    To Make Kaju Paneer Curry
    Cashew Nuts - 25 Nos
    Capsicum - 1 No.
    Paneer - 400 Gms
    Ghee - 2 Tbsp
    Oil - 3 Tbsp
    Whole Spices
    ( Cinnamon, Cloves, Cardamom, Bay Leaf,
    Peppercorns, Shahi Jeera, Cumin Seeds, Fennel Seeds )
    Onion - 3 Nos
    Ginger Garlic Paste - 2 Tsp
    Tomato Puree
    Salt - 2 Tsp
    Turmeric Powder - 1/2 Tsp
    Kashmiri Chilli Powder - 3 Tsp
    Garam Masala - 1 Tsp
    Kasuri Methi
    Water
    Method:
    1. Add ghee to a pan and roast a few cashewnuts in it until they are golden brown in colour.Keep them aside.
    2. To the same pan, add capsicum wedges and slightly toast. Keep them aside.
    3. Add ghee again to the same and add evenly cut paneer cubes. Roast until they are golden brown in colour on all sides. It takes about 5-7 minutes to roast the paneer. Keep them aside.
    4. Soak 25 cashewnuts in water for at least one hour and then grind them into a fine paste. Keep it aside.
    5. Take ghee in a wide kadai. Add oil to it.
    6. Add the whole spices, saute for a few seconds and then add in the chopped onions along with slit green chillies.
    7. Saute the onions for a minimum of 10-15 minutes for them to brown.
    8. Then add in ginger garlic paste and mix.
    9. Add in the tomato puree and cook until the oil separates.
    10. Then add salt, turmeric powder, red chilli powder, coriander powder, cumin powder, sugar and mix it all well.
    11. Add in cashewnut paste, mix and add water to dilute the masala.
    12. Cook the gravy for 5-10 seconds and add the roasted capsicum, cashewnuts and fried paneer. Mix everything well.
    13. Cover the kadai with a lid and cook the curry for about 5 mins.
    14. After 5 mins, add in garam masala, crushed kasuri methi and mix.
    15. Finally garnish the curry with some chopped coriander leaves.
    16. Rich and flavorful Kaju Paneer Curry is ready to be served hot with any Indian bread of your choice.
