate pastries for breakfast. She wasn't fat or about to develop diabetes, but to me that appeared really, really strange. Same with Italian hotel breakfasts. At best you get some fruit, cornflakes and a slice of prosciutto. Here in Scandinavia (and in countries like Germany, Austria and Switzerland) the norm is to eat a healthy first meal of the day that fills you up with nourishment so you can fish cod, cut down trees, play ice hockey and assemble Volvos all day long! I never criticised my Italian girlfriend for her breakfast habits, but I still fail to understand how she could get off to work each morning on just coffee and empty calories. Italians have a lot of important things to teach the rest of the world in the area of food, but perhaps they should learn the benefits of müsli, herring, mackerel and rye bread from us who live north of the Alps? No, the more I think about it, the more convinced I get Italians actually do have different metabolisms. 😂

Cannoli will always be my favorite. In my home town we had a Cannoli maker, incredibly talented Italian family. It got write ups from the NY times and its across the country from NY. Their grandkids have taken over and kept the quality up. Its hard to beat nostalgia sometimes.

My favourite was the Baba Al Rhum which is unbelieveably good in Napoli, my second favourite is the Sfogliatelle Napoletane, nothing beats that crunchiness and the ones I had in Napoli had both Crema di Arancia e Limone and I could eat them every day of my life given the opportunity which sadly after my Italian wife passed away and I had to go back to live in Scotland I cannot find them anywhere near the same quality as we ate them in Napoli...

My favourite is Babà :) I was also in Sardinia last September and tried a pastry called Sebadas, a type of fried cheese drizzled with honey...delicious!
There is nothing like a having a great Italian bakery nearby. We are fortunate to have one with an extensive selection of pastries. The one you saved for last looked pretty amazing.
I made Pasta allo Scarpariello with Cherry Tomatoes for the first time today. I had to hit our local Italian grocery and bakery store to get Mezzi Paccheri pasta. We grabbed two cannolis and a zeppole for dessert.
I ate a couple of Italian pastries from a Italian bakery don't remember what it was just had a lot of cream. Added some ketchup on top and started eating it was delicious. Even the Italian baker was very excited about me enjoying it. He was shouting in Italian with his arms and hands moving around in the air.
Adoro le sfogliatelle! I like to heat them up a bit before I at them. But who can resist cannoli? I'm lucky to have several great Italian bakeries near my town. And we're a short train ride to Little Italy in Manhattan, and a car ride to the even better one in the Bronx. But, you are correct, nothing beats the sfogliatelle in Sorrento, Naples, and the Amalfi Coast. Grazie, Vincenzo.

The crostatina is my favourite, i did a gran fondo cycling event in italy with the finish at the top of (the most beautiful climb of) the stelvio. there they had all kind of snacks & drinks for the finishers, one of them was crostatina (with the grape filling), i think i ate four of them.

I agree that sfogliatelle are the best of the best. I grew up in NYC, and I had access to these. These have always been my favorite. In later years I have developed a wheat intolerance, but when I was in Naples last year, this was the one thing that I knew I had to eat and not worry about the consequences. Did you happen to catch the episode of the Australian Baking Show several years back when this was the technical challenge? It was funny because none of them had any idea of what it was and what they were doing.

i like sfogliatella, pasticchiotto and Cornetto. I have been to Amalfi coast and eaten the sfogliatella. the rest of these two have I eaten in Puglia. the pasticchiotto have I eaten, for example in Galatina( Provincia Di Lecce)
@ the pastry shell itself seems to be a tour de force of the bakers art. I especially enjoy the crunchy texture unlike any others pastry. The nutty flavor of that shell works very well with the ricotta/semolina filling.

Hi Vincenzo, here in Milano are very popular also: cannoncino, veneziana, ventaglio, saccottino (con cioccolato), chiacchiere (or frappe, but we eat them only on Carnival), budino di riso. In our region also torrone, sbrisolona, and many others. In Tuscany, where my family comes from, cantucci are very popular

Cannoli are my favorite! My nonno used to make those on christmas. Since my family lives in switzerland and not in sicily anymore, it's always a please when we get something like this.

Italians in my experience of them, eat good quality food and cakes, pastries are a rare treat. They also don't load them with sugar so a little icing sugar is fine in moderation

@vincenzosplate cows milk is generally it. You can occassionally get goats. I would love to get sheeps milk because I make my own cheese at home. Would love to make Pecorino. But as I said sheeps milk is very difficult to get. But I noe make my own Parmigiano with raw cows milk.
Not that there were any regrets whilst Lizzie and I were In Italy, but the one thing that I am dissapointed we didnt get to try was Cannoli. My fault completely, too busy running around to Irish Pubs and Gelato shops. At least it is some kind of feat, drinking a Guinness (or more) in every Irish Pub in Rome, Florence, Avenzzano, and a Murphys Stout on Pescara. This was my desert🤣

