Basically a tank destroyer, self propelled artillery, and somewhat an infantry assault artillery all combined into one. It’s a smart design, and reminds me a lot of the Stug 3 from wwII
Regarding the Felucia clip from episode 3. The AT-APs weren't at the rear of the column, as we can see the front of another AT-OP behind them at the very start of the camera pan. Given the order of the column I'd argue they were actually positioned in the dead center. AT-TE in front, followed by AT-OP, the pair of AT-APs, another AT-OP, and presumably an AT-TE bringing up the rear. Armored columns typically don't end with an infantry vehicle, instead you put a fighting vehicle on the ends. Having the AT-APs in the center means they can support the entire column if needed. They stand above the rest of the vehicles they can provide fire support against any frontal attacks, and if the rear is attacked, they can turn around and do the same.

7:44 the AT-AP is in the background of certain shots in Clone Wars. Most notably and kinda oddly when the Republic is leaving Naboo after the chancellor is almost assassinated.
While the AT-AP fit best into an "artillery role" it can be argued that it was better fitted to the role of frontline armor than the AT-TE, which (while I love it) puts more focus on troop transport than is needed. Had the war continued for longer then I could see a variant of the AT-AP made to fit the frontline largely replace the AT-TE. One which maybe removes the larger mass cannon for more laser turrets (much like the front of the AT-TE), giving it the firepower of an AT-TE for the price of an AT-AP

One of my favorite Star Wars vehicles. I was always annoyed that this one never got featured in much Star Wars media outside the movies. They were always my favorite artillery piece to use in empire at war, too!
The AT-AP is the first LEGO Star Wars model I've ever had, and I think I even got it before I even knew what Star Wars was. Now it holds a special place in my heart for not only being a gorgeous model but also the first in a long line of ships and vehicles that I spent a lot of my teenage years obsessing about.
Personally this is one of my top 3 fav walkers in sw its speed isn't half bad for its size it boasts a ton of firepower and has some pretty durable armror all together allowing it to work in a variety of different roles.
AT-AP top speed is a massive advantage for an artillery unit, it can move to a firing position lock its legs fire a few volleys of shells and be off out of harms way long before any retaliation is sent its way and because of its speed both in motion and in setting up it means a commander dosnt have to waste any manpower defending it something most artillery needs. Considering they are a standard army the republic forces are really good at gorilla tactics with lots of units that perfectly fit the role of fast attack and harassing the enemy forces from unexpected angles but that’s probably more to do with the mandalorian training programs.
To be fair to Yoda and the other jedi generals I don't really think that beach was wide enough and open enough to really have the AT-APs be used as artillery pieces as it was pretty congested with trench lines, defensive positions four A6 Juggernauts, wookies and the like in that particular instance it might have had more sense to use the AT-APs up front so that they actually could shoot their targets. As opposed to having their firing lines blocked by friendly vehicles and infantry.
🤔 . . . I honestly don’t believe Yoda did that bad of a job. They remind me a bit about WW2’s Germany’s Hetzer, in that it had more than one main gun. I noticed that they were technically behind the infantry, but when the battle commenced, they too to their deployment positions & fired accordingly…
