The key to winning that situation is taking control of the arm. Since you have two hands on the wrist, what you need to add is legs. 1st move is to sweep the lead leg (his left) with your right leg. As he begins to fall to his left, you force his right hand upward, opening a path for you to mount him, and get that rt arm into a triangle arm bar. You now own the arm AND the knife. Now, BREAK THE ARM.
