    To be fair to Truman, at the time everybody ate stake well done. The health standards weren't what they are to day. Medium rare was a great way to get infected by parasites. We eat medium rare today because it's not going to negatively effect our health. People of a certain age prefer well done because that's what they always had and it's what they always had because when they were kids medium rare was extremely unhealthy.

      Completely agree. I have elderly relatives that still prefer well done. As a child on the rare occasion we had steak mom would cook it medium well in an oven. That is why a filet was popular back then it's one cut that remains somewhat tender even when over cooked. A filet is still popular today, but most meat heads prefer a ribeye.

      I can understand that. When moved to Kansas in the late 70's everyone ate well done steak, chicken and pork. Twas not a good time.

    As a good old Southern boy, I'm sorry Guga, but you missed several things on the grits. You gotta have some salt and pepper in there, even if it's cheese grits. Also throw in some bacon and mix that butter up in there. Though, I understand if that's not how Carter ate it and you were trying to recreate that. There needs to be a grits redemption video though and make them the right way!
    P.S. Use yellow stone ground grits instead of that white stuff too!

      @ Fair enough. I think there's a taste difference, but that's just me. I'm very sensitive to bitter/sour tastes, and white grits are always slightly bitter to me. The yellow ones are a little sweeter.
      Like you said, they both make a turd in the end. :D

      @@lenonkitchens7727 i now start mine in salt and minimum water until they start to plump up and then add heavy whipping cream.. Got that from a Chef in Charleston. But, salt, pepper and butter is the answer. Just always use stone ground..

    The thing about Truman's well-done steak is that food safety standards weren't what they are today. Back in those days if you ate things not cooked completely, you were more likely to get some food born illness. I love grits. They are such a versatile food. You can put anything you want in them.

    the secret to a grilled cheese is to butter the outside of the bread and sprinkle Parmesan cheese on the outside so it all fries up slowly while you're making the grilled cheese

      And used freshly grated like marbled cheddar, or I like to go to habanero or jalapeno/cheddar for more kick, not that plastic wrapped excuse he used. I live on the US/Canada border, so growing up when we’d take trips to and from, the border guy would ask if we’re bringing any dairy products over. When we said Velveeta, (processed, fake plastic cheese) he would basically say that’s not even considered cheese, we shouldn’t bother mentioning it

    Hoe cakes got the name because they would be cooked on a hoe, the gardening tool, on the flat blade part. Just put that part over the fire and that was your cooking surface. In Colonial times and during the Revolutionary War, it cooking pans were not always available, especially out in the field. But there would be farming tools. The farmers would break for lunch and cook on what they had right out there in the field. The soldiers in the war, would be fighting in those same fields. Many of them were farmers before they were soldiers and knew how to cook like this. Hoe cakes would also be cooked on any flat metal surface, not just a farming hoe, when a pan was not available. So they are Hoe Cakes, not Ho Cakes.

    An idea for Guga.
    Make a site where people can submit their favourite food, and then after a time do a random drawing of the things, like 4 foods, and cook on the show.
    Make the viewers feel a bit of fun, seeing the taste of each other around the world

      Great idea 💡 👍. I agree with you. It would be interesting to see how good Guga would do prepping the recipes. And what his take's would be like regarding the chosen recipes. If I were him and I saw your comment, I would definitely try it. At the very least, it would add intriguing elements to his content. It could perk us up, as his audience, to become more in tune with him.

    I rarely comment on videos but I had to come in about the cheeseburger pizza. Guga, you have to remake that but put 1000 Island salad dressing in place of the tomato sauce. Yes! Cook the 1000 Island. Then put shredded lettuce and diced tomato on the pizza after it’s cooked. Game changer!!

      Yeah, "burger sauce" or "special sauce" or whatever is basically thousand island dressing but with the ratios moved around a bit. It's one of the things I like to point out to people, there's really not much difference between the two (depends on the brand I guess.)

