I tried your recipe, the glutinous flour ratio of 50% makes the outcome chewy and not crispy at all. The peanuts quantity given in recipe is way TOO much!
Yes. I tried this recipe and had the same problem with Jennie too. I added water to thin it too, but the cracker became not ideal, too thin & after 2 days still hard and chewy. I attempted 2nd time, and I reduced glutinous rice flour to 60g and increased rice flour to 190g, it became less chewy, but still more chewy than the normal rempeyek I’d usually eaten. May I know if I would like to try using rice flour + tapioca flour only / rice flour + corn flour only, what would be the ratio I should use, if other ingredients in your recipe remain unchanged?