I like to think I'm a rather decent cook, particularly Italian as I was taught by my step-granny who was Sicilian and attended Cordon Bleu in Florence, Italy, I'll never be as good a cook as she was but I get by. My main weakness however is baking desserts, I have to buy them for the most part although I learned to make a damn fine tiramisu as it's my favourite, lucky for me there's an authentic Italian bakery 2 blocks away called Hildegard's that makes every Italian sweet pastry I could possibly have a craving for, they even have a woodburning brick oven to make pizzas on weekends, best Italian pastries and pizza in Winnipeg.
I have to make a gelato cake for my cousin's daughter's birthday next month. They always get her an ice cream cake but I said "How come there aren't gelato cakes? I bet I could make one." and the kid's all "I want pineapple and raspberry and mango", she really wants it so now I have to at least make the attempt. I've looked up recipes but I'm more of a visual learner, I have to see somebody make one from scratch.
The babà was introduced in Naples during the Napoleon rule but while in France is called savarin filled with fruit or custard in Italy it's prepared only with rum syrup and some times with some whipped cream on top
Iris donuts are huge sellers at Tim Hortons, when people get boxes of mix & match items there's always a few iris donuts in the mix. Whenever I'd bring a box of Tim's donuts and Tim Bits to work for the crew there were often heated arguments and nasty words exchanged over the last iris donut, it's not a polite thing like the last slice of pizza that everyone politely declines and end up as a cold 2am snack, people get territorial over that last creamy donut.
This made me so happy! Pastry is a celebration of life. Thank you for being so strong and enduring this torture! 😂

All great stuff, Vincenzo. My two favorites in Sicily are Cartoccino’s and a Iris filled with ricotta.
Sicily has some of the best Italian pastries. I wish calories didn't exist, I could eat pastries like this everyday 😂
I was in Sicily for 4 weeks last year and put on 2kg. Yet none of my family are over weight, I just can’t get enough when I there😀

The crostatina is my favourite, i did a gran fondo cycling event in italy with the finish at the top of (the most beautiful climb of) the stelvio. there they had all kind of snacks & drinks for the finishers, one of them was crostatina (with the grape filling), i think i ate four of them.
The rum one is a must try

We ate a Baba rum in The Galleria in Naples! Wow! It was amazing. It was served in a paper cone/cup. I had a hard time talking after that one! 😂

I agree that sfogliatelle are the best of the best. I grew up in NYC, and I had access to these. These have always been my favorite. In later years I have developed a wheat intolerance, but when I was in Naples last year, this was the one thing that I knew I had to eat and not worry about the consequences. Did you happen to catch the episode of the Australian Baking Show several years back when this was the technical challenge? It was funny because none of them had any idea of what it was and what they were doing.

i like sfogliatella, pasticchiotto and Cornetto. I have been to Amalfi coast and eaten the sfogliatella. the rest of these two have I eaten in Puglia. the pasticchiotto have I eaten, for example in Galatina( Provincia Di Lecce)

@ the pastry shell itself seems to be a tour de force of the bakers art. I especially enjoy the crunchy texture unlike any others pastry. The nutty flavor of that shell works very well with the ricotta/semolina filling.

While living in Florence Italy, my favorite were the croissants with nutella at the secret bakeries, where they are fresh at like 1am or 2am.

Italians in my experience of them, eat good quality food and cakes, pastries are a rare treat. They also don't load them with sugar so a little icing sugar is fine in moderation

I would love to get sheeps milk because I make my own cheese at home.

Not that there were any regrets whilst Lizzie and I were In Italy, but the one thing that I am dissapointed we didnt get to try was Cannoli. My fault completely, too busy running around to Irish Pubs and Gelato shops. At least it is some kind of feat, drinking a Guinness (or more) in every Irish Pub in Rome, Florence, Avenzzano, and a Murphys Stout on Pescara. This was my desert🤣
You gave me a good idea for next year tours. I have to make sure I serve cannoli during the week. You definitely didnt need cannoli with all the treats you had hahahahaha every hour of you day was covered with treats and nights with the guinness 🤣🤣🤣🤣

I like to think I'm a rather decent cook, particularly Italian as I was taught by my step-granny who was Sicilian and attended Cordon Bleu in Florence, Italy, I'll never be as good a cook as she was but I get by.
My main weakness however is baking desserts, I have to buy them for the most part although I learned to make a damn fine tiramisu as it's my favourite, lucky for me there's an authentic Italian bakery 2 blocks away called Hildegard's that makes every Italian sweet pastry I could possibly have a craving for, they even have a woodburning brick oven to make pizzas on weekends, best Italian pastries and pizza in Winnipeg.
I have to make a gelato cake for my cousin's daughter's birthday next month. They always get her an ice cream cake but I said "How come there aren't gelato cakes? I bet I could make one." and the kid's all "I want pineapple and raspberry and mango", she really wants it so now I have to at least make the attempt. I've looked up recipes but I'm more of a visual learner, I have to see somebody make one from scratch.

The babà was introduced in Naples during the Napoleon rule but while in France is called savarin filled with fruit or custard in Italy it's prepared only with rum syrup and some times with some whipped cream on top

Iris donuts are huge sellers at Tim Hortons, when people get boxes of mix & match items there's always a few iris donuts in the mix. Whenever I'd bring a box of Tim's donuts and Tim Bits to work for the crew there were often heated arguments and nasty words exchanged over the last iris donut, it's not a polite thing like the last slice of pizza that everyone politely declines and end up as a cold 2am snack, people get territorial over that last creamy donut.
I read that as "Oh my so much gosh sugar"
But this looks like the typical sweet pastries in all Aussie and Kiwi bakeries.