    I propose a new doneness rating for steak. Rare is still rare. Medium rare is now "perfect". Medium is now "marginally acceptable". Medium well is "cardboard" and "well done" is "I don't feel joy anymore".

    That chicken fried steak was a lot thinner than the steak he showed at the beginning of that segment. There’s no way it shrunk down that much and was still a perfect cook.

      @ it was a dishonest representation. He should’ve said that or did he pound it out? That’s another way to get them that thin and still taste good did he actually use that cut of steak? The thing is now we just don’t know what actually was the process it’s about trust not about the how. I folded a bunch of his recipes to the tea, and some of them are great and some of our absolutely terrible because he’s definitely missing details.

      I'm a Texan, and I sometimes use thin sliced ribeye to make chicken fried steak. If grocery store has a good butcher, they will do it for you. You can actually get a golden, crunchy crust and still have a little pink inside. I pound mine just enough with the pointy side of a meat mallet to make the surface rough, so the breading will have a better chance of sticking to the meat. But, Guga's raw steak looked significantly thicker than the cooked CFS, so he did something to it.

      Due to severe allergies when I was young eating cheese almost killed me and other times, when after unknowingly had been put in my food either had me go to the ER or, when I got into my late teen spend a good bit of time paying homage to the Porcelain God.     I know a lot of people hate using the microwave but since I like a lot of cheese I like to get a nice toast on the bread in the pan just like you did but then throw it into the microwave on about a setting of about 3. It doesn't take long to melt and doesn't have any effect on the bread. It's also faster but I find the long and low on the stove can dry out the bread.

    A note on Well Done vs Medium Rare. When my late wife had immunosuppression, she was told not to eat under-cooked meat under any circumstances. But she still liked steak, so that's how it had to be. Well done, or at the minimum medium-well. It was either that or not eat steak. Sometimes life isn't fair. I wish someone would take on the challenge of making well done steaks to the best possible outcome instead of making those who had no choice, feel bad about it (not you Guga, you're pretty respectful).

      Medium rare isn't under cooked though. It's cooked to 135 degrees, which is the recommended temperature to kill any harmful bacteria.

      Sorry for your loss, I hope you're doing ok. The choice and thickness of steak would probably be critical for a medium+ steak to taste good. A regular thickness ribeye could be nice if it was marinaded in pineapple juice for 20ish minutes and rinsed before cooking if it was seared fast and cooked slow. A similar marinaded fillet might not be so good with the thickness taking longer to cook through unless it was basted constantly to stop it drying out or butterflied before cooking.
      Alternative ways of cooking could be tried too, stew the steak in stock on a bed of root veg first until cooked through, then sear it at the very end. Not viable for a commercial place but it might work for the home cook. Very unorthodox but great challenges sometimes need great solutions!

      @f688xt6 You could do it yourself, at home. Use a sous vide machine, you'll 100% sure get the perfect temperature.
      Also, if you do well done anyways...sous vide. It'll trap the juices in with the meat, cook it inside the juices. Less evaporation, so even a well done should be juicier than doing it in a grill or stove. Guga has done it on his sous vide everything channel before I think. Then hit it with a torch after for a good crust. Should be the juiciest well done steak you could make without adding extra sauces and what not.

    An interesting follow on would be the foods that presidents banned while in the WH. Nixon hated tomatoes, and Bush 41 forbid broccoli. Grover Cleveland hated French food, Lobsters, fried crickets, brussels sprouts, possum, squirrels, and grits were other foods that presidents hated. Some of the back stories are interesting.

    I was in Rome last month, and McDs in Italy is different from ours. The coffee in on China, they have a pastry dessert bar, and the burgers and chicken taste more like actual food and not so industrial.

      The biggest change in flavor in Europe is the new bun type McDonald's use. It totally changed the Big Mac for me. So much worse, but it should be more like “Premium”. They made this change like couple of years ago. Before that, the burgers tasted pretty much the same on everywhere. There's some overpowering taste that ruins it.

    I only found out recently how real good butter is so important to a grilled cheese sandwich. It’s the difference between bland and amazing. Even better is frying up a little garlic in that butter and then taking the garlic out and then frying up your grilled cheese sandwich. The taste is light years beyond any margarine or spray. On top of that, you’re not getting those horrible seed oils.

    Fun fact Mac and Cheese was invented by James Hemings a slave owned by Thomas Jefferson and made his personal chef. James had culinary skills he learned in France and one day at a party I think, he made the dish and then Thomas popularized it.

    Hey Guga, i know you'll probably won't see this, but still i need to say it.
    1. Amazing video, very entertaining and even educational to a degree.
    2. When you attempt historical recipes, there's one very little known fact to keep in mind (which may resolve strangeness in old recipes) fruits and vegetables from even 100 years ago were different. Same with chicken. It's not very long ago when chickens start being so meaty. Previously they had pretty small amounts of meat, but they also had more taste (in modern times some naturally raised chickens may also have similar build). Apples would've also been a bit different. Very fascinating topic to dive into. Maybe if you attempt something close to a historical recipe next time, would be nice to see you do it with authentic products, because it's genuinely interesting to see, what the recipes of old were really like. Done with ingredients available to them.
    Hiwever, historically authentic or not, video from you is always a treat.

      Found a mention of what he liked in his Chicken Fricasse on the lincolnslunch blog that says: "According to A Treasury of White House Cooking by Francois Rysavy, Lincoln "liked the chicken cut up in small pieces, fried with seasonings of nutmeg and mace and served with a gravy made of the chicken drippings.""
      I think that he maybe got it mixed up with Lincoln often having a lunch of "only an apple with a glass of milk".

      I love steak from medium to well done, and would personally never choose medium rare. My real issue with choosing it as an option is just that - they chose to pick the well done steak knowing that they don't like it and never will. If you hate well done and have no interest in trying it, then don't make it.
      Even though I'm not really a fan of medium rare though, I do love watching people eat it because it makes them happy and because some of the things that they cook with their steak, like sauces and sides, look really good. Would love to get a bearnaise sauce with my steak and potatoes. Just eat the steak you like and avoid the steak that you don't.

      @@ruggbean I respect that opinion for me it depends on the cut of meat. I can eat filet just warm (very very rare), and most other steaks I like rare-medium rare. Others I like up to medium since I like my fat rendered with those really really well marbled cuts and on the slightly tougher cuts. (still like strip steak rare-med rare same with ribeye)

      Food is wonderful and should be enjoyed, and I hope that you enjoy all of the rare to medium steak in the world with joy and satisfaction.

    I will vehemently defend grilled cheese, it is perfection. Right up with fried chicken, it is wholly American, and when paired with tomato soup? Heaven. You best put the grilled cheese up in B-tier, it deserves that at the least.

    Gotta admit, I grew up on cottage cheese with ketchup. Funny story. I went to Catholic grade school. When I went through the cafeteria line, I asked for cottage cheese. When I got to the end of the line, I put ketchup on top of it. The nuns always told me ,"You better eat that! There are starving kids in Cambodia! ". I always looked at them (like they were crazy) and said, "I will,". To this day ( almost 50 years later) I still put ketchup on my cottage cheese.

      I respect that everyone has different tastes, and despite going to public school I did attend like a group class every week at my local Catholic Church as well growing up! So I'm sorry, but I can't even imagine ketchup on my cottage cheese! ugh! >.

    Believe it or not, using a thin layer of mayo on the bread instead of butter in the pan makes a better grilled cheese, it doesn't come out all greasy and has a nice crunch to it, plus it doesn't burn as easily as with butter

    Teddy also didn't kill the bear cause it was a young bear and was malnourished. Wouldn't have looked good as a taxidermy mount or a rug, so he decided not to kill it. His guide for that trip did it for him so he could save face.
    Teddy also got shot in the chest and was saved by his speech which he had in his breast pocket.

    I agree that raw broccoli is terrible, but oven roasted in a pan with olive oil, salt and pepper until slightly browned on the edges is an A tier side that complements anything!
